YUM NUA - THAI BEEF SALAD
This is my mom's specialty. I hated it as a little kid, but now I adore it and make it often. It was hard to nail my mom's recipe down to measurements, but we figured that this was the closest we could get without saying "eyeball" it. The flavors are the classic Thai mix of salty, sour, sweet and spicy.

- Start making the dressing by crushing the minced garlic and bird chili peppers together against the cutting board with the flat side of your knife to make a paste.
- Put this paste in a small bowl and add lemongrass, fish sauce, lime juice, and sugar.
- Whisk together to combine and set aside.
- To cook the steak, heat oil in a skillet over medium high heat.
- Sear the steak on one side and continue to cook 5-6 minutes.
- Turn over steak and cook for another 5 minutes or until medium rare or medium.
- Remove from heat and let stand on cutting board for 5 minutes.
- After meat has rested, slice steak very thinly.
- In a large bowl, add beef (and any juices left on cutting board), mint, shallots, cilantro and cucumber.
- Pour the dressing on top and toss gently.
- Line a serving platter with romaine leaves and pile beef salad on top.
- Serve with rice if desired.

Looking through my recent gem of an older community cookbook found in one of my favorite antique stores, I found this delightful salad. It will go with almost any meal and could even be used as a dessert!

- In a medium saucepan, over medium heat, bring the crushed pineapple with its juice to a boil.
- Remove from the heat.
- Stir in the lemon jello followed by the cream cheese.
- Use a mixer, if needed, to get any lumps of the cream cheese out.
- Chill about 20 minutes.
- Fold in the whipped cream and spoon into a large pretty glass bowl.
- Chill at least 2 hours before serving.

FRIED OKRA SALAD -- YUM!
One of my coworkers made this salad for a luncheon and it was a huge hit. Personally, I never would have put fried okra in a salad, but one taste of this and I was hooked. It's best served fresh so that the okra is crispy.

- Preheat the oven to 450 degrees F (230 degrees C). Place catfish on a baking sheet.
- Roast in the preheated oven until flesh is opaque, 10 to 15 minutes. Flake into large pieces with a fork. Lay the flaked fish out on a plate to dry.
- Heat oil in a large pan over medium-high heat. Fry fish in batches until golden brown, about 5 minutes. Try not to break up the fish too much in the pan.
- Toss mango, shallots, cilantro, green onions, peanuts, fish sauce, lime juice, Thai chiles, and sugar together in a large bowl. Toss in crispy catfish at the very last minute. Check the seasoning; the salad should taste sour, hot, and salty, with a slight sweetness at the end.

- 1. Combine crushed pineapple and sugar in medium sauce pan and bring to boil.
- 2. Add 4 envelopes knox gelatin dissolved in 1 cup of water. Stir until well mixed and remove from heat. Pour into large heat resistant bowl.
- 3. Set in refrigerator. When starting to gel (this takes approx. 1 1/2 hours) add 2 packages of cheddar cheese. I prefer the finely grated cheese. Mix well.
- 4. Fold in heavy whipping cream, whipped.
- 5. Return to refrigerator to set.
- 6. Once set, decorate top. I add m. cherries and mandarin oranges.

- Peel and de-vein the prawns.
- Slice the onion and tomato.
- Dice the cucumber into small pieces and chop the spring onions.

- After cooking the steak, allow to cool and cut into thin slices.
- Pound or crush the garlic with the cilantro and stalks, pepper and palm sugar. Stir in the Golden Mountain sauce, lime juice, and fish sauce until smooth. Peel the shallots and slice very thinly. Using the tender, white portion of the lemon grass, slice very thinly. Peel the cucumber, score lengthwise with a fork, and slice thinly. Cut in half if the slices are large.
- Combine all ingredients, and toss lightly. If you prefer a spicy salad, seed and slice 2 or 3 red chilies and add to mixture.

This dish is an adaptation of one served there: a combo of raw, steamed and fried vegetables drizzled with a chile-jam dressing laced with fish sauce and lime.

- Whisk together the Nam Prik Pao, lime juice, fish sauce, sugar and chopped chile if you're using it; set aside. Use a vegetable peeler to slice the cucumber and carrots into long ribbons; set them aside.
- Put the vegetable oil in a skillet over medium-high heat. While it heats, lightly whisk together the ice water, flour and egg yolk in a medium bowl; the batter should be lumpy and quite thin. When the oil is ready for frying, start dipping the whole leaves (one at a time) into the batter to coat, and carefully add them to the oil, making sure not to crowd the pan; fingers or chopsticks are the best tools for the job. Fry the leaves in batches, turning once, until golden brown and crisp, just a few minutes. With a slotted spoon, transfer the leaves to paper towels to drain; repeat the process until you have fried all of the leaves.
- To assemble the salad, start layering the ingredients in a large shallow bowl or onto a platter. The beans are best on the bottom because they're the heaviest, and the tempura leaves should go mostly on top so they remain crisp; otherwise, the order is up to you. Drizzle each layer with some of the dressing as you go; serve immediately.

- Pour into 3 qt rectangular baking dish.
- Chill until almost set, about 1 hour.

- 1. Make the dressing first, combine all the ingredients in a small bowl. Use warm water to help the sugar dissolve, then put the dressing in the fridge to cool off.
- 2. Saute the shrimp over medium high heat in a little oil with salt and pepper.
- 3. Heat a medium-sized pot of water, it should NOT be boiling. Add the glass noodles and allow them to soften, it shouldn't take more than a few minutes. Taste them to make sure they are soft, but not mushy. Then dump their warm water and cool them off with some ice cubes and cold water. You want to stop them from cooking and cool them off for the salad.
- 4. Let noodles drain really well before you add the dressing.
- 5. In a large bowl, combine all the ingredients and pour the dressing over it. Toss it well so the dressing gets to all the noodles.
- 6. Sprinkle the crushed peanuts over the top and Its ready to eat.

- Mix the fish sauce, sugar, soup base and lime juice well in a bowl.
- Chop the garlic, chilies and coriander fine.
- Fry the eggs in a very hot pan with a good deal of oil until crispy, about 1 minute. It helps to ladle the oil over the top of the egg to cook both sides at the same time. Set aside and allow to cool a bit.
- Put the eggs in a plate and cut into quarters. Mix the garlic, chilies and coriander together into the sauce.
- When ready to eat, pour the sauce over the eggs. Don't let it sit long or the eggs will get soggy.
