Fruit Cocktail Cake image

This recipe means a lot to me. My mother and my niece who just died with ovarian cancer use to fix this all the time. Its very delicious. Enjoy!!!!!!!!!!!!!!!!!!

Number Of Ingredients 14

2 c all purpose flour
1 1/2 c sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
1 can(s) fruit cocktail, in syrup
2 large eggs
FROSTING
3/4 c sugar
1/4 c evaporated milk
1/2 tsp vanilla extract
2/3 c butter
1/2 c chopped pecans
1/2 c coconut, shredded

Steps:

  • 1. Combine flour, sugar, baking soda, baking powder,and salt, Then add fruit cocktail with juice and 2 eggs. Bake in greased and floured 13x9 pan at 350 degrees for 1 hour and 15 minutes.
  • 2. Mix sugar, milk, vanilla, and butter. Mix well, place on medium burner and when it comes to a rolling boil, lower heat and cook 7 minutes or til thickened. Add nuts and coconuts. Pour over warm cake.
