Old World Goulash image

I found this recipe in a Mastercook group that I used to belong to. It was credited to Dorores Scott and here's what she said. I have adapted this recipe from one which my maternal grandmother cooked for us. She was Czech but lived in Austria with family friends for a year when she was a teenager. Number Of Ingredients 15

4 c onions, finely chopped
cooking oil
2 lb roast beef, cubed (rump, round, or chuck)
5 clove garlic, finely chopped
3 Tbsp sweet paprika
1 c water
1 Tbsp vinegar
3 Tbsp tomato paste
1 Tbsp salt
1 tsp pepper
1/2 lemon, rind grated
1/4 tsp caraway seed
1/2 tsp marjoram
1/2 c cooking oil
2 c cubed potatoes

Steps:

  • 1. n a heavy pan or Dutch oven, saute the onion in the cooking oil, until golden. Add the cubed beef. Add remaining ingredients, except potatoes, and bring to a boil. Allow the stew to simmer, covered, until the meat is tender. Add the cubed potatoes and cook 30 minutes longer.
  • 2. Serve with salad and hot bread.
  • 3. Note: This dish can also be baked in the oven, covered, for 2 hours, adding the potatoes the last 45 minutes. Or, you can use a slow cooker for 6 to 8 hours on low. Again, add the potatoes the last hour or so.
