This is the best banana bread I have ever had!! It is so moist, I believe it is due to the over ripe bananas and the sour cream. You must try it!!!

1/2 cup butter, at room temperature
1 cup sugar
2 eggs
1 1/2 cups all-purpose flour (unbleached)
2 tablespoons honey
1 teaspoon salt
1 teaspoon baking soda
1/2 cup sour cream
1 cup very ripe banana (the riper the better, I wait until the entire peel is very dark brown)
1 teaspoon vanilla extract
1/2 cup chopped walnuts (optional) or 1/2 cup chopped pecans (optional)

Steps:

  • Preheat oven to 350°F.
  • With an electric mixer, cream the butter and sugar until light and fluffy, next add the eggs; beat thoroughly.
  • Add the honey and mix well.
  • Sift in the dry ingredients.
  • Blend well.
  • Add sour cream, bananas and vanilla; again blend well.
  • At this time if you are adding nuts add them and mix them thoroughly.
  • You can bake this as muffins, mini breads or a bread, it's up to you.
  • Adjust the baking time to the choice you make.
  • For a bread bake one hour or until a toothpick comes out of the center and its clean.

1 pkg cream cheese (8-ounce), softened
1 c sugar
1/4 c butter, softened
1 c bananas, ripe and mashed
2 eggs
2 1/4 c all-purpose flour
1 1/2 tsp baking powder
1/2 tsp baking soda
1 c nuts, chopped (walnuts, pecan, etc.)

Steps:

  • 1. Combine softened cream cheese, sugar, and butter, mixing until well blended.
  • 2. Blend in banana and eggs.
  • 3. Add combined remaining ingredients mixing until moistened.
  • 4. Pour into a greased and floured 9x5-inch loaf pan.
  • 5. Bake at 350 degrees, for 1 hour and 10 minutes, or until a wooden toothpick inserted near the center of the bread comes out clean.
  • 6. Cool 5 minutes; remove from pan. Glaze if desired when the bread is cooled. NOTE: I just make a glaze with powdered sugar, a little milk, and either vanilla or lemon extract. It's GREAT without glaze too. I personally like it best spreading... you guessed it, cream cheese on each slice. Yum!!

It's moist, tender, a little tangy and perfectly sweet-all around our favorite one. The best part is that it's even better the next day (if it lasts that long). Try toasting the bread and slathering with a little salted butter. We're pretty sure you'll never need another banana bread recipe.

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.
