STOVE TOP POT ROAST WITH GRAVY, POTATOES AND CARROTS
Using an inexpensive cut of meat you can make the most moist roast you've ever tasted. Even cold left overs remain moist and tender. Using this method also produces wonderful gravy to serve over the meat and potatoes

Steps:
- Pour all seasoning in a small bowl and mix well. Season meat on both sides.
- Using a dutch oven heat oil then add meat and sear on all 4 sides approx 3-5 minutes on each side.
- Add beef broth, sliced garlic, onion and celery and bring to a boil. Reduce heat to between medium and medium low (on my stove it's around right between 4-5) keeping the liquid at a low boil. Cook for 2 hours. Add potatoes, carrots and Minute tapioca and cook an additional 1 1/2 hours stirring occasionally.
- Discard the onion and celery. Slice the meat and place on platter with potatoes and carrots and place gravy in gravy boat or bowl and serve.

STRATA IN PUFF PASTRY
A delicious breakfast treat I had at Parliament Cottage Bed and Breakfast in Niagara-on-the-Lake in Canada. Recipe is compliments of my hostess, Isabelle Parliamnent. The version I had was made with turkey.

Steps:
- Preheat oven to 400 degrees.
- Grease a 9-inch springform pan.
- Sauté shallots and garlic in butter for 4 minutes.
- Squeeze extra water from thawed spinach'til it is very dry.
- Mix together spinach, shallots and garlic.
- Roll out 2/3 of the puff pastry dough and line the prepared springform pan with it, letting pastry hang over the edge of the pan.
- Layer ham (or turkey or salmon), cheese, spinach mixture and peppers.
- Beat eggs, reserving 2 tbs, and pour the remainder over the peppers.
- Roll out the remaining puff pastry dough and place on top of the strata.
- Crimp the edges and seal.
- Cut slits in the top and brush with the reserved egg.
- Bake 45 minutes.

ZESTY POT ROAST
My husband loves this, the Italian dressing gives it a great flavor, it's easy to make, and with the potatoes, carrots, and green beans, you have a great side dish as well.

Steps:
- Pour dressing over roast in a shallow dish.
- Cover and refrigerate for 8 hours, turning occasionally.
- Remove roast from the marinade, reserving marinade.
- Place roast in Dutch oven, add beef broth and water.
- Cover and simmer for 2 hours.
- Add the carrots, potatoes and cook for 5 minutes.
- Add the green beans and reserved marinade and cook for a further 20-25 minutes.
- Remove roast and vegetables and put onto a serving platter, keep warm.
- Measure the liquid in the Dutch oven, then return this to the Dutch oven.
- Combine 1 tablespoon flour for every 1 cup of liquid, and 2 tablespoons water, stirring well.
- Using a wire whisk, stir the flour mixture into liquid in the Dutch oven.
- Cook over medium heat, stirring constantly, until thick and bubbly.
- Serve gravy with roast and vegetables.
