Coronation chicken - cooked chicken in a creamy, spicy sauce with sultanas and apricots. It makes a fantastic sandwich filler, jacket potato topper or serve with a lovely crisp salad.

7 tbsp (105ml) mayonnaise
3 tbsp Greek yogurt (or crème fraiche for a creamier taste)
1 ½ tsp madras curry powder
1/8 tsp ground cinnamon
1/8 tsp salt
1/8 tsp white pepper
3 tbsp mango chutney
2 tbsp sultanas
3 dried apricots (finely chopped)
500 g (1.1lb) cooked chicken breast, roughly chopped
1 tbsp toasted almond flakes

Steps:

  • In a bowl, mix together the mayonnaise, Greek yogurt, curry powder, cinnamon, salt, pepper, mango chutney, sultanas and apricots until combined.
  • Add in the chopped chicken and stir to coat the chicken.
  • Place in a serving bowl and top with flakes almonds, then serve as part of a salad or in a sandwich.

This is one of my most requested recipe's. I always serve it at buffets (I wouldn't dare not) and it is always the first to go. This is an extremely simple version and anyone can make it.

Number Of Ingredients 10

4 cooked chicken breasts (Chopped)
2 tablespoons olive oil
1 small onion, finely chopped
1 tablespoon curry powder
1/4 pint chicken stock
1 teaspoon tomato puree
1/2 lemon, juice of
2 tablespoons mango chutney (or Apricot Jam/Jelly)
1/2 pint mayonnaise
3 tablespoons double cream (Thick)

Steps:

  • Heat oil in saucepan, add the chopped onion, cover and saute gently for 5 minutes until the onion is soft but not brown.
  • Stir in the curry powder and cook for another two minutes, this will help bring out the flavour.
  • Add the stock, tomato puree, lemon juice and chutney.
  • Stir until bubbling, then cook for 5 minutes and the mixture reduces and thickens.
  • Allow to cool for half an hour or so, then stir in the mayonnaise and cream.
  • Add chicken (which should be chopped into reasonable sized chunks) and mix throughly.
  • Serve over cold rice.
  • Excellent buffet dish.
  • Enjoy.

This recipe really should be available at your local Neighborhood Market. Great served on mixed salad greens or as a chicken salad sandwich. Coronation chicken was created for Queen Elizabeth II's Coronation lunch in 1953 and it still is hugely popular in the UK.

6 teaspoons indian mild curry paste
1 teaspoon tomato paste
2/3 cup low-fat plain yogurt
1/4 cup mayonnaise
1 lb diced cooked chicken
1/4 cup sultana raisin
1/4 cup toasted sliced almonds (garnish)

Steps:

  • Mix together the curry paste, tomato paste, yogurt and mayonnaise. Add the diced chicken and sultanas. Chill overnight.
  • Serve on a bed of mixed salad greens topped with the toasted almond flakes. This also makes great Chicken Salad Sandwiches.
