I have been scouring the net to try and find a cornmeal crust that imitates the one from Capital Creations Pizza in Raleigh, NC. This one doesn't follow the ingredients in their pizza, but definitely sounds interesting anyway. Recipe from www.melborponsti.com

oil, to coat baking sheet or pizza pan
2 cups polenta (coarse cornmeal)
1 cup cold water
1 cup boiling water
2 eggs
1 cup mozzarella cheese, grated

Steps:

  • Preheat oven to 450 degrees F.
  • Lightly oil a large baking sheet.
  • In a large bowl, mix polenta with the cold water.
  • Add the boiling water in a slow stream, blending with a whisk.
  • Add the eggs and mozzarella and mix well.
  • Press mixture evenly onto greased baking sheet or pizza pan.
  • Bake a few minutes to set slightly (about 5 minutes), top and bake 5-10 minutes more until lightly browned and crisp.

2 cups amaranth flour
2 teaspoons xanthan gum
2 teaspoons baking powder
1 teaspoon white sugar
¼ teaspoon salt
1 pinch dried oregano
1 pinch dried basil
1 pinch rubbed sage
1 pinch dried thyme leaves
1 ½ cups sparkling water
2 tablespoons olive oil

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a pizza pan.
  • Mix amaranth flour, xanthan gum, baking powder, sugar, salt, oregano, basil, sage, and thyme together in a large bowl. Pour in sparkling water and olive oil; mix until a sticky dough forms.
  • Spread dough over the prepared pan, using moistened hands to keep from sticking.
  • Bake in the preheated oven until lightly golden, about 20 minutes.

I've been searching for a good pizza crust that is both gluten free and yeast free and it hasn't been easy. This one is the best I've had so far. I found this on www.celiac.com and not only is it pretty good, but it's easy too. Makes one 12-inch pizza crust.

1/2 cup cornstarch
1/2 cup rice flour
2/3 cup 2% low-fat milk
2 eggs
1 teaspoon salt
1 tablespoon Italian spices
1 dash garlic powder (or salt)

Steps:

  • Mix gently, do not over-beat (batter will be runny).
  • Pour batter into greased pizza pan.
  • Bake at 425F for 10 minutes.
  • Remove from oven, add sauce and your favorite toppings and bake an additional 10 minutes or until cheese is melted and slightly brown.
