3 tablespoons butter
4 cups thinly sliced zucchini (about 3 medium)
1 large onion, thinly sliced
2 large eggs, room temperature
2 teaspoons dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon pepper
2 cups shredded part-skim mozzarella cheese
2 teaspoons prepared mustard

Steps:

  • Preheat oven to 400°. On a lightly floured surface, roll dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim crust to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., In a large skillet, heat butter over medium heat. Add zucchini and onion; cook and stir until tender. Drain and cool slightly., Whisk eggs and seasonings until blended. Stir in cheese and zucchini mixture. Spread mustard over pastry shell; add filling., Bake on a lower oven rack until a knife inserted in center comes out clean and crust is golden brown, 35-40 minutes. If needed, cover edge loosely with foil during last 15 minutes to prevent overbrowning. Let stand 10 minutes before cutting.

1/2 c grated parmesan cheese
1 c Bisquick

1 tsp garlic powder
1/2 c oil

Steps:

  • 1. Mix Bisquick, zucchini, oil, eggs, onion, parmesan cheese, cheddar cheese, salt, pepper, and garlic powder in a large bowl, until it looks like thick batter. Mix by hand. Do not beat.
  • 2. Pour into a greased pie plate.

1 1/2 pounds medium zucchini or a mixture of summer squashes
Kosher salt
4 tablespoons extra-virgin olive oil
1 1/2 cups 1-inch, day-old bread cubes, preferably sourdough
1 medium white onion, chopped, about 1 cup
1 clove garlic, thinly sliced
2 tablespoons chopped flat-leaf parsley
1 tablespoon chopped fresh dill
1 teaspoon chopped fresh marjoram or oregano
2 cups half-and-half
2 large eggs
2 egg yolks
Freshly ground black pepper
6 ounces young goat cheese, such as Montrachet.
2 ounces grated Swiss or Gruyere cheese, about 1/2 cup

Steps:

  • Preheat oven to 350 degrees F. Shred the squash on the large holes of a box grater, into a colander. Sprinkle with a heaping tablespoon salt and toss well. Place in the sink and drain for 15 minutes. Rinse and the squeeze firmly, by the handful, to remove excess water. Set aside.
  • Meanwhile, pulse bread into crumbs in a food processor. Heat 2 tablespoons olive oil in a large skillet over medium heat; add bread crumbs and stir until evenly toasted, about 5 minutes. Evenly spread crumbs in a 9-inch glass or ceramic pie pan. Place pan on a baking sheet.
  • Wipe out the skillet, add remaining 2 tablespoons oil, the onions and garlic and season with 1/2 teaspoon salt, cook over medium-high heat, until onions are start to brown, about 5 minutes. Add the zucchini, and cook, stirring, for 2 minutes. Stir in parsley, dill and marjoram or oregano. Remove from heat, cool slightly.
  • Whisk half-and-half, eggs and yolks in large glass measuring cup. Season with salt and pepper to taste. Spread the zucchini mixture in the prepared pan. Crumble the goat cheese and evenly scatter on the vegetables. Sprinkle Gruyere on top and pour the custard over the fillings.
  • Bake until the quiche is just set in the center, about 40 to 50 minutes. Cool completely on a rack before serving.

4 beaten eggs, beaten
1 cup milk
1 cup heavy cream
1/2 cup mozzarella cheese, shredded
1 (10 inch) pie crusts

Steps:

  • Sauté zucchini, onion and garlic in olive oil until tender.
  • Season with salt.
  • Cover bottom of pie crust with this mixture.
  • Combine remaining ingredients and pour into pie shell.
  • Bake in preheated oven at 375° for 30-35 minutes until custard is set.
  • Serve hot or cold.
  • I have had this hot and cold and is good either way!

1/2 lb bacon, cut into 1-inch pieces
1/2 cup onion, minced
3 tablespoons butter
1/2 lb mushroom, sliced
1 tablespoon flour
1/2 lb zucchini, sliced into coins
1 cup swiss cheese, grated
1/2 teaspoon salt
1/4 teaspoon pepper
3 eggs, lightly beaten
1/2 cup milk or 1/2 cup cream
9 inches pie crusts

Steps:

  • Preheat over to 425 degrees F.
  • Cook bacon until crisp; drain and set aside.
  • Saute onion in butter until wilted. Add mushrooms and zucchini and saute 4 more minutes. Stir in flour and cook 2 more minutes, until thickened. Remove from heat and cool.
  • Place bacon over bottom of pie crust. Top with grated cheese and spoon vegetable mixture over the cheese.
  • Combine eggs, milk, salt and pepper. Pour over vegetables.
  • Bake in preheated oven for 15 minutes. Reduce heat to 300 degrees F and bake 30 minutes longer, or until filling is set and top is lightly browned.
  • Serve warm.

We fell in love with this recipe back at home... it even trumped pizza! It has similar spices (maybe like a "white pizza") and it's relatively fast and easy! Use smaller zucchini's not the massive garden ones... or pick them small and tender. Fresh herbs change the flavor and you must use more, but go with what you like. Served well with fresh fruit/melon and blueberry muffins. Tea rooms eat your heart out!

4 cups zucchini, sliced
1 cup onion, chopped
1/2 cup butter
2 tablespoons parsley flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon garlic powder
1/4 teaspoon basil
1/4 teaspoon oregano
2 cups mozzarella cheese
2 eggs, beaten
8 ounces crescent rolls
2 tablespoons Dijon mustard

Steps:

  • Preheat the oven to 375 degrees.
  • Melt butter with the onions and zucchini and sauté 10 min or until onions are translucent.
  • While this cooks mix herbs and spices in one bowl, eggs and cheese in another.
  • Add spices to the pan and mix well.
  • Add egg cheese mix to pan and stir quickly.
  • Line your pie pan with the crescent rolls and baste with mustard (it helps to space them like a wide spaced puzzle before you join the pieces.
  • Quickly transfer to crescent roll lined pan (cheese melts quickly).
  • Bake 18-20 minutes or until golden and not runny.
  • Allow to cool and firm up 10 minutes.
