1/3 cup liquid egg substitute (like Original Egg Beaters)
1/2 cup fat-free evaporated milk
1/2 cup fat-free half-and-half
3 tablespoons brown sugar, not packed
1 teaspoon brown sugar, not packed
1 1/2 teaspoons sugar-free french vanilla powdered coffee creamer
1 1/4 teaspoons vanilla extract
4 teaspoons granulated sugar

Steps:

  • Preheat oven to 325 degrees. In a medium pot, combine milk, half & half, and brown sugar. Bring to medium heat on the stove. Stir and cook until the sugar has dissolved and mixture is hot. Stir in the powdered creamer, blending well. Remove from heat.
  • In a large bowl, mix the egg substitute and vanilla extract together. Gradually whisk in the hot milk mixture. Set four 4-ounce baking ramekins or custard cups in a deep baking dish. Evenly distribute the custard mixture into the cups.
  • Carefully pour hot water into the baking dish, around the cups, being careful not to splash any water into the custard (or on yourself!). The water should come about halfway up the outsides of the custard cups. Carefully transfer pan to the oven, and bake for about 28 minutes, until custards are set.
  • Remove from the oven, allow to cool, and then refrigerate custard cups until completely chilled. Once ready to serve, top each custard cup with 1 teaspoons white sugar. Using a hand-held butane kitchen torch, caramelize the sugar (in other words, blast with fire 'til browned).

2 large grapefruits, halved crosswise
1/2 cup plus 2 tablespoons sugar

Steps:

  • Cover a baking sheet with foil and arrange the four grapefruit halves in a single layer on top. Use a paring knife to cut in between the sections of each half, then trace around the edge. This will make the grapefruit pieces easy to remove and eat once the sugar is on top.
  • In a medium stainless steel pan, combine the sugar with 1/4 cup water, then swirl over medium heat to blend. Heat until it forms a clear syrup, 3 to 5 minutes. (Do not stir with any utensils.) When the sugar and the water have melted together completely, raise the heat gently and watch as the caramel darkens slightly to amber, 2 to 3 minutes more.
  • Pour the hot caramel over the tops of all the grapefruits halves and let cool, 3 to 5 minutes. The sugar should form a hard shell on top.

40 small seedless grapes
2 tablespoons nonfat sour cream
2 teaspoons granulated brown sugar

Steps:

  • Rinse grapes with cold water and pat dry.
  • Arrange 20 grapes into 2 seperate flameproof serving dishes.
  • Spread 1 tbsp sour cream over each portion of the grapes and then 1 tsp of the sugar over each.
  • Set dishes onto baking sheet and broil 3 inches from heat source until sugar melts and is carmelized, about 1 minute.
  • Remove dishes from broiler and let cool slightly.
  • 2 points per serving (20 grapes).

3 cups whipping cream
6 egg yolks
1/3 cup granulated sugar
1 teaspoon vanilla extract
1/3 cup light brown sugar, packed
1 lb green seedless grape, cut into small bunches
2 egg whites
granulated sugar
8 large strawberries, with stems on

Steps:

  • Day before serving, over low heat, heat heavy cream in a heavy, 2 ½ quart saucepan just until bubbles form around the edge of the pan. Remove from heat. In double boiler top, with electric mixer at medium speed, beat yolks until very thick and light.
  • Gradually beat in 1/3 cup granulated sugar, a tablespoon at a time, beating until very thick-about 4 minutes. Gradually stir in cream, using wooden spoon. Cook, over hot, not boiling, water, stirring constantly, until thickened-about 15 minutes.
  • Mixture should be thick enough to form a coating on a metal spoon. Add vanilla. Strain custard into attractive 9-inch shallow baking dish, 1 inch deep, or 9-inch pie plate. Or turn into 6 (1/2 cup) individual soufflé dishes. Refrigerate 8 hours or overnight.
  • An hour or two before serving, set in large baking pan; surround completely with ice. Sift brown sugar through strainer evenly over surface. Run under broiler, 4 inches from heat, just until sugar melts slightly and caramelizes-it forms a hard crust.
  • Refrigerate until serving. Meanwhile, prepare frosted grapes: Wash and dry bunches of grapes on paper towels. With soft brush, coat grapes with slightly beaten egg white. Quickly roll in granulated sugar to coat well. Place on rack on tray to dry.
  • If necessary, roll grapes in sugar to coat once again. Place in freezer a few minutes.
  • To serve: Place crème brulee on silver platter; surround with small bunches of frosted grapes, alternating with large strawberries. Makes 8 servings.

24 ounces Brussels sprouts (about 8 cups), halved or quartered, if large
24 ounces grapes
2 tablespoons extra-virgin olive oil
4 tablespoons fresh thyme
Coarse salt and freshly ground pepper
2 teaspoons balsamic vinegar
1/2 cup walnuts, toasted and coarsely chopped

Steps:

  • Heat oven to 450 degrees. On 2 rimmed baking sheets, toss Brussels sprouts and grapes with oil and thyme. Season with salt and pepper. Roast, until caramelized and tender, about 20 minutes.
  • Drizzle each tray with 1 teaspoon vinegar and scrape up any caramelized bits with a wooden spoon. Toss in walnuts.
