I love cheese, it is one of my favorite foods. So naturally, I decided to create a homemade macaroni and cheese.

1 lb elbow macaroni
1 1/2 cups mild cheddar cheese, shredded
1 1/2 cups sharp cheddar cheese, shredded
1 1/2 cups KRAFT Shredded Three Cheese with a Touch of PHILADELPHIA
1/4 cup butter
1/4 cup all-purpose flour
2 cups skim milk
salt
pepper
1/2 teaspoon garlic powder
Ritz cracker

Steps:

  • Preheat oven to 350°.
  • Boil pasta till al dente, drain.
  • Melt butter in sauce pan over low/medium heat, add flour and stir till thick and chunky.
  • Add milk and whisk until butter and flour mixture has blended.
  • Let cook until milk becomes thick, stirring often.
  • Add all cheeses 1/2 cup at a time, whisking until cheese has melted before adding next amount.
  • Once all blended and melted add salt and pepper to taste then add garlic.
  • Grease an 8x10 casserole dish, pour in pasta and cheese sauce, stir till mixed.
  • Break up one sleeve of ritz crackers over the top.
  • Bake 20 minutes.

I am always trying to find something my entire family agrees on and I think I finally did it!! This by far is my best recipe yet! I added broccoli and salad for a main dish meal we all loved!!! I hope you enjoy it as much as we did.

2 cups small shell pasta (7oz)
1/4 cup butter
1/4 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dry mustard
1 3/4 cups milk
2 cups shredded cheddar cheese (8oz)
fresh breadcrumb

Steps:

  • Heat oven to 350°F.
  • Cook pasta as directed on the box.
  • While pasta is cooking, melt butter in saucepan over low heat. Stir in flour, salt, pepper, and mustard. Cook over low heat, stirring constantly, until mixture is all smooth and bubbly;remove from heat. Add milk, and put back on heat, until boiling, stirring constantly. Boil and stir approx 1 minute. Mixture will thicken. Add cheese. Cook, stirring occasionally, until cheese is melted.
  • Drain pasta. Add pasta and cheese mixture to ungreased 2 quart casserole and top with fresh breadcrumbs if desired. (I use fresh that I make).
  • Bake uncovered for 20-25 minutes or until golden brown.

1 box (7 to 8 oz.) elbow macaroni, cooked
1 lb shredded sharp cheddar cheese
1 can (4 oz.) mushroom stems and pieces, drained
1 can (10 1/2) oz. cream of mushroom soup
1 jar (2 oz.) pimentos
1 cup mayo
1/2 cup milk
1/2 cup chopped onion
15 buttery cheese crackers, crushed
1/4 cup melted butter

Steps:

  • Cook macaroni and drain.
  • Combine macaroni with cheese, mushrooms, mushroom soup, pimentos, mayo, milk and onions in a 2 quart casserole dish. Top with crushed crackers and melted butter.
  • Bake at 350°F for 40 min.

I've researched macaroni and cheese recipes until I came up with my own that satisfied my need for a southern style mac and cheese recipe.

4 cup(s) grated cheese (pick your favorite cheeses.) i use a combination of sharp cheddar, colby, and monterey jack.
1/2 box(es) rigatoni pasta, uncooked
1 1/2 tablespoon(s) granulated garlic
2 tablespoon(s) coursely ground pepper
1/2 teaspoon(s) nutmeg
1 teaspoon(s) paprika, hot
1 1/2 teaspoon(s) ground dried mustard
2 cup(s) smoked cheddar
2 cup(s) heavy cream
2 - milk

Steps:

  • Boil the rigatoni in 3 quarts well-salted walter
  • Pour the heavy cream and milk into a large bowl. Add the seasonings and whisk. Add the cheese mixtures until well blended.
  • Drain the rigatoni and allow to slightly cool. Pour the milk and cheese mixtures over the rigatoni and stir. Spray non-stick coating on a large casserole dish. Sprinkle the smoked cheddar on top of the cheese mixture. Bake in a 350 degree oven for about 40-45 minutes. Allow to cool slightly before serving so that the cheeses do not run when served.
