1 cup sugar
1 1/2 cups water or 1 1/2 cups fruit juice
2 tablespoons lemon juice
2 tablespoons vinegar
1 teaspoon ground ginger
4 cantaloupes
1/4 watermelon
salt
pepper
2 tablespoons muscatel or 2 tablespoons port wine
mint, for serving

Steps:

  • In a small saucepan, place the sugar, water, lemon juice, vinegar, and ginger. Heat to a boiling, stirring well.
  • Continue boiling for about 5 minutes, then strain syrup through a fine sieve or cheesecloth into a bowl.
  • Cool.
  • Meanwhile, de-seed the cantaloupes and watermelon. Using a melon baller, collect balls and place in a large bowl.
  • Sprinkle with salt and pepper, then sprinkle on the muscatel.
  • Toss gently.
  • Pour syrup over melon balls and refrigerate for several hours before serving.
  • To serve, decorate with mint sprig.

I saw this recipe in Food Network Magazine. They call for pepitas, which are pumpkin seeds. I started thinking, hmmmm..., can we eat the melons' s seeds? I looked it up on the Internet and they are supposed to be dried, then roasted. A long process. I just wanted to make a simple salad, for crying out loud! I toasted them over low heat in a little cast iron skillet5. Voila! They came lovely golden and nutty. To get all the vitamins and minerals in the seeds, they must be chewed, not eaten whole.

2 tablespoons fresh lime juice
1 teaspoon jalapeno chile, minced
1/4 teaspoon kosher salt
1/4 teaspoon dried ancho chile powder or 1/4 teaspoon chili powder
chopped cilantro, for garnish
toasted melon seeds, for garnish (see recipe description)
cojito cheese, crumbled for garnish

Steps:

  • In a large bowl, toss together melon cubes, lime juice, jalapeƱo, salt and chile powder.

1/3 cup unbleached white sugar
3 tablespoons champagne vinegar or 3 tablespoons white wine vinegar
1/2 teaspoon kosher salt or 1/2 teaspoon salt
1/2 teaspoon ground ginger (or freshly grated if you prefer)
3 tablespoons vegetable oil
3 tablespoons extra-virgin olive oil
1 1/2 teaspoons sesame seeds, toasted (sub half of the portion with black sesame seeds for color)
1/2 teaspoon toasted sesame oil
1 dash cayenne pepper
2 cups cut up seedless watermelon (read *Note)
2 cups cut up cantaloupe
2 cups cut up honeydews
1 cup sliced English cucumber (if available try 1/2 cup each of English cucumber and lemon cucumber)
lettuce leaf
snipped fresh cilantro (optional)
crisp cooked bacon, drained and crumbled (optional)

Steps:

  • *Note: if you can find yellow watermelon, substitute half yellow for red watermelon.
  • In small saucepan combine sugar, vinegar, salt, and ginger. Stir over medium heat until sugar dissolves. Remove from heat.
  • Place dressing in a medium bowl. Slowly add both oils to sugar mixture in a thin steady stream, whisking constantly until thickened.
  • Stir in sesame seeds, sesame oil, and cayenne pepper; set aside.
  • In large bowl combine melon and cucumber. Add 1/2 cup of the dressing; toss to coat.
  • Line salad bowls or a platter with lettuce; top with melon mixture. If desired, sprinkle with cilantro and bacon.
  • Pass remaining dressing.

1/4 cantaloupe, peeled, seeded and diced into 3/4-inch pieces
1/4 honeydew, peeled, seeded and diced into 3/4-inch pieces
1/4 cup fresh basil leaves, roughly chopped
1/4 cup fresh mint leaves, roughly chopped
Flake salt, such as Maldon

Steps:

  • Combine the vinegar and sugar in a small saucepan over medium heat. Bring to a simmer, stirring often to dissolve the sugar. Remove from the heat and allow to cool.
  • Put the cantaloupe and honeydew in a bowl and toss with the basil and mint. Drizzle with the sweetened vinegar and toss lightly. Pile the melon on a platter and sprinkle with the flake salt.

2 seedless cucumber (peeled & sliced in 1/4-inch rounds and then halved)
2 cups honeydew melon (cut in bite size cubes)
2 tablespoons red onions, minced fine
2 tablespoons of fresh mint, fine chopped
2 tablespoons key lime juice (regular lime juice can be substituted)
1/2 teaspoon honey
salt
pepper

Steps:

2 cups cantaloupe, diced
3 tablespoons sugar, divided
2 teaspoons lime zest, freshly grated
2 tablespoons fresh lime juice
2 tablespoons mint leaves, fresh, slivered
4 pieces mint leaves, for garnish

Steps:

  • In a medium bowl, combine honeydew, cantaloupe, 2 tablespoons of sugar, lime zest and juice, and slivered mint. Refrigerate 15 minutes, tossing occasionally, until sugar dissolves and mixture is well chilled.
  • When ready to serve, spread remaining tablespoon of sugar onto a flat plate. Pour a little water into a shallow bowl and dip rim of each of 4 wine or martini glasses into water; press wet rims into sugar to coat edge of each glass.
