• Crack 2-eggs into a quart size Ziplock bag, don't use more than 2- eggs, zip it up & shake it to mix the eggs.
• Lay out a variety of cut up ingredients like cheddar cheese, ham, onion, green onion, bell pepper, tomato, mushrooms, etc.

Steps:

  • Each guest adds ingredients of choice to their bag. Zip it up & shake. • Make sure all the air is out of the bag & zip it up. • Place the bags into the boiling water for exactly 13-minutes. You will need a large pot to boil the egg bags in. • You can usually cook 6 to 8 bags or omelets in a large pot, at a time. If you need two pots, use them. • When the 13-minutes are up, take out of water & unzip or cut the zip lock bag open & the omelet will roll out easily. Be prepared for everyone to be amazed. These are nice to serve with fresh fruit or coffee cake.

I love to entertain overnight guests. However, I have found that preparing omelets for a crowd can be a chore. Especially when the holidays are approaching - more family and friends staying overnight or stopping in for breakfast. This idea works great for those occasions. No one has to wait for their special omelet!

2 large eggs for each serving
PREPARE BOWLS OF THE FOLLOWING:
- shredded cheese
- chopped ham, bacon, turkey, beef, sausage
- chopped onions
- chopped green peppers
- sauteed sliced mushrooms
- chopped tomatoes
- chopped spinach
- salsa for serving

Steps:

  • Have guests write their name on a quart-size ziploc freezer bag with permanent marker.
  • Crack 2 eggs (large or extra-large) into the bag (not more than 2) shake to combine them.
  • Each guest adds prepared ingredients of choice to their bag and shake, Make sure to get the air out of the bag and zip it up.
  • Place the bags into rolling, boiling water for exactly 13 minutes. You can usually cook 6-8 omelets in a large pot. For more, make another pot of boiling water. Keep the bag away from the edges of the pot. They're really hot and the plastic will melt. This means you will have to monitor it the whole time, but such is the price to pay. Do not microwave. The soft plastic will melt in the microwave and release toxic fumes onto your food.
  • Open the bags and the omelet will roll out easily. Be prepared for everyone to be amazed.
  • Nice to serve with fresh fruit and coffee cake; everyone gets involved in the process and a great conversation piece.
