ONE HOUR DINNER ROLLS
Soft and fluffy homemade dinner rolls that can be made from scratch in just one hour!

Steps:
- Grease a rimmed 9x13-inch baking sheet; set aside.
- In a small saucepan, stir milk, sugar, and 3 tablespoons butter together. Heat over low heat just until butter melts and sugar dissolves. Cool to about 100-105 F.
- Pour the milk mixture into the bowl of a stand mixer.
- Add the yeast and warm water. Let stand for 5-10 minutes, or until yeast is foamy.
- Add 2 cups flour and salt to yeast mixture. Using a dough hook, mix on low speed for about 1 minute.
- With the mixer still going, add remaining flour, 1/2 cup at a time. You may not need to use all of the flour.
- Mix about 1 ½ minutes, or until dough starts to clear the sides of the bowl.
- Knead on low speed for about 2 more minutes, or until dough is smooth and elastic - the dough will still be slightly sticky to the touch.
- Place dough in a greased bowl, turning it to grease the top. Cover the dough with a clean, dry dish towel.
- Let it rise in a warm place, free from draft, for about 15 minutes.
- Turn the dough onto a lightly floured surface, and divide into 15 equal pieces.
- Form each piece into a ball and place on the prepared baking sheet.
- Cover the baking sheet with the dish towel, and let the dough rise for about 15 minutes.
- Bake at 375ºF for about 12 minutes, or until the rolls are golden brown.
- Toward the end of the baking time, melt remaining 2 tablespoons butter. Set aside.
- Brush rolls with melted butter.

- Grease a 9x13 baking pan with nonstick cooking spray. Set aside.
- In a large mixing bowl, add all purpose flour, salt, vegetable oil and egg.
- In a separate bowl, add warm water (not hot), granulated white sugar and RapidRise yeast and mix until dissolved.
- Dump wet ingredients into dry mixing bowl that contains the flour and stir well. I use a wooden spoon to stir and a spatula once its starts to firm. Dough should pull away from the sides of the bowl to create a dough ball in the center of the bowl.
- Turn dough onto a lightly floured surface and divide dough into 5 equal parts, and of those parts into 3 pieces, for a total of 15. Shape dough into a ball and place into prepared pan. Set pan on top of stove.
- Turn on oven to preheat to 375 degrees.
- Let dough set about 20 minutes to rise. The heat from the preheating oven will help this process. The dough is ready when its about double in size.
- Bake rolls for 15-20 minutes or until slightly browning on top.
- For additional golden brown that most people come to know with bread, remove rolls from oven and spread melted butter on top of rolls and return to the oven for 1 additional minute.
- Remove from oven. Let bread set for a few minutes before cutting apart and serving with jelly, butter and honey.

- Preheat oven to 180 degrees Fahrenheit. In the bowl of an electric stand mixer whisk together 3 3/4 cups flour, sugar, yeast and salt.
- To a medium bowl add water, milk and butter and heat in microwave on HIGH power until it reaches 120 degrees on a thermometer, about 1 minute 15 seconds. Stir to partially melt butter (you just want to make sure it's softened through).
- Pour milk mixture into dry mixture in bowl of electric stand mixer along with lemon juice.
- Set mixer with a hook attachment then set mixer on low speed and gradually increase to medium-low, knead about 3 - 4 minutes until smooth and elastic while adding additional flour as necessary (dough should be lightly sticky but manageable).
- Cover bowl tightly with plastic wrap and rest 5 minutes. Meanwhile butter a 13 by 9-inch baking dish.
- Drop dough onto a lightly floured surface. Shape into an evenly level square, about 9 by 9-inches. Cut into 16 equal portions (don't have to be exact)
- Shape dough into 15 balls, while using excess dough from the 16th portion to add to smaller rounds as needed, and place shaped dough portions into prepared baking dish.
- Dampen hands with water and brush tops of dough with the water (just so they don't dry while rising in oven). Transfer to oven, close oven and turn oven off, allow rolls to rise 20 minutes (don't open oven door).
- Remove from oven and preheat oven to 375 degrees Fahrenheit (this should take about 5 minutes, so just allow rolls to rest on counter while oven preheats).
- Bake in preheated oven 14 - 16 minutes until tops are golden brown. Remove from oven and run the top of a stick of butter along tops of rolls just to coat. Serve warm. Store in an airtight container (I recommend rewarming cool rolls in microwave for best results.

