These have a nice chocolate and peanut butter taste but are not too sweet. Easy to prepare. Very Good.

½ cup shortening
1 ¼ cups brown sugar
1 cup peanut butter
3 tablespoons milk
1 egg
1 teaspoon vanilla extract
3 tablespoons unsweetened cocoa powder
3 tablespoons hot water
1 ¾ cups all-purpose flour
¾ teaspoon baking soda
¾ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease cookie sheets.
  • In a large bowl, cream together the shortening, brown sugar and peanut butter. Beat in the milk, egg and vanilla. Stir together the cocoa powder and hot water until cocoa is dissolved; stir into the peanut butter mixture. Combine the flour, baking soda and salt; stir into the batter until well blended. Drop dough by heaping teaspoons 2 inches apart onto the prepared cookie sheets. Use a fork to make a criss-cross pattern on the top.
  • Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 2 minutes before removing to a wire rack to cool completely.

I think the name says it all. I haven't made these in awhile, so the yield is a total guestimate. They make fabulous peanut butter blossoms, but sometimes I'm just in the mood for a good plain peanut butter cookie! I really think you'll like 'em!

1 3/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup butter
1/3 cup peanut butter
1/2 cup sugar
1 teaspoon vanilla
1 egg
1/2 cup brown sugar
Hershey chocolate kiss (optional)

Steps:

  • Preheat oven to 350.
  • Sift together the flour, soda and salt; set aside.
  • Cream butter, peanut butter, sugar and vanilla. Add egg and brown sugar. Slowly incorporate flour mixture (batter will be stiff).
  • Shape teaspoonfuls of dough into balls and roll in sugar. Place on cookie sheet and press down lightly on each cookie with a fork in criss-cross pattern. Bake for about 8 - 10 minutes.
  • To make peanut butter blossoms, don't make pattern on cookie with fork before baking. Simply place on cookie sheet and bake about 8 minutes. Remove from oven and gently press a chocolate kiss onto the top of each cookie until the cookie cracks slightly. Return to the oven for a couple of minutes.

These cookies are great for holidays and easy enough to fix just as a snack! I looked for this recipe online and couldn't find the exact one I remembered fixing. I called my grandma and this is the recipe she gave me.

2 cups sugar
1/2 cup milk
1/2 cup butter
1/4 cup cocoa
1/2 cup peanut butter
2 1/2 cups oatmeal (old fashioned oats)
1 teaspoon vanilla extract

Steps:

  • Mix sugar, milk, butter, and cocoa in med sauce pan.
  • Bring to a boil and let boil for 1 and 1/2 minutes.
  • Remove from heat.
  • Add peanut butter, oats, vanilla and stir.
  • Spoon onto wax paper.
  • Let stand until cookies are cool and harden.

1 cup all-purpose flour
1 cup old fashioned oats
1 teaspoon baking powder
1/2 teaspoon salt
1 cup creamy peanut butter
1/8 cup soymilk (or rice milk or almond milk, you may need a bit more for consistancy)
1/2 cup brown sugar

Steps:

  • Preheat oven to 375°F
  • Lightly grease a cookie sheet.
  • Combine flour, salt and baking powder in a large mixing bowl. Set aside.
  • In a small microwaveable bowl, heat peanut butter in microwave for about 45 seconds or until soft.
  • Stir in brown sugar and soy milk, adding enough soy milk to have a pretty milky consistency.
  • Pour the peanut butter mixture immediately into the mixing bowl containing the dry ingredients.
  • Mix until slightly moist. Add rolled oats. Continue mixing until well combined, you may have to add more soy milk as this batter will be thick. Drop by spoonfuls onto cookie sheet. Bake about 10 minutes.

Another favorite from Betty Crocker that I have made for at least 15-20 years now. ;) A great addition to any cookie tray or for a cookie exchange! Try the Hershey Kiss tip at the bottom too for a great crowd pleaser!

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup peanut butter (I usually use Skippy creamy, but chunky for a change is great)
1/2 cup shortening
1/4 cup margarine (I use Imperial for baking usually) or 1/4 cup butter, softened (I use Imperial for baking usually)
1 egg
1 1/4 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons sugar (for topping)

Steps:

  • Place 2 tablespoons sugar in a small dish and set aside.
  • Combine sugars, peanut butter, shortening, margarine and egg in a large mixing bowl.
  • Stir remaining ingredients into mixture.
  • Cover and refrigerate for at least 3 hours.
  • Preheat oven to 375 degrees.
  • Roll dough into 1 1/4 inch balls.
  • Dip each ball in sugar on one side.
  • Place approximately 2-3 inches apart on an ungreased cookie sheet, sugar side up.
  • Lightly press a dinner fork flat across each ball twice to make a criss cross pattern.
  • Sprinkle flattened dough with light amount of sugar to "dust" the criss cross.
  • Bake 9 to 10 minutes, until cookies are light brown.
  • Allow cookies to cool for 2 minutes before removing from tray.
  • Enjoy! ;).
  • TIP- another idea is to press a Hershey's kiss into the middle of each ball prior to baking instead of flattening it with a fork for a "Peanut Butter Kiss". ;) Kids love these!

1 cup margarine
1 cup peanut butter
1 cup white sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
½ teaspoon almond extract
2 ½ cups all-purpose flour
1 ½ teaspoons baking soda
½ teaspoon salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease two cookie sheets.
  • In a large bowl, cream together the margarine, peanut butter, white sugar and brown sugar until smooth. Beat in the eggs one at a time, then stir in the vanilla and almond extracts. Combine the flour, baking soda and salt; stir into the peanut butter mixture. Roll dough into 1 inch balls and place them 2 inches apart onto the prepared cookie sheets. Use a wet fork dipped in sugar to make the crisscrosses on the top.
