The combination of 3 seasoning mixes gives this roast its fantastic flavor. A simple one pot meal full of healthy vegetables sure to please the family!

1 (3 -5 lb) beef roast
1 (7/8 ounce) packet brown gravy mix
1 (1/2 ounce) packet Italian salad dressing mix
1 (2/3 ounce) packet ranch dressing mix
1 (16 ounce) package frozen green beans
1 (16 ounce) package fresh baby carrots
1 (14 ounce) can beef broth
2 -4 medium potatoes, quartered
1 onion, quartered
1 (8 ounce) carton fresh sliced mushrooms
2 fresh garlic cloves, chopped

Steps:

  • Mix the 3 packets of dry seasonings in a bowl.
  • Rub the roast with the seasoning mix; reserve remaining mix.
  • Place potatoes, carrots, green beans, onion and mushrooms in crock pot.
  • Place roast on top of vegetables.
  • Sprinkle reserved seasoning mix and garlic over roast.
  • Pour broth over roast.
  • Cook on low approximately 6 hour.
  • For a crisper veggie taste, after roast has cooked on the low setting for 5 hours, remove the roast, add vegetables to the bottom of the crock pot, place roast on top of vegetables and cook an additional 2 hours on high.
  • Remember, you can always thicken the gravy on the stove top after cooking is complete.

This 3 envelope roast is the best, tender roast. With only a few ingredients, and cooked in the slow cooker it's tender, falls apart, and is so flavorful. Perfect served with potatoes and carrots!

3 cups chopped and peeled potatoes ((1 - 1 1/2 inches in size, about 4 potatoes))
3 cups chopped and peeled carrots ((1 1/2 - 2 inches in size, about 6 carrots))
1 cup chopped yellow onion ((about 1/2 onion))
1.0 oz Hidden Valley Ranch Mix
0.87 oz McCormick Brown Gravy Mix
0.7 oz Italian Dressing Mix
2 cups warm water
3 lb beef chuck roast

Steps:

  • Prepare your potatoes, carrots, and onion and spread them in the bottom of your slow cooker.
  • Combine your ranch mix, gravy mix, and Italian dressing mix and warm water in a medium sized bowl. Stir together completely.
  • Place your roast on top of your vegetables and pour your seasoning mix over the top of the roast.
  • Cook in the slow cooker on low for 7-8 hours or on high for 4-5 hours.
  • Serve the roast with the vegetables and a homemade gravy if desired.

1 tablespoon cornstarch
8 medium carrots, cut into thirds
2 medium onions, each cut into 8 wedges
Coarse salt and ground pepper
1 beef chuck roast (3 pounds), trimmed of excess fat
2 tablespoons Worcestershire sauce

Steps:

  • In slow cooker, stir together cornstarch and 2 tablespoons cold water until smooth. Add carrots and onions; season with salt and pepper, and toss.
  • Sprinkle roast with 1 teaspoon salt and 1/2 teaspoon pepper; place on top of vegetables, and drizzle with Worcestershire. Cover; cook on high, 6 hours (or on low, 10 hours).
  • Transfer roast to a cutting board; thinly slice against the grain. Place vegetables in a serving dish; pour pan juices through a fine-mesh sieve, if desired. Serve roast with vegetables and pan juices.
