1/2-2/3 lb spaghetti
1 tablespoon extra virgin olive oil
1 tablespoon butter, cut into pieces
3 garlic cloves, cracked away from skin but still whole
1/2 cup chopped walnuts
1/2 cup chicken broth
1/2 cup heavy cream
6 ounces crumbled gorgonzola
3 tablespoons chopped fresh sage

Steps:

  • Bring a large pot of water to a boil; add salt, then add the pasta; cook to al dente, about 7 minutes.
  • Meanwhile, heat a large skillet over medium heat and add in olive oil and butter.
  • Add the garlic and nuts; cook 5 minutes.
  • Remove garlic when it gets golden brown.
  • Add in broth and cream; bring to a bubble; add in the cheese and melt into sauce.
  • Drain pasta well and add it to the sauce.
  • Add sage; toss to coat pasta in sauce and walnuts; serve.

This is a very light and quick cooking sauce. This isn't a heavy, creamy, thick sauce but has lots of flavor. It cooks up in just minutes. This is perfect for any week night.

12 ounces whole wheat short pasta (I like the small corkscrew, or a fussili)
1 lb zucchini, peel left on and thin sliced
1 large onion, thin sliced (I like to cut in half first and then sliced)
2 scallions, chopped (greens and whites)
3/4 cup chopped walnuts
4 tablespoons light cream
1/2 cup parmesan cheese
5 tablespoons butter
3 tablespoons parsley
1 teaspoon fresh rosemary
kosher salt
ground black pepper
parmesan cheese (to garnish)

Steps:

  • Pasta -- Cook the pasta according to directions. When it is done, just drain reserving 1 cup of the pasta water and return the pasta to the pot. NOTE: Whole wheat pasta does make a difference in this dish.
  • Sauce -- In a large sauce pan, add the butter and saute the onions for about 5 minutes until soft but not caramelized. Then add in the zucchini and cook another few minutes. They take just minutes to cook. Then add the walnuts, cream, parsley, rosemary, salt and pepper.
  • Combine -- Add the pasta to the sauce along with the parmesan and some of the pasta water and toss well. Garnish with some extra parmesan if you want. ENJOY!

3 carrots
1 medium onion
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Slice zucchini.
  • Peel and grate carrots.
  • Peel and slice onion.
  • Put olive oil and sliced onions into skillet, cover and cook over medium heat until onions are tender.
  • Add grated carrots, sliced zucchini, salt and pepper.
  • Cover and continue to cook until all vegetables are soft.
  • 15-20 minutes.
  • Serve as a side dish.

½ cup canola oil
1 cup whole wheat flour
1 cup all-purpose flour
2 teaspoons baking soda
1 ½ teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon kosher salt
1 large carrot, peeled and shredded
1 large zucchini, shredded
1 ½ cups chopped walnuts, divided

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
  • Cream sugar and eggs together in a large bowl. Mix in applesauce and oil.
  • Whisk whole wheat flour, all-purpose flour, baking soda, cinnamon, nutmeg, and salt together in a bowl; add to egg mixture. Fold in carrot, zucchini, and 1 cup walnuts. Spread in the prepared pan. Sprinkle with remaining walnuts.

This is a dish I came up with when I wanted something sorta like pasta, but veggie instead. :) It's not, um, well, lowfat... but hey, balance in your diet is the key, right? Other nuts can be substituted for walnuts - pecans or pistachios are also tasty! This dish by itself is a rich, lower carb plate, but it's also very good over pasta.

3 tablespoons extra virgin olive oil
4 medium tender carrots, peeled and julienned
5 small zucchini, julienned
2 garlic cloves, crushed, with (optional for those who are allergic)
1 pinch salt
1 tablespoon dry sherry
2 tablespoons butter
1/2 cup broken walnuts
1/4 cup chopped fresh basil
1 cup heavy cream
6 ounces gorgonzola, crumbled
1/8 teaspoon nutmeg
salt and pepper, to taste
grated parmesan cheese

Steps:

  • In a saute pan over medium heat, saute the carrots in oil, stirring occasionally, for 3 minutes, then cover and let simmer for an additional 3 minutes.
  • Increase the temperature to high and add the zucchini, crushed garlic, and sherry and saute, stirring, for about 4 to 5 minutes until vegetables are crisp-tender.
  • Transfer cooked vegetables to an oven-safe serving dish and set in a warmed oven.
  • Over medium heat, melt butter in a small skillet; stir in the walnuts and basil and cook for 3 minutes then set aside.
  • Over medium high heat in a saute pan, heat the cream until steaming, then stir in the Gorgonzola cheese until it melts; add the nutmeg, salt, pepper, and the walnut basil mixture.
  • Retrieve cooked vegetables on serving plate from warming oven and pour the walnut gorgonzola sauce over.
  • Sprinkle with grated Parmesan cheese and serve immediately.
