Steps:

  • Quarter zucchini lengthwise; cut crosswise into 1/2-inch-thick pieces. Remove ribs and seeds from peppers; cut into 3/4-inch squares.
  • Heat olive oil in a large skillet over medium-high heat. Add zucchini, peppers, tomatoes, and garlic; season with salt and pepper. Cook, tossing frequently, until vegetables are crisp-tender, 6 to 8 minutes.

The ideal outdoor meal: this colorful main-course pasta salad chock-full of protein, vegetables and bold flavorings. For fresh flavor and peak texture, toss the salad right before serving. Pack the dressing in a jar and the salad ingredients in a gallon-sized zipper bag. ¼ cup rice wine vinegar
2 tablespoons Dijon mustard
1 large clove garlic, minced
Big pinch of salt
Black pepper, to taste
⅔ cup extra-virgin olive oil
2 medium zucchini, thinly sliced lengthwise
1 medium yellow pepper, halved lengthwise, seeded
2 tablespoons olive oil
Ground black pepper and salt, to taste
1 gallon water
2 tablespoons salt
1 pound medium pasta shells
1 pound cooked shrimp, halved lengthwise
8 ounces cherry tomatoes, halved
¾ cup coarsely chopped, pitted Kalamata olives
1 cup crumbled feta cheese
½ small red onion, cut into small dice
2 teaspoons dried oregano

Steps:

  • To make the vinaigrette, whisk together the rice wine vinegar, mustard, garlic, pinch of salt, and pepper; slowly pour in 2/3 cup olive oil, whisking constantly. Pour into a jar with a tight-fitting lid to transport it to the picnic.
  • Adjust oven rack to highest position and turn broiler on high. Toss zucchini and bell pepper with 2 tablespoons olive oil and salt and pepper to taste, and arrange on a large baking sheet with sides. Broil until spotty brown, 8 to 10 minutes, turning zucchini slices and pepper halves once. Set aside in a large bowl to cool, then cut into bite-sized pieces.
  • Bring 1 gallon of water and 2 tablespoons of salt to boil. Add pasta; boil using package times, until just tender. Drain thoroughly (do not rinse) and dump onto the baking sheet. Set aside to cool.
  • Put vegetables, pasta and remaining ingredients (except dressing) in the bowl or a gallon-sized zipper bag (can be refrigerated for several hours). When ready to serve, add dressing; toss to coat.

Baked Orzo With Tomatoes, Roasted Peppers and Zucchini image

Orzo is a type of pasta that looks like rice. It's popular in Greece, where it is baked in casseroles like this one. If you like comforting dishes like macaroni and cheese, you'll like this.

1/2 pound orzo (about 1 1/8 cups)
Salt to taste
1 large red pepper, roasted and diced
3 tablespoons extra virgin olive oil
2 medium zucchini, sliced about 1/4 inch thick
Freshly ground pepper to taste
1 pound tomatoes, peeled, seeded and diced; or 1 14-ounce can diced tomatoes, with juice
1 or 2 plump garlic cloves (to taste), minced
2 ounces freshly grated Parmesan or 2 ounces crumbled goat cheese (1/2 cup, tightly packed)

Steps:

  • Bring a large pot of generously salted water to a boil, and add the orzo. Cook eight minutes, or until it is cooked through but still firm to the bite. Drain and transfer to a large bowl. Toss with the diced roasted pepper and 1 tablespoon of the olive oil.
  • Preheat the oven to 375 degrees. Oil a 2-quart baking dish. Heat another tablespoon of olive oil over medium-high heat in a large, wide skillet. Add the zucchini and cook - stirring and turning over the slices, or tossing them in the pan - until just cooked through and lightly colored, about five minutes. Scrape into the bowl with the orzo.
  • Return the pan to the heat, add the final tablespoon of oil and the garlic. Cook just until fragrant, 20 to 30 seconds, and add the tomatoes and salt to taste. Cook, stirring from time to time, until the tomatoes have cooked down slightly and smell fragrant. Taste and adjust seasoning. Scrape into the bowl with the orzo, add the Parmesan or goat cheese, and mix everything together. Add freshly ground pepper to taste, and adjust salt. Transfer to the baking dish.
  • Bake 30 to 40 minutes, until the top is just beginning to color. Serve hot or warm.

