My grandma's candied yams are the best candied yams I have ever had! The pineapple is an awesome addition to this sweet dish.

¼ cup unsalted butter
½ cup pineapple juice
½ cup white sugar
½ cup brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 (29 ounce) cans cut yams, drained
1 (8 ounce) can pineapple chunks, drained
1 ½ cups miniature marshmallows

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a saucepan over medium-low heat. Add pineapple juice, white sugar, brown sugar, cinnamon, and nutmeg; stir to combine and cook until sugars have dissolved, 2 to 3 minutes.
  • Meanwhile, place drained yams in a casserole dish. Add pineapple chunks. Pour sauce over top.
  • Bake in the preheated oven for 1 hour. Add marshmallows to the top and continue to bake until golden and melted, 10 to 15 minutes more. Let stand for 15 minutes before serving so sauce can thicken.

1 cup all-purpose flour
1/4 cup unsweetened cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup sugar
1/4 cup vegetable shortening
1 egg white
1/2 cup 1% low-fat milk
3/4 cup marshmallow cream

Steps:

  • Preheat oven to 425°F.
  • Combine the flour, cocoa, baking soda and salt in a small bowl.
  • With an electric mixer on medium speed, beat the sugar, shortening and egg white in a medium bowl until fluffy and well blended (about 2 minutes).
  • Stir in the flower mixture, then the milk until just blended.
  • Drop the dough by spoonfuls onto large, ungreased baking sheets, making 36 cookies.
  • Bake until top springs back when lightly touched (5-7 minutes).
  • Cool completely on the sheets on a rack.
  • Spoon 2 tsp marshmallow spread on the bottoms of half of the cookies.
  • Top with remaining cookies.
  • Can be stored in an airtight container for up to 3 days.

12 graham crackers, made into crumbs (2 1/2 inch squares)
2 cups light cream cheese
1 cup fat free sour cream
1/2 cup sugar
2 teaspoons vanilla extract
2 large eggs
2 teaspoons grated lemon zest

Steps:

  • Prheat the over to 325 degrees; wrap the outside of a 10-inch springform pan with heavy duty foil; then spray the inside entirely with nonstick spray. Press the graham cracker crumbs over the bottom and partially up the sides of the pan.
  • In a large bowl, with an electric mixer on medium speed, beat the cream cheese, sour cream, sugar and vanilla until smooth.
  • Add the eggs, 1 at a time, beating on low speed until blended; stir in the lemon zest.
  • Pour the batter into the springform pan and set into a large roasting pan.
  • Pour boiling water into the roasting pan to come halfway up the sides of the springform pan.
  • Bake until almost completely set, 30-32 minutes.
  • Turn off the oven and prop open the door with a wooden spoon; leave the cake in the oven for 30 minutes.
  • Transfer to a rack and run a knife around the edge of the pan to release the cake.
  • Cool completely, then refrigerate, covered, until ready to serve.

4 lbs sweet yams, orange variety preferred
3/4 cup unsweetened pineapple juice
1/4-1/2 cup butter
2 -4 cups sugar, depending on your taste (start with 2 cups)

Steps:

  • Peel and cut yams. cut to diagonal slices about 1/4 inch slices.
  • Boil pineapple juice and sugar till syrupy.
  • Add yams and simmer for 10 minutes.
  • Remove yams and transfer to 13x9 pan.
  • Arrange slices to nice galette design, overlapping each pieces.
  • Meanwhile, add butter to the pineapple syrup, let simmer till fully incorporated.
  • Pour on the yam slices.
  • Bake in pre heated 350 oven till tender about 30 minutes.
  • This will be thickened and gooey.
  • Serve warm.
  • Delicious!

Grandma was always in charge of Thanksgiving dinner in my family. This is my variation on her candied yams (sweet potatoes), and they are the best!

4 large sweet potatoes, peeled and cut into 1/4-inch-thick rounds
8 tablespoons (1 stick) salted butter
2 cups granulated sugar
One 20-ounce can crushed pineapple
1 teaspoon ground cinnamon
1 teaspoon ground cloves
Pinch kosher salt
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 375 degrees F. Place the sweet potatoes in a 2-quart baking dish. Set aside.
  • In a medium pot, melt the butter over medium-low heat. Add the sugar and stir until smooth. Drain the pineapple in a strainer, reserving the juice. Stir in about half the pineapple and half the pineapple juice; reserve the rest of the pineapple and juice for another use. Stir in the cinnamon, cloves and salt. Bring the mixture to a boil, remove from the heat and add the vanilla extract. Pour the mixture directly over the sweet potatoes.
  • Cover the dish with aluminum foil and bake until the sweet potatoes are just tender, about 45 minutes. Remove the foil and continue to bake until the sweet potatoes are caramelized, 20 to 25 minutes more.
  • Plate and serve immediately. Pour extra sauce from the bottom of the baking dish on top.
