This is a wonderful salad recipe that I got from my Mom. I really enjoy it and it is my husbands favorite. He will request this salad for any occasion.

1 (7 ounce) box chicken rice-a-roni, prepared and cooled
1 (6 1/2 ounce) jar marinated artichoke hearts, chopped
1 bunch green onion, sliced
shrimp, medium can, drained
1/2 cup sliced black olives
1/2 cup sliced pimento stuffed olive
1/4-1/2 cup mayonnaise

Steps:

  • In a large bowl mix prepared Rice-a-Roni, artichokes, onions, shrimp, and both types of olives and mix.
  • Add mayonnaise starting with 1/4 cup and adding more to your desired consistency.
  • Mix and eat.

HOMEMADE RICE-A-RONI



Homemade Rice-a-Roni image

1 cup brown or white long-grain rice
½ cup orzo
2 tablespoons extra virgin olive oil
2 tablespoons butter
1 small yellow onion, finely chopped
3 tablespoons chopped walnuts or pecans
3 cups broth of your choice
¾ teaspoon salt
1 tablespoon fresh parsley, chopped
½ teaspoon dried rosemary or herb of your choice
Salt and pepper to taste

Steps:

  • Heat the oil and butter in a skillet over medium-high heat. Add the rice, orzo and nuts and saute, stirring frequently, until half of the rice and orzo is browned.
  • Add the onion and cook for another two minutes.
  • Add the chicken stock, salt and herbs and stir to combine.
  • Bring it to a boil, reduce the heat to low, cover and cook as you would normally cook rice, about 15-20 minutes (if using white rice, longer if using brown) or until the rice is done.
  • Fluff with a fork and serve immediately.

I have been making this delicious rice salad for years. The pages to my little community cookbook where I found this recipe is starting to fall apart from so much use. Anyway, this recipe is one of my favorites. I hope you enjoy it, too.

1 pkg chicken flavored rice-a-roni, cooked as directed
2 jar(s) marinated artichoke hearts, cut up
1/3 c mayonnaise
1/4 tsp curry powder
8 pimento stuffed olives, sliced
2 green onions, (scallions) sliced

Steps:

  • 1. Drain artichokes, saving marinade. Add artichokes to cooked rice. Mix the mayonnaise and curry powder. Add to marinade and mix well. Add remaining ingredients. Toss together. Chill.

7 ounces chicken rice-a-roni
1 (6 ounce) jar marinated artichokes, quarterd and marinade reserved
1/2 green pepper, chopped
1/2 red pepper, chopped
12 large olives, sliced
4 green onions, sliced including green parts
1/2 cup light mayonnaise, like Hellmanns
1 tablespoon fresh lemon juice
1/4 teaspoon fresh ground pepper
1 lb small shrimp, cooked

Steps:

  • Prepare RICE-A-RONI as box directs.
  • Remoce from heat and place in a large bowl to cool off. Lift with a large spoon a few times to help speed up the cooling process.
  • Get all your vegetables prepared.
  • Make the dressing by combining the Mayo with the marinade, lemon juice, curry powder, pepper.
  • Add everything to the bowl. Pour over the dressing last, and combine well.
  • Serve right away. or refrigerate and serve at another time. This is a wonderful lunch treat or a supper worthy of company! :-).
  • (I used frozen salad shrimp from SAM'S Club).

Made with shredded chicken, tender basmati rice, and smoky-sweet, caramelized onions and peppers, this chicken Rice-A-Roni® was inspired by a Lebanese rice and vermicelli pilaf. Garnish with fresh herbs, lemon juice, chili flakes, hot sauce, or even garlic-infused yogurt!

1 (3 1/2) pound whole chicken
1 stalk celery, roughly chopped
1 medium carrot, roughly chopped
½ medium yellow onion, roughly chopped
1 large bay leaf
1 tablespoon kosher salt
3 quarts water
2 tablespoons olive oil
2 tablespoons butter
½ medium yellow onion, diced
⅓ cup diced red bell pepper
2 teaspoons kosher salt
1 cup broken uncooked spaghetti (2-inch pieces)
1 ½ cups basmati rice
¼ teaspoon freshly ground black pepper
¼ teaspoon dried oregano
½ teaspoon ground cumin
½ teaspoon saffron threads, crushed
1 pinch cayenne pepper
½ cup garbanzo beans, drained and rinsed
⅓ cup frozen green peas, thawed and drained
2 tablespoons chopped fresh parsley, or to taste
2 tablespoons chopped fresh cilantro, or to taste

