1 (18 1/4 ounce) box reduced-sugar yellow cake mix
1/2 cup Egg Beaters egg substitute (4 egg whites)
1/2 cup brown sugar substitute (or white sugar substitute)
1/2 cup canned pumpkin
1 cup mini chocolate chip
1 teaspoon vanilla

Steps:

  • Mix all ingredients together.
  • Bake in a greased (pan spray) 9X13 pan, 350 degrees for 30-35 minute.

1 cup baking butter, softened
1 cup sugar
1 tablespoon vanilla
1/2 teaspoon salt
2 cups flour
1 (12 ounce) package semi-sweet chocolate chips (1.5 cups for dough, 1/2 cup for topping)

Steps:

  • Preheat oven to 375°.
  • Beat butter, sugar, vanilla & salt.
  • Gradually add flour and continue mixing.
  • Stir in 1 1/2 cups chocolate morsels.
  • Press into ungreased 9 x 13 pan.
  • Bake at 375° for 20-22 minutes until golden on edges.
  • Cool in pan until slightly warm.
  • For topping:.
  • Microwave 1/2 cup of chips in a ziploc bag for 1 minute on HIGH. Watch carefully.
  • Knead the bag around until the morsels are melted and smooth.
  • Cut a tip in the corner of the bag and drizzle chocolate onto the bars.

1 cup butter, softened
1 cup white sugar
1 cup brown sugar, packed
2 eggs
1 teaspoon maple extract or 1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1/2 teaspoon cinnamon (optional)
1 teaspoon baking soda
3/4 teaspoon salt
1 cup semi-sweet chocolate chips
1/2 cup chopped walnuts or 1/2 cup pecans

Steps:

  • Set oven to 350 degrees F.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch pan (for thinner bars bake in a larger pan and reduce the baking time slightly).
  • In a large mixing bowl cream butter with both sugars until fluffy.
  • Add in eggs and vanilla; beat until well combined.
  • In another bowl mix together flour with cinnamon, baking soda and salt; gradually add to the creamed mixture until combined.
  • Mix in chocolate chips and nuts (batter will be very thick).
  • Transfer the mixture to prepared baking pan then spread out using a spoon.
  • Bake for about 25-30 minutes or until golden brown.

I love chocolate chip cookie bars, I lightened them up to include more whole grains, less fat and sugar. These are not as dense as traditional chocolate chip cookie bars, but they are super quick and easy to make which makes them great for potlucks! If you don't plan to use the pear baby food, use butter in its place (applesauce would make the bars much too 'cake-like.' Sometimes I like to add a few mini-chocolate chips into the dough before spreading into the pan. WW points = 2/serving

6 tablespoons butter
2 tablespoons pear baby food
4 egg whites
1 cup brown sugar
1/2 cup Splenda sugar substitute
1 teaspoon vanilla
1/2 cup whole wheat flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup flour
1/2 cup mini chocolate chip (optional)
1/2 cup chocolate chips

Steps:

  • Preheat oven to 350 and grease 13x9 pan.
  • Mix 1/2 cup flour with baking powder & salt. Set aside.
  • Melt butter and pour into mixing blow, with electric mixer on stir (or lowest setting) blend in remaining ingredients -in order they are listed above- including the flour/baking powder mixture (EXCEPT the chocolate chips) until just mixed. Do not beat, just stir slowly until combined, scraping down sided as needed.
  • If you are using the mini chocolate chips, stir them into the dough by hand.
  • Spread into greased 13x9 pan. Sprinkle with chocolate chips and press them gently into the dough.
  • Bake at 350 for 20 minutes, until edges turn brown.
