Steps:
- Heat oil in a large skillet over medium heat. Add the onions and cook 4 minutes, or until soft. Add garlic and chicken and cook until chicken is browned.
- Stir in the broth, poultry seasoning, black pepper, red pepper flakes, and salt. Bring mixture to a boil over high heat.
- Stir in rice and reduce heat to low. Cover and cook until rice is almost tender, about 10 minutes.
- Stir in peas and thyme. Cover and cook until heated through, about 10 minutes more.

We are always looking for a twist on tradition. I found yellow eyed peas and decided to give try for our New Year's Day meal. Our family loved them.

Steps:
- 1. look and wash peas
- 2. add peas to 6 cups of water and bring to a boil
- 3. cover and remove from heat, allow to soak 1 hour
- 4. drain and rinse beans
- 5. cover with water( about 5 cups) add everything except salt.
- 6. bring to a boil
- 7. cover and simmer for about 4 hours
- 8. add salt, uncover and simmer for about 30 minutes
