Bacon Cheeseburger Meatloaf? image

i hope you love this meatloaf recipe,it dressed in bacon cheeseburger,i use banana peppers to substituted the pickles,also great on sandwiches.

12 bacon strips,divided
1 medium vidalia sweet onion,peeled and sliced
1 lb lean ground beef
2 egg whites
3/4 c bread crumbs
4 Tbsp honey mustard
3 tsp steak seasoning
2 banana peppers,chopped
1 c cream cheese,softened
1 c shredded colby jack cheese
6 american cheese slices
SPICY SWEET KETCHUP
1 c ketchup
1 Tbsp sriracha
3 tsp red pepper flakes
3/4 c dark brown sugar

Steps:

  • 1. Preheat oven to 350 degrees F.Chop 6 bacon strips;set remaining 6 bacon strips aside.
  • 2. Cook chopped bacon in a large skillet over medium heat,Add sliced vidalia onion,stirring often,until bacon are browned and crispy,8 to 10 minutes;set aside.
  • 3. Mix ground beef,egg whites,bread crumbs,honey mustard,steak seasoning and chopped banana peppers in a large bowl until thoroughly combined.
  • 4. Spread meat mixture out on a piece of waxed paper,forming a rectangle about 10 inches square.Spread cream cheese,sprinkle with bacon/onion mixture and shredded monterey jack cheese over the meat,leaving a 1/2-edge all around.
  • 5. Carefully lift an edge and roll the meat around the filling.Place into a loaf pan with the seam side down.
  • 6. Bake in the preheated oven,about 30 minutes.
  • 7. To make Spicy Sweet Ketchup:in a small bowl:combine ketchup,sriracha,red pepper flakes and brown sugar,stirring until brown sugar is dissolved.
  • 8. Remove the meat loaf from the oven.Spread with spicy sweet ketchup all over the loaf.Place cheese slices on the top of the loaf,and top with remaining bacon strips on the cheese slices.
  • 9. Return the meat loaf to the oven and bake until the bacon is crispy and the cheese are melted,about 20 minutes.
