1 teaspoon cumin seed (optional)
1/4 teaspoon garlic powder
1/8 teaspoon black pepper
1/8 teaspoon cayenne pepper (optional)
1 1/2 cups edamame, measured after cooked and shelled or 15 ounces canned pinto beans, rinsed and drained
1/3 cup bottled salsa
1 green onion, cut into 1-inch pieces
2 tablespoons fresh cilantro leaves
1/4 teaspoon Mexican seasoning (Zippy Zonya Mexi Seasoning Mix)
multi-grain tortilla chips, for dipping

Steps:

  • PREPARE ZIPPY ZONYA MEXI SEASONING MIX:.
  • Combine all spices listed. (Leftover spice may be stored in a plastic self-sealing bag for up to 1 month.) The bean dip uses 1/4 teaspoon.
  • PREPARE BEAN DIP:.
  • In a food processor combine edamane, salsa, green onion, cilantro and 1/4 teaspoon Zippy Zonya Mexi Seasoning Mix.
  • Cover and process until mixture is smooth.
  • SERVE DIP WITH CHIPS:.
  • Serve with multi-grain tortilla chips.
  • Store in refrigerator for up to 24 hours.

Don't buy MSG-loaded Adobo, Sauzon, or store-bought fajita seasoning. Combine with oil and use it to marinate corn, chickpeas, potatoes, and beans for a crispy healthy snack, and it's also great for tacos, fajitas, quesadillas, and I swear by this seasoning for my arroz con frijoles. It works for other Latin American foods too.

4 teaspoons paprika
4 teaspoons cornmeal
2 teaspoons cumin
2 teaspoons oregano
1 teaspoon onion powder
1 teaspoon ground coriander
1/2 teaspoon cayenne pepper

Steps:

  • Carefully mix, by hand, all the spices in a bowl until they are all perfectly melded, should be a light reddish-brown color.
  • Yields 3.4 ounces, have an airtight bottle or container ready to store inches.
  • Feel free to substitute the onion powder for garlic powder for a hotter taste, and cilantro for coriander, and adjust the cayenne according to how hot you would like it.
