SKINNY MEATLOAF

Are you looking for a super yummy, quick dinner to make? If you haven't tried my skinny meatloaf yet, I think you're going to love it! It's low in calories, very moist, and has a divinely rich sweet ketchup glaze. It's a whole lot skinnier than most meatloaf recipes because I'm using extra lean ground beef, homemade whole wheat bread crumbs, and egg whites. By the way, making your own crumbs is really simple to do. Each serving, has 214 calories, 5 grams of fat. Any leftovers make great sandwiches!

1 pound 96% extra lean ground beef, see shopping tips
1½ slices whole wheat bread (remove crusts (I used Milton's Multigrain bread))
1 cup onions (chopped)
2 egg whites
3 tablespoons ketchup
1 tablespoon spicy brown or yellow mustard
1 tablespoon Worcestershire sauce
¼ teaspoon salt
Fresh ground pepper (to taste)
¼ cup ketchup
1 tablespoon spicy mustard or yellow mustard
2 teaspoon brown sugar (packed)

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with foil and set aside.
  • In a large bowl, add the ground beef.
  • To make bread crumbs: remove the crust, break up the bread, and add to a blender or food processor. Process until the bread turns into crumbs.
  • To the beef, add the bread crumbs, onions, egg whites, ketchup, mustard, Worcestershire sauce, salt, and pepper, to taste. Using your hands, mix together all the ingredients.
  • Place the meat mixture on the baking sheet and free form a loaf by hand. It should be about 12"x4."
  • In a small bowl, mix together the topping ingredients. Spread all over the top of the meatloaf.
  • Bake for 55 minutes. Remove from the oven and let rest for at least 10 minutes before slicing. Cut into 10 slices.
  • Makes 5 servings. Each serving, 2 slices.

This is a very flavorful meatloaf that qualifies as a core recipe for Weight Watchers. I love onions, so there are lots, but obviously you can adjust the onions and the spices to taste. I rarely measure spices unless following a recipe, so all measurements for spices are approximate. Also, I almost always use ground turkey, but this could be made with ground beef. There are a lot of steps here, but none of them are very hard and can be done quite quickly. Don't be afraid of using oats. Once cooked, you cannot tell the oats are there.

2 lbs lean ground turkey
2/3 cup rolled oats
2 eggs, whisked
1 medium onion, diced
3 garlic cloves, minced
1/2 tablespoon olive oil
2 tablespoons fennel seeds, toasted
1 tablespoon Worcestershire sauce
1 tablespoon italian seasoning
1/2 tablespoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
15 ounces canned tomato sauce, divided

Steps:

  • Preheat oven to 350 degrees.
  • Place fennel seeds in a small, non stick pan over medium high heat on your stove top to roast. Occasionally stir or shake seeds as they roast. Roast until seeds start to appear a bit golden in color instead of greenish, about 2 minutes. Be careful, they will go from toasted to burnt very quickly.
  • Place the diced onion and olive oil in a non stick pan, sprinkle with salt and saute. To avoid burning, add the minced garlic to the onions after a few minutes. Saute onions and garlic until tender.
  • In a large bowl, combine turkey, oats, whisked eggs, sauteed onion and garlic, fennel seed, Worcestershire sauce, Italian seasoning, garlic powder, salt, black pepper, and about 3 tablespoons of the canned tomato sauce, reserving the remaining sauce. Combine well using your hands or a large spoon.
  • Spray the bottom of a 9x13 baking dish with cooking spray. Turn meat mixture out into the baking dish and form into a rectangular loaf that ends about an inch and a half from the sides of the pan. I like to flatten the top of the loaf and then form an indentation around the top to make a lip. This helps to keep the tomato sauce on top of the loaf.
  • Pour the remaining tomato sauce on top of the loaf spooning some onto the sides of the loaf.
  • Bake at 350 degrees for approximately 55 minutes.

I'm planning to make this tonight and wanted to put it somewhere that I could find it easily, but it sounds good. It is core as long as you use core friendly sauce. Otherwise 2pts per mini meatloaf.

1 egg (beaten)
1/2 cup breadcrumbs
1/2 cup marinara sauce (or spaghetti sauce)
1 garlic clove
1 tablespoon italian seasoning

Steps:

  • Mix all ingredients together.
  • Drop into muffin pan - I filled them to the top and it made 9 mini-meatloaves.
  • Bake at 375* for 35 minutes.
  • Weight Watchers POINTS: 2 Pts for 1 Mini-Loaf.
