2 large vidalia onions, very thinly sliced
12 ounces pizza crusts
10 medium sun-dried tomatoes, without oil
3 ounces hard cheese, Gorgonzola
10 pieces spinach, washed and dried
1/8 teaspoon black pepper

Steps:

  • Coat a large nonstick pan with cooking spray. Warm pan over medium heat. Add onions and reduce heat to medium low. Cook for 15 to 20 minutes, stirring frequently, until onion browns and become very fragrant.
  • Meanwhile, prepare pizza crust for baking according to package directions. Mince tomatoes and crumble cheese. Tear spinach into pieces. Preheat oven to 425.
  • Spread caramelized onions on pizza crust and bake for 12 minutes. Remove from oven and add tomatoes, spinach, and cheese. Bake until cheese is melted, about 3 more minutes. Season with pepper and serve.

The combination of the sweet caramelized onions and pungent goat cheese take a humble pizza crust and elevate it into a pie that is similar to what you might expect to find at a gourmet pizzeria. Plan to pair this recipe with an arugula or spinach salad. Since the onions do take a little time cook, you could easily make them a day or two ahead and store them in the refrigerator until you are ready to assemble the pizza. They are so delicious you could also mix things up and plan to make just the onions to serve over chicken, fish or roasted vegetables.

3 large Uncooked onion(s) thinly sliced
3 medium clove(s) Garlic clove(s) minced
1 tsp Rosemary fresh, minced
1.5 Tbsp Balsamic vinegar
2 cup(s), chopped Cooked skinless boneless chicken breast(s) diced
10 medium Olive(s) Kalamata variety, pitted and thinly sliced
0.5 tsp Table salt
0.25 tsp Black pepper
1 each Thin 12" ready-to-bake pizza crust
2.666 oz Reduced-fat goat cheese crumbled (2/3 cup)
2 Tbsp Fresh parsley chopped fresh flat-leaf

Steps:

  • 1 Preheat oven to 450°F. Spray large baking sheet with nonstick spray.
  • 2 Heat oil in large skillet over medium-high heat. Add onions; cook, covered, stirring occasionally, until onions are deep golden, about 30 minutes. Stir in garlic and rosemary; cook, stirring frequently, until fragrant, about 30 seconds. Stir in vinegar. Remove pan from heat and stir in chicken, olives, salt, and pepper.
  • 3 Top crust evenly with chicken mixture; sprinkle evenly with goat cheese. Bake until cheese softens and crust is crisp, 8-10 minutes. Sprinkle with parsley and cut into 6 wedges.
