2 pounds lean ground beef (90% lean)
2 cans (16 ounces each) kidney beans, rinsed and drained
2 cans (14-1/2 ounces each) diced tomatoes, undrained
1 can (8 ounces) tomato sauce
2 medium onions, chopped
1 green pepper, chopped
2 garlic cloves, minced
2 tablespoons chili powder
1 teaspoon salt
1 teaspoon pepper
Shredded cheddar cheese and thinly sliced green onions, optional

Steps:

  • In a large skillet, cook beef over medium heat until no longer pink; drain. , Transfer to a 5-qt. slow cooker. Add the next 9 ingredients. Cover and cook on low for 8-10 hours. If desired, top individual servings with cheese and green onions.

1 medium onion, chopped
1 medium green pepper, chopped
1 (15 ounce) can fat-free vegetarian chili
1 (8 ounce) can tomato sauce
2 tablespoons chili powder
2 tablespoons minced fresh parsley
1 tablespoon dried basil
2 teaspoons ground cumin
4 garlic clove (blank)s garlic cloves, minced
1 teaspoon dried oregano
¾ teaspoon pepper
⅛ teaspoon hot pepper sauce
6 tablespoons shredded reduced-fat Cheddar cheese
1 tablespoon minced chives

Steps:

  • In a nonstick skillet, cook beef over medium heat until no longer pink; drain. Transfer to a 3-qt. slow cooker. 1/2 cup onion, chopped
1 cup fresh mushrooms, chopped
1/2 cup green pepper, chopped
1/2 cup red pepper, chopped
1 garlic clove, minced
2 cups water
1 (14 1/2 ounce) can diced tomatoes with green chilies, undrained
1 (1 1/4 ounce) package taco seasoning
1 (15 1/2 ounce) can great northern beans, rinsed and drained
1 (15 ounce) can black beans, rinsed and drained
1 (15 ounce) can pinto beans, rinsed and drained
8 tablespoons cheddar cheese, shredded

Steps:

  • In a large saucepan, cook beef and onion over medium heat until no longer pink.
  • Add mushrooms, peppers and garlic, cook and stir 3 minutes, until vegetables are almost tender.
  • Stir in water, tomatoes and taco seasoning.
  • Bring to a boil, reduce heat and simmer, uncovered, 30 minutes.
