Here's a recipe that combines two of my favorite vegetables - squash and spinach. It's one of my family's favorites.

3 small acorn squash
1 cup chopped celery
3 green onions, chopped
1 tablespoon vegetable oil
1 package (10 ounces) fresh spinach, chopped
1/2 teaspoon salt, divided
6 tablespoons dry bread crumbs
2 tablespoons chopped pecans
1 tablespoon butter

Steps:

  • Cut squash in half; discard seeds. Place squash, cut side down, in an ungreased 15x10x1-in. baking pan. Fill pan with hot water to a depth of 1/2 in. Bake, uncovered, at 350° for 40 minutes., Meanwhile, in a skillet, saute celery and onions in oil until tender. Add the spinach and 1/4 teaspoon salt; cook and stir until spinach is wilted. , In a bowl, combine the bread crumbs, pecans and remaining salt. Drain water from baking pan. Turn squash cut side up. Stuff with spinach mixture; sprinkle crumb mixture over top. Dot with butter. Bake 15 minutes longer or until the squash is tender.

3 small acorn squash
1 large egg, lightly beaten
1/4 teaspoon salt
1/8 teaspoon pepper
1 teaspoon chicken bouillon granules
2 tablespoons boiling water
2 cups cooked stuffing
1/4 cup grated Parmesan cheese, optional
1 teaspoon paprika
Chopped fresh parsley, optional

Steps:

  • Cut squash in half; discard seeds. Place cut side down in a 15x10x1-in. baking pan; add 1/2 in. hot water. Bake, uncovered, at 400° until tender, about 30 minutes. , When squash is cool enough to handle, scoop out flesh, leaving a 1/4-in. shell (flesh will measure about 3 cups). Drain water from pan; place squash shells cut side up in pan and set aside. , In a large bowl, combine the flesh, egg, salt and pepper. Dissolve bouillon in boiling water; add to squash mixture. Add stuffing; spoon into squash shells. If desired, top with cheese. Sprinkle with paprika. Bake, uncovered, at 400° until heated through, 20-25 minutes. If desired, top with chopped parsley.

Just got back from apple hill with some nice acorn squash. Decided to stuff them and this is what I came up with working with what we had on hand. Did have a little stuffing left after stuffing 2 smallish size squash.

2 -3 acorn squash, halfed and deseaded (I used two small and had enough stuffing left for a third one)
1 tablespoon olive oil
1/4 cup onion, diced
1/4 cup celery, diced
1 (6 ounce) box seasoned stuffing mix
10 ounces frozen spinach, thawed and squeezed
1 (10 3/4 ounce) can fat-free cream of mushroom soup
1/4 cup nonfat milk
1 1/2 cups low-fat swiss cheese, shredded

Steps:

  • Place squash cut side down on baking sheet and bake in 350*F oven for 45 minutes.
  • Meanwhile in large pot sauté the onion and celery in the olive oil till soft and translucent .
  • Add soup, milk, spinach, cheese, and stuffing. Mix well. Will take a little work to moisten and throughly mix all ingredients.
  • Lift acorn squash from oven turn over and stuff with stuffing mixture.
  • Bake an additional 20 to 30 minutes. Till stuffing is heated through and squash is tender.
