YUMMY BAKED CHICKEN DRUMMIES

6 chicken drumsticks, bone-in, skin removed
1/4 cup fresh lemon juice
2 tablespoons brown sugar
1 tablespoon vegetable oil
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon garam masala
1/2 teaspoon ground ginger
1/2 teaspoon turmeric
Kosher salt and freshly ground black pepper
3 tablespoons unsalted butter
2 large Vidalia onions, peeled, quartered and thinly slice
1/4 cup raisins
2 tablespoons rum
Preheat the oven to 350 degrees F.

Steps:

  • Wash the chicken and pat dry. In a baking dish large enough to hold the chicken in 1 layer, mix together the lemon juice, brown sugar, oil, garlic, paprika, garam masala, ginger, turmeric, a pinch of salt and a few grinds of black pepper. Add the chicken and toss to coat. Arrange the chicken in a single layer in the baking dish. Cover the dish with aluminum foil and transfer to the oven. Bake until the chicken reaches 150 degrees F on an instant-read thermometer, about 35 minutes.
  • While the chicken bakes, warm the butter in a pan over medium-low heat. Add the onions and a pinch of salt. Saute, cooking slowly, until the onions are golden brown and caramelized, about 20 minutes. Stir in the raisins and rum, and use a wooden spoon to loosen any onion bits from the bottom of the pan. Cook until the alcohol evaporates, leaving just the rum scented flavor, about 2 minutes, then remove the pan from the heat. When the chicken reaches 150 degrees F, spoon the onion-raisin mixture over the chicken. Raise the oven temperature to 400 degrees F, then return chicken to the oven and bake for 10 minutes more, uncovered. The chicken will be fully cooked when it reaches 160 degrees F. Transfer to a serving platter and serve warm or cold.

1 egg
1 teaspoon lemon juice
2 ½ cups Italian-style bread crumbs
½ cup grated Pecorino Romano cheese
2 teaspoons adobo seasoning, or to taste
5 (8 ounce) skinless, boneless chicken breast halves
1 (15 ounce) can diced tomatoes
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a baking pan with cooking spray.
  • Beat egg and lemon juice together in a bowl.
  • Mix bread crumbs, Romano cheese, and adobo seasoning together on a plate. Dredge chicken breasts in the egg mixture, coat with bread crumb mixture, and place in the prepared pan.
  • Bake in the preheated oven until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Flip chicken breasts over and spoon tomatoes and mozzarella cheese on top. Continue baking until cheese is melted, about 5 minutes more.

1 (20 ounce) package chicken thighs
salt and ground black pepper to taste
2 (8.5 ounce) boxes dry corn muffin mix (such as Jiffy®)
1 pinch garlic salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
  • Season chicken thighs on all sides with salt, pepper, and garlic salt.
  • Pour corn muffin mix into a shallow bowl. Roll chicken thighs in corn muffin mix until well coated. Transfer coated thighs to prepared baking sheet.

½ cup water
⅓ cup apple cider vinegar
¼ cup butter, melted
1 onion, chopped
1 tablespoon paprika
1 tablespoon white sugar
1 tablespoon Worcestershire sauce

½ teaspoon ground black pepper
1 dash steak sauce (such as A.1.®)
3 pounds skinless chicken thighs

  • Preheat oven to 300 degrees F (150 degrees C).

1 c parmesan cheese-grated
1 tsp garlic powder
1/2 stick butter - melted
seasoning salt to taste (i used and love emeril's seasoning!)
4 small boneless, skinless chicken breasts

Steps:

  • 1. Preheat oven to 375. Put half stick of butter in a bowl and microwave until melted. In another bowl thouroughly mix parmesan cheese, garlic powder and seasoning salt.
  • 2. Completely coat chicken breast in melted butter, then roll in cheese/garlic mixture. Place on a very well greased cookie sheet.
  • 3. When all breasts are coated, sprinkle left over cheese mixture on top of chicken. Bake until chicken is completely cooked. 30 to 45 minutes depending on thickness of breast. To speed up bake time you can pound out your chicken breasts so that they are more thin.
  • 4. *THIS IS IMPORTANT** Do not line your cookie sheet with foil. The chicken is going to stick and you will be peeling off pieces of foil from your chicken if you do.
