STEAK TARTARE

16 ounces top sirloin, cleaned and trimmed
2 teaspoons sherry vinegar
1/2 teaspoon dry mustard
2 large egg yolks
1/4 cup light olive oil
6 tablespoons finely diced shallots
2 tablespoons small, brined capers, drained and unrinsed
1 teaspoon kosher salt
1/4 cup celery leaves, finely chopped and divided
2 tablespoons fresh parsley, finely chopped and divided
1 teaspoon freshly grated lemon zest

Steps:

  • Cut the steak into 1-inch cubes and park in the freezer for 10 minutes.
  • Whisk the vinegar, dry mustard and egg yolks together in a small bowl. Whisk continuously while streaming in the oil until emulsified, then whisk in the shallots, capers, salt, and roughly 2/3 of the celery leaves and parsley.
  • Hand chop the meat to your desired texture. (Alternately, divide the meat into 4 batches and pulse each batch separately 3 to 4 times in the bowl of a food processor fitted with the standard S-blade.)
  • With clean hands, quickly fold the meat and dressing together. Plate using a 3 3/4-inch pastry ring and garnish with the reserved herbs and lemon zest.

Canola oil, for frying
4 flour tortillas, cut into 2-inch by 1-inch rectangles
Kosher salt
1 ripe avocado, peeled, pitted and chopped
3 tablespoons fresh lime juice
2 teaspoons honey
Kosher salt and freshly ground black pepper
12 ounces sushi grade tuna, finely diced
2 tablespoons mustard oil
1 tablespoon olive oil
2 tablespoons capers, drained
1 tablespoon chipotle pepper puree (from chipotles in adobo sauce)
3 tablespoons chopped fresh cilantro leaves
1/4 cup finely sliced green onion
1 ripe Hass avocado, peeled, pitted, and finely diced
Kosher salt and freshly ground black pepper

Steps:

  • For the tortillas: Heat the oil in a heavy, high-sided pan to 350 degrees F. Fry the tortilla pieces a few at a time until lightly golden brown and crisp. Drain on a plate lined with paper towels and season with salt.
  • For the avocado butter: Combine all ingredients in a blender and blend until smooth.
  • For the tartare: Combine tuna, mustard oil, olive oil, capers, chipotle, cilantro, and green onion in a large bowl. Gently fold in the avocado and season with salt and pepper, to taste.
  • Place each of the fried tortilla pieces on a plate and spread with a small dollop of the avocado butter. Top the butter with some of the tuna tartare. Repeat with the remaining ingredients.

1 lb ground beef
1/4 cup onion, chopped
1 cup spaghetti sauce
1 1/2 cups mozzarella cheese, shredded
1/2 cup sour cream
1 (8 ounce) can crescent rolls
1/3 cup parmesan cheese, grated
2 tablespoons butter

Steps:

  • Heat oven to 375 degrees Fahrenheit.
  • In large skillet, brown beef and onion then drain.
  • Return meat to pan; add spaghetti sauce.
  • Meanwhile, in a medium bowl combine mozzarella cheese and sour cream.
  • Pour hot meat into an ungreased 12 x 8 inch dish.
  • Spoon cheese mixture over meat.
  • Unroll crescent roll dough over the top of the mixture.
  • Mix parmesan cheese and butter together, then spread over the top of the dough.
  • Bake 18-25 minutes or until golden brown.

1 cup butter, cubed
6 cloves garlic, chopped
¼ cup chopped fresh thyme
2 tablespoons cracked black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with parchment paper or aluminum foil.

2 anchovy fillets
2 garlic cloves, chopped
1/2 cup minced shallots
1 tablespoon drained, chopped capers
1 large egg
2 tablespoons Dijon mustard
1 1/2 teaspoons grated orange zest
1/4 cup olive oil
1 teaspoon Worcestershire sauce
1 pound beef tenderloin, freshly ground
Kosher salt and cracked black pepper
8 slices Rick's Basic Crostini
1/4 cup chopped fresh flat-leaf parsley
1 tablespoon white truffle oil

Steps:

  • 1. In a chilled mixing bowl, mash the anchovies and garlic with a fork to make a paste. Add the shallots and capers and mash them into the paste. Add the egg and whisk it into the paste with the fork. Whisk in the mustard and orange zest.
  • 2. In a slow, steady stream, add the olive oil, whisking constantly until incorporated. Whisk in the Worcestershire sauce.
  • 3. Add the beef and mix well with a wooden spoon. Season to taste with salt and pepper.
  • 4. Mound some tartare in the center of each crostini. Garnish with parsley and drizzle with truffle oil.

At Joe Beef, we mix up the tartares on the menu, sometimes offering the classic French recipe and other times the zesty Italian. This is the one we prepare at home the most. A nice alternative to carpaccio, it's a great summer tartare.

1 pimiento-stuffed green olive, chopped
1 1/2 teaspoons chopped fresh flat-leaf parsley
1 1/2 teaspoons chopped fresh basil
1/2 teaspoon finely chopped garlic
1/2 teaspoon finely chopped red onion
2 anchovy fillets
1 tablespoon grated Parmesan cheese
2 tablespoons red wine vinegar
3 tablespoons canola oil
3 tablespoons olive oil
1 teaspoon brown sugar
1 teaspoon Dijon mustard
1 teaspoon water
1 pound (455 g) top sirloin
Salt and pepper
4 slices country bread, brushed with olive oil
1 or 2 cloves garlic (optional)
4 anchovy fillets (optional)
Sour Crudités (page 177)
1 tablespoon fresh flat-leaf parsley leaves for garnish
Thin shavings of Parmesan cheese for garnish

Steps:

  • To make the dressing, in a large measuring pitcher, combine the olive, parsley, basil, garlic, onion, anchovy fillets, Parmesan, vinegar, the oils, the brown sugar, mustard, and the water. Emulsify with a hand blender and set aside.
  • To prep the meat, cut the sirloin into 1/2-inch (12-mm) cubes, making sure there is no silver skin or gristle. Using a small blender or food processor, grind the meat until it has that steak tartare consistency. Place the ground meat in a bowl and season with salt and pepper. Add the dressing and mix well. We recommend starting with half and adding more to taste.
  • Toast the oil-brushed bread slices. If you want to get crazy, rub the toast with a garlic clove, and place an anchovy fillet on top of each slice.
  • Place the tartare on a plate, arrange the toasted bread slices on the side, and spoon the pickled vegetables alongside the tartare. Garnish the tartare with the parsley and Parmesan shavings. Serve right away.