Steps:

  • Place chicken, celery, carrot, onion, and bay leaf in a stockpot and cover with water. Set over high heat, add salt, and bring to a simmer. Reduce heat to medium-low and simmer until the thighs and legs can be pulled easily from the carcass, about 1 hour and 15 minutes. Remove chicken to a bowl, carefully tipping the carcass to drain any broth from the cavity back into the stockpot.
  • Let meat sit until it's cool enough to handle, 15 to 20 minutes. Separate skin, bones, and meat. Set aside 2 cups shredded meat (white, dark, or a combination of the two) for rice-a-roni and reserve the rest for another use.
  • Transfer skin and bones back to the stockpot with the broth and simmer for 1 to 2 hours or until you need it. Strain.
  • Combine oil and butter in a skillet over medium-high heat. When hot and melted, add onion, bell pepper, and salt. Cook and stir until onion just starts to turn translucent, 3 to 4 minutes. Add broken spaghetti and cook until toasted and light golden brown to dark brown in color, about 3 minutes; it's okay if the onions and peppers start to caramelize.
  • Add rice and stir until completely coated. Add pepper, oregano, cumin, and saffron. Stir in 3 ½ cups chicken broth. Add cayenne, garbanzo beans, peas, and shredded chicken and return to a simmer.
  • Cover tightly with a lid, reduce heat to medium-low, and cook for 15 minutes; do not lift the lid or stir during this time.
  • Remove the lid and check the rice in a couple spots. It should be just barely tender. (If it seems undercooked, you can cover and cook for a few more minutes.) Replace the lid, turn off the heat, and let rice sit for 10 minutes.
  • Sprinkle parsley and cilantro over top and stir to combine. Check for seasoning and serve immediately.

This is a great salad on hot summer days. It does take 4 hours to chill before serving, so make in the morning to go with lunch.

1 (10 3/4 ounce) package Rice-A-Roni
2 (6 ounce) jars marinated artichokes, drained (reserve juice)
2 green onions, chopped
1/2 green pepper, chopped
1/2 cup mayonnaise

Steps:

  • Cook rice-a-roni according to package directions except leave out the butter step. Let the rice mixture cool and add green pepper, and onion.
  • Slightly chop up artichokes and stir in rice mixture.
  • Mix mayo and reserved artichoke juice together. Mix into salad mixture. Chill for 4 hours before serving.

1 (8 ounce) can water chestnuts, drained and chopped

1/2 cup plain yogurt
1/2 teaspoon curry powder
1/2 teaspoon cajun seasoning
1/4 teaspoon garlic powder

Steps:

  • Prepare Rice A Roni according to directions omitting butter. Let cool completely.
  • Combine drained marinade, curry powder, mayonnaise and spices. Whisk until smooth with a fork or small whisk.

This is a different Rice-a-Roni Salad. No olives or artichokes. You can use chopped chicken or turkey but seafood or crab is delicious. If you refrigerate overnight, the flavors really blend. So easy! Any time of the year to serve, just leave out the chopped radishes in the winter! I prefer using the crab.

1 (5 ounce) package chicken rice-a-roni
1/2 cup green onion, thinly sliced
1 cup thinly sliced celery
6 red radishes, diced (optional)
1 (8 ounce) can water chestnuts, drained, slivered
1 -2 cup diced cooked shrimp (pollock) or 1 -2 cup diced crabmeat (pollock)
1 cup mayonnaise or 1 cup Miracle Whip
1/2 teaspoon ground curry powder
1 teaspoon Kikkoman soy sauce
2 dashes ground ginger

Steps:

  • Cook the Rice-a-Roni as per pkg directions. Cool.
  • In large bowl add all of the sliced and diced vegetables including the water chestnuts. Mix. Add the seafood or the poultry.
  • Mix the mayonnaise, curry powder, soy sauce and ground ginger.
  • Note: You may use Miracle Whip if you wish.
  • Add the cooled Rice-a-Roni to the salad. Mix. Then add the dressing.
  • It is best if this dish is cooled overnight. The flavors really pop!
  • Serve individually on lettuce leaves or in a large bowl.
