1 pound sliced bacon
1 can (8 ounces) whole water chestnuts, drained
1 can (8 ounces) unsweetened pineapple chunks, drained
1 jar (10 ounces) sweet-and-sour sauce

Steps:

  • Cut each slice of bacon in half widthwise. Wrap a strip around each chestnut or pineapple chunk; secure with toothpicks. Place in an ungreased 15x10x1-in. baking pan. Bake at 400° for 25-35 minutes or until bacon is crisp. , Pour sweet-and-sour sauce into a microwave-safe bowl. Cover and microwave on high for 1-2 minutes or until heated through. Serve with appetizers.

20 large cleaned cooked shrimp (de-shelled)
1 clove garlic (diced)
1/2 bottle chili sauce
2 Tbsp brown sugar
10 slice bacon (uncooked and cut in half)

Steps:

  • 1. Mix together shrimp, garlic, brown sugar and chilli sauce. Cover and refridgerate at least 2-4 hours, stiring it a few times. Cut the bacon in half side-ways and fry the half slices of bacon until partially cooked, drain. Wrap each shrimp in bacon and secure with a tooth pick. Set oven on broil and broil with tops 2-3 inches from heat until bacon is crispy. Watch closely as it will be a short time.

This is a different, outstanding appetizer. They always disappear fast when served. Original recipe is from the Sharp Carousel Recipe Book which came with my first microwave. I've made them in other carousel microwaves also. The time to cook is actually 5 - 9 minutes depending on your microwave's power. Just watch them cook the first time for the light browning and you'll do fine. Prep/Cook time does not include marinating time. Hope you enjoy!

1 (8 ounce) can pineapple chunks in juice, drained (reserve 3 tablespoons juice)
2 tablespoons soy sauce
1/4 teaspoon ground ginger
1 dash garlic powder
6 slices bacon, each cut into thirds

Steps:

  • Combine the 3 tablespoons juice, soy sauce, ginger and garlic powder in small bowl.
  • Marinade the pineapple chunks in this for 1- 2 hours.
  • Drain.
  • Wrap a piece of bacon around each chunk.
  • Secure with a toothpick.
  • Line microwave carousel with several layers of paper towel.
  • Arrange around the outer edge of carousel with space between each one.
  • Microwave at 100% power until bacon is lightly browned (5 to 9 minutes).
  • Serve.

For as long as I can remember, my mom always made these for gatherings, and they were always one of the first things to disappear off the table. The same happens when I make them today! The ingredient and serving amounts are a guess since this recipe isn't written down anywhere. While this also works with ham or turkey, the beef is what people seem to like best. I purposely buy a bit more cream cheese and meat than I need and make some up without the onions, for kids and other people who don't like onions. There's not much to this recipe, but they are greatly enjoyed and look pretty on an appetizer tray.

2 (2 1/2 ounce) packages deli roast beef, very thinly sliced (Carl Buddig brand, or similar)
1 (8 ounce) package cream cheese, softened
3 bunches green onions

Steps:

  • Wash and dry onions; cut off roots and trim green tops to about 5-6 inches.
  • Thinly spread cream cheese on one half of one slice of beef.
  • Lay one onion on the cheese-covered half of the meat so that white end of the onion lines up with the middle of the meat (where the cheese ends) and the side of the onion lines up with the edge of the meat.
  • Fold the plain half of the meat up over the onion, matching up the edges of the meat.
  • Starting with the onion end, roll up beef and cheese tightly around onion (most of the green top will stick out).
  • Repeat until the rest of the ingredients are used up.
  • Refrigerate until cheese is firm and serve cold.

  • Heat oven to 400°F.

Bacon Wrapped Bread Bites . . . with just three ingredients, you can whip up these tasty appetizers in no time. A crowd pleasing recipe!

4 oz cream cheese, softened to room temperature (I use light- it's easier to spread)
8 slices white bread
16 slices of thinly sliced bacon, cut in thirds

Steps:

  • Spread the cream cheese evenly onto the bread slices. Cut the crusts off of the bread, and cut each piece into 6 cubes.
  • Take each cube and wrap a third of a piece of bacon around it. Poke a toothpick through it to secure it if needed.
  • Place all bacon wrapped cubes on a cookie sheet lined with a cooling rack. (This allows the extra fat to drip off onto the pan.)
  • Bake at 375 degrees for 15-20 minutes or till bacon is crispy. I like mine really crispy, so I cook for 20 minutes.
  • Note: You can use either regular cream cheese or the spreadable cream cheese in the tub. Both varieties work just fine.

5 dried Chinese black mushrooms
½ (8 ounce) package dried rice vermicelli, or to taste, broken into 1-inch pieces
1 tablespoon vegetable oil, or as needed, divided
2 pounds Chinese roasted Peking duck meat, chopped into cubes, or more to taste
vegetable oil for frying
salt and ground black pepper to taste
5 leaves lettuce, halved lengthwise, or more as needed
¼ cup hoisin sauce

Steps:

  • Place mushrooms and vermicelli in 2 separate bowls with lukewarm water to cover. Let soak until softened, at least 15 minutes. Drain mushrooms and chop into small cubes. Drain vermicelli.
  • Heat 1 to 2 teaspoons vegetable oil in a wok over medium-high heat. Add duck; cook, stirring continuously, until golden brown, about 5 minutes. Season with salt and pepper. Transfer duck to a bowl.
  • Heat about 3 inches vegetable oil in a medium-large pot to 350 degrees F (175 degrees C). Add vermicelli; fry until fritters are crisp and crunchy but not golden brown, 2 to 3 minutes.
  • Pour the remaining vegetable oil into the wok over medium heat. Add mushrooms; cook and stir until soft, 4 to 5 minutes. Return duck to the wok; cook until heated through, about 2 minutes.
  • Place vermicelli fritters on a large plate; pour the duck stir-fry on top. To eat, drizzle hoisin sauce on a piece of lettuce; spoon the duck and vermicelli stir fry on top. Hold the lettuce wrap together with your fingers.

This is a quick and easy appetizer my sister makes and I tweaked, don't tell her- she doesn't have a computer anyway, no cell phone -Just one of those on the wall- can you imagine!!(and she is younger than I am- just not as hip teehee!)But she is a good cook.She got this recipe from one of her card club ladies. I made asparagus and red bell pepper ones for Memorial Day!

1 jar(s) sweet or dill pickles,(cooked asparagus or carrots) wiped dry with paper towel
8 ounce(s) softened cream cheese
1 or 2 dash(es) hot pepper sauce or to taste
2 or 3 package(s) smoked or honey ham thin sliced luncheon meat

Steps:

  • Dry pickles and set aside. Mix together cream cheese and pepper sauce until well blended. Spread cheese mixture on meat carefully or coat pickle literally with the cheese- whichever is easiest for you.
  • Wrap pickle in piece of meat to cover pickle completely. Chill in refrigerator for 1/2 hour. Slice into wheels.. I like using the large sweet pickles - the choice is yours.
  • Note: Cooked dried asparagus with or without red bell pepper, or whole cooked carrots may be used in place of the pickle if desired. All look pretty on a serving plate.
