This 7 Can Taco Soup is based on a Weight Watchers taco soup recipe. It can be turned into recipes for slow cooker taco soup or a keto taco soup.

1 pound lean ground meat
1 large onion, diced
1 10-ounce can RO*TEL Diced Tomatoes & Green Chilies (do not drain)
1 16-ounce can tomato sauce
1 15-ounce can pumpkin puree (not pumpkin pie mix)
1 15-ounce can corn (drained)
1 15-ounce can green beans (drained)
2 16-ounce cans beans, rinsed
1 packet or 1/3 cup taco seasoning mix
1 1/2 cups water

Steps:

  • Brown ground meat with one large diced onion in a large stew pot.
  • Add the rest of the ingredients. Heat to boiling. Lower heat and simmer for 30 minutes. Serve.

One 15.25-ounce can corn with red and green peppers, such as Del Monte Fiesta Corn
One 15-ounce can meat-only chili
One 15-ounce can kidney beans
One 15-ounce can pinto beans
One 15-ounce can black beans
One 15-ounce can diced tomatoes
One 10-ounce can diced tomatoes with green chiles, such as Ro*Tel
Salt and freshly ground black pepper
8 ounces processed cheese, such as Velveeta

Steps:

  • Empty the corn, chili, kidney beans, pinto beans, black beans, tomatoes and tomatoes with green chiles, liquid included, into a large pot over high heat. Bring to a boil, reduce the heat and simmer for 10 to 15 minutes to bring all the flavors together. Add salt and pepper as needed.
  • Dice the cheese and stir it into the soup until melted. Serve immediately.

1 - kidney beans, canned, undrained
1 can(s) refried beans
1 can(s) chilli beans or pinto beans, undrained
1 can(s) whole corn, undrained
1 can(s) tomatoe sauce
1 can(s) chopped tomatoes, undrained
1 1/2 cup(s) water
1 can(s) chopped green chilies or rotel
1 package(s) taco seasoning mix
1 package(s) ranch style dressing mix

Steps:

  • First cook meat and until browned,drain.
  • Then combine meat and onions with other ingredients in a large pot.
  • Finally bring mixture to a boil, then reduce heat and simmer for 15 mins.

2 lbs ground beef
2 cups diced onions
2 (15 1/2 ounce) cans pinto beans
1 (15 1/2 ounce) can red kidney beans
1 (15 1/2 ounce) can whole kernel corn, drained
1 (14 1/2 ounce) can Mexican-style stewed tomatoes
1 (14 1/2 ounce) can diced tomatoes
1 (14 1/2 ounce) can tomatoes and green chilies
2 (4 1/2 ounce) cans diced green chilies
1 (4 5/8 ounce) can black olives, drained and sliced
1/2 cup green olives, sliced (optional)
1 (1 1/4 ounce) package taco seasoning mix
1 (1 ounce) package ranch dressing mix
corn chips, for serving
sour cream, for garnish
grated cheese, for garnish
chopped green onion, for garnish
sliced jalapeno, for garnish

Steps:

  • Brown the ground beef and onions in a large skillet; drain off excess fat and transfer browned beef and onions to a large slow cooker or stockpot.
  • Add the beans, corn, tomatoes (I like to mash all of the tomato products before I put them in the stockpot--sometimes there are very large chunks of tomatoes, especially in the stewed tomatoes), green chilies, black olives, green olives, taco seasoning and ranch dressing mix.
  • Simmer over low heat for about 1 hour (or 6-8 hours on low setting in crock pot).
  • To serve, place a few corn chips in each bowl and ladle soup over them.
  • Top with sour cream, cheese, green onions and jalapeƱos.