1 lb zucchini
2 tablespoons butter
1 tablespoon olive oil
1 cup sliced onion
1 -2 cup sliced bell pepper (any color)
1 1/2 cups peeled seeded and chopped tomatoes
1 teaspoon chopped fresh basil
1/2 teaspoon oregano
salt & freshly ground black pepper
1/2 cup feta cheese (optional) or 1/4 cup parmesan cheese (optional)
1/2 cup sliced black olives, to taste (optional)

Steps:

  • Wash, trim, and slice zucchini.
  • Salt zucchini lightly and allow to drain for about ten minutes, then pat dry.
  • Heat the butter and oil, sauté onions until wilted.
  • Add the zucchini and peppers, cook 2 to 3 minutes.
  • Stir in tomatoes, herbs, and add salt and pepper to taste.
  • Cook 4 to 5 minutes, or until the vegetables are tender.

FOR TOMATOES AND FILLING
8 medium (5- to 6-oz) tomatoes, left whole, plus 1 large (1/2-lb) tomato, chopped
3 medium onions, chopped
3 tablespoons olive oil
3/4 cup white rice (preferably medium- or short-grain)
1 1/2 cups water
1 1/2 lb ground beef (preferably 80 to 85 percent lean)
3 tablespoons chopped dill
3 tablespoons chopped parsley
2 tablespoons chopped mint
FOR ZUCCHINI AND PEPPERS
6 (1/2-lb) zucchini
6 (5- to 7-oz) green bell peppers
FOR BAKING STUFFED VEGETABLES
3 tablespoons tomato paste
2 cups water
2 tablespoons olive oil
1 tablespoon sugar
1 tablespoon lemon juice

Steps:

  • Slice tops of 6 tomatoes, reserve. Scoop out pulp, drain in sieve, chop. (Save 2 tomatoes.) Cook onions in oil, stirring occasionally, 8-10 mins. until soft, not brown. Add chopped tomato, 3/4 C chopped tomato pulp and cook, stirring occasionally, until liquid evaporates and tomato begins to break down, 5 min. Add rice and cook, stirring, 2 min. Add water, boil, then simmer, covered, over low heat until rice tender and water absorbed, 20 min. Transfer rice mixture to bowl, chill until cool, about 20 min. Add beef, herbs, 1 3/4 tsp salt, and 1 tsp pepper to cooled rice, kneading until smooth. Trim and cut zucchini crosswise in half to fit upright in a deep 7-qt heavy pot with lid. Hollow out each zucchini halfl leave 1/2 inch at bottom. Cut tops off peppers, reserve and hollow. Preheat oven to 400°F with rack in middle. Fill veggies. Arrange tomatoes in cake pan lined with foil. Stir tomato paste into water; add 1/2 cup to pan, reserve rest. Put tops on tomatoes and cover tightly with foil. Bake 45 min. Cut 2 tomatoes into thin slices and layer in 7-qt pot; drizzle with oil. Stand zucchini and peppers in pot, leaning against each another and wedge pepper lids to keep them upright. Sprinkle chopped tomato pulp over and pour tomato water around veggies. Bring to boil then simmer, covered, 20-25 min./140°F. Transfer stuffed vegetables to a serving dish and add sugar and lemon juice to cooking liquid in pot. Boil until reduced to about 1 cup, about 10 minutes. Season with salt. Spoon a little cooking liquid over each stuffed vegetable.

2 zucchini, sliced 1/4 inch thick (8 inches long)
1 (28 ounce) can diced tomatoes, in juice
1 large onion, cut in half, and then sliced
1 large green pepper, seeded, sliced into slices, and then each slice in half
Tabasco sauce, to your taste or 3 -5 dashes red hot peppers
salt and pepper, to taste

Steps:

  • Put zucchini in a med. sized pot, and add the can of chopped tomatoes and juice.
  • Add onion, and green pepper, along with a couple of shakes of tabasco sauce, or a couple of shakes of red hot peppers, and salt and pepper, to taste.
  • Cook for about 15 minutes. Make sure you don't cook too long, or veggies get mushy. They should have a little crunch to them.

1 green pepper, cut into 3/4 inch squares
1 medium onion, chopped
1 medium zucchini, cut into 1/2 inch slices and cubed (about 6 ounces)
5 finely minced garlic cloves
3/4 lb tomatoes, skinned and diced or 1 lb canned tomato, drained
1 tablespoon minced flat leaf parsley
salt
pepper

Steps:

  • Heat oil in large saucepan and saute pepper, onion, zucchini and garlic until onion is wilted.
  • Add remaining ingredients and cook over medium heat, uncovered, about 10 to 15 minutes.
  • Then turn up heat to reduce liquid.

1/4 teaspoon salt

1/4 cup vermouth
1 (14 1/2 ounce) can diced Italian tomatoes

Steps:

  • Place sundried tomatoes in small bowl and cover with boiling water for 5-10 min or until soft. Drain and cut into slivers.

  • Add chicken and toss until evenly coated.
  • Heat oil in large skillet. Add chicken and cook without stirring until golden (3-4 minutes). Turn chicken and cook 3 minutes longer.
