ANGEL HAIR PASTA WITH SPINACH AND PINE NUTS image

Yield 4 servings

Number Of Ingredients 9

1 cup pine nuts
½ cup olive oil
4 large garlic cloves, minced
¾ teaspoon dried red pepper flakes
3 pounds fresh spinach, chopped
¾ pound angel hair pasta
4 tablespoons butter
½ cup parmesan
Salt and pepper to taste

Steps:

  • Saute pine nuts until golden. Remove from pan. Heat oil; saute garlic and red pepper flakes for 1 minute. Remove from heat. Cook pasta in salted water. Reheat garlic and oil. Add spinach and toss over high heat until wilted, approximately 2 to 3 minutes. Stir in butter. Toss pasta, spinach, cheese and nuts. Season to taste.
