Steps:
- Cut each yum yum into four pieces and set aside in large bowl
- Add milk, double cream and eggs to a different bowl and whisk until smooth.
- Soak the yum yum pieces in the mixture.
- Layer soaked yum yum pieces in a baking tin.
- Cover first layer in strawberry jam.
- Add second layer of yum yums.
- Bake for 45 mins at 190°C/375°F
- Serve and enjoy!

- Preheat oven to 350°F.
- Melt butter in baking dish in microwave or oven.
- Mix cracker crumbs with melted butter and place into 350°F oven. Bake for 5 minutes.
- Meanwhile, mix pudding with milk.
- Add softened ice cream to pudding and milk and mix well with mixer.
- Remove crumbs and reserve 1 cup.
- Spread crumbs in bottom of dessert bowl.
- Add pudding to bowl and top with reserved crumbs.
- Refrigerate until set.

- 1. Preheat your oven to 350 degrees.
- 2. Coat a large casserole dish with non-stick baking spray, I use Baker's Joy.
- 3. Cut bread into 1" pieces, placing them in a large mixing bowl.
- 4. Mix whipping cream and milk together. Stir in 1/2 cup of unsalted butter and cook over a medium heat until butter is melted.
- 5. Stir this milk mixture into the bowl of bread cubes. Let mixture stand for 20 minutes so liquid can absorb into bread pieces.
- 6. Beat eggs slightly to blend. Add vanilla and ground cinnamon.
- 7. Pour into mixture. Mix well.
- 8. Pour into prepared baking dish.
- 9. Bake for 1 to 1 1/2 hours until bread pudding is set and golden brown.
- 10. SAUCE: Put heavy cream, butter, and sugar in a saucepan. Cook on low heat until sugar is dissolved. Do not boil. Add rum extract and stir well.
- 11. Pour rum sauce over hot bread pudding just before serving.
- 12. Keep refrigerated in separate containers and heat before serving leftover bread pudding.

- Soak sago well in water for a few hours. Pour sago into a pan of boiling water and simmer until transparent.
- Wash under running tap. Drain and set aside.
- Put 1 litre water and sugar in a saucepan. Slowly bring to boil and add butter, milk and sago, stirring until well blended.
- Mix coconut milk with cornflour and custard powder. Gradually stir into boiling sugar mixture. Continue stirring until thickened. Remove from heat.
- Add well-beaten eggs and stir until smooth. Pour into heatproof container and place on middle shelf of preheated oven 230°C.
- Bake for 25 minutes or until golden brown.

TUMMY-YUM BREAD PUDDING

- Preheat 350 degrees F.
- Tear each slice of bread into about 5 or 6 pieces and place in a large bowl. In a separate bowl, place the milk, sugar, butter, vanilla, cinnamon, nutmeg, and eggs. Mix well, until the sugar dissolves. Add the fruit cocktail, pineapple, pecans, and raisins, and then gently fold in the torn bread, making sure it soaks up the liquid ingredients. Pour equal amounts of the mixture into 2 greased 9 by 13-inch baking pans. Bake for 40 minutes, stirring once after 15 or 20 minutes. Stirring helps rich bread pudding bake evenly. Serve cold or hot, depending on the season and your mood.

- 1. In a heavy bottomed, medium saucepan or dutch oven ( I used my cast iron dutch oven. ) over medium high heat, bring rice, water and salt to a simmer. Cover and lower heat - continue cooking & stirring until all water is absorbed. 10 - 12 minutes.
- 2. Add the cream, sugar, vanilla and milk. Stir until well combined. Whisk in the cinnamon. Simmer for 35 - 40, minutes or until just about desired thickness, making sure to stir often so as not to burn or stick.
- 3. When the pudding is just about finished, add some of the milk mixture to the egg yolk, stirring briskly to temper, quickly stir this mixture back into the rice and cook a few more minutes.
- 4. I removed mine while there was still a bit of liquid as it will be absorbed more as the pudding cools. Pour into a large bowl and cover with plastic wrap to avoid a skin forming on top of your pudding.
- 5. Chill until ready to serve. I served with a dollop of whipped cream and a sprinkle of cinnamon. I also thinned down some canned cherries with lemon juice & water and added a dollop for those who preferred.