- Set the oven to warm or alternately as low as you can set it if you don't have a warm option, about 170°. Lightly spray a 9x13 pan with pan spray and set it aside.
- In the bowl of your mixer whisk together the flour, sugar, yeast, and salt.
- In another bowl combine the warm milk and 4 tablespoons of melted butter. Using the dough hook on low, slowly add the liquid to the dry ingredients. Knead the dough for about 4 minutes or so, until it is smooth and elastic. If the dough is still very sticky, add more flour 1-2 tablespoons at a time.
- Once you have achieved a smooth dough, cover the bowl and let rest for about 5-10 minutes.
- Once the dough has rested, turn it out onto a lightly floured surface and divide the dough as evenly as you can into 15 pieces. I like to use a kitchen scale so I can get them equal in size. Weigh the whole ball of dough in grams and then divide it by 15. That's the weight each roll should be. Shape each piece into a ball and pinch the dough together on the bottom.
- Place the dough balls into the baking pan and use your fingers to rub a little bit of water over the tops of the balls so they don't dry out while baking. Transfer to the warm oven and let rise for 20 minutes, or up to 30 minutes if they have not doubled in size after 20. I find it can be helpful to use a spray bottle to spray the bottom of the oven to create steam to help the rolls rise faster.
- Remove the risen rolls from the oven and bump the heat up to 375°. As soon as the oven has preheated, bake the rolls for 16-18 minutes, until the tops are golden brown. Brush with melted butter as soon as they come out of the oven.

- 2. In a microwave safe bowl add milk, water and butter and heat in microwave on HIGH power until it reaches 115 degrees on a thermometer, about 1 minute 15 seconds. Stir to make sure butter is soft, you don't want it melted completely. Add lemon juice and give a light stir.
- 3. Pour milk mixture into dry mixture in bowl of electric stand mixer along with lemon juice. Set mixer with dough hook attachment then set mixer on low speed and gradually increase speed to med. low and let mix 4-5 minutes until smooth and elastic add additional flour as necessary dough should be pillowy and soft and slightly stick to your hands but will come off of them clean..... not real sticky
- 4. Cover bowl with plastic wrap or towel and let sit 5 minutes.
- 5. line a 9x13 cake pan with parchment paper. Or you can butter the pan for a crunchier bottom on your roll.
- 6. Remove dough to a floured surface and press into a rectangle about 3/4 to 1 inch thick. Use pizza cutter, dough blade or knife and cut into 2 inch squares or close to it. You can tell by the photo you will get all sizes that's one thing I love about these they are not perfect just awesome tasting!
- 7. After you have cut your rolls place in pan you will have to just move them around until you get a good fit in the pan. Mist tops with water or wet hands and pat water onto tops of rolls.
- 8. Place pan UNCOVERED in oven and turn it OFF (very important on both :) Set timer for 20 mins and let fast rise
- 9. Remove from oven after the 20 minutes and just let them hang out on counter while you pre-heat oven to 375 degree.
- 10. Bake rolls for 13-15 minutes until golden brown. Brush tops with melted butter and ENJOY!

- Preheat oven to 425.
- In a large bowl combine 1/2 of the flour with sugar, yeast and salt. Stir until mixed. In microwave heat milk until just under the boiling point. Pour into dry mixture. Melt butter, combine with water and add to flour mixture; stir until combined. Add remaining flour while stirring until dough leaves the sides of bowl and forms a ball. - In a food processor, mix together the flour, yeast, dry milk, sugar and salt.
- Add water and oil and process until a thick sticky dough forms.
- Let stand for 5 minutes.
- Butter an 8" round cake pan.
- Turn dough out gently onto a floured board.
- With a floured knife, cut the dough into quarters.
- Cut each quarter into quarters and shape the dough into balls, adding flour to prevent stickiness.
- Place dough pieces close together into the prepared pan.
- Cover and let rise in a warm place for 25 minutes or until rolls are puffy.
- Preheat oven to 400°.
- Drizzle the melted butter over the rolls.
