WORLD FAMOUS MACARONI AND CHEESE image

4 tablespoons butter, melted
8 slices good white bread (I use sourdough), crusts removed, and cut into ½ inch pieces
6 tablespoons butter
½ cup flour
2 teaspoons kosher salt
5 ½ cups whole milk
12-14 ounces white cheddar cheese, shredded (about 3 cups)
6-8 ounces Gruyere, shredded (about 1 ½ cups)
1 lb elbow macaroni
6-8 ounces white cheddar, shredded (about 1 ½ cups),
2-3 ounces Gruyere, shredded (about ½ cup)

Steps:

  • Oven 375. Toss melted butter and bread cubes together and set aside. Melt the butter until bubbly. Add the flour and salt and stir to combine. Add the milk, stirring constantly until thick and bubbly. Remove from heat and add the cheese. Stir to melt and set aside. Generously butter a 3-quart casserole dish. Pour the macaroni and cheese into it, and top with remaining cheese and buttered bread cubes. Bake 30 minutes, until browned on top. Cool 5 minutes before serving.

This recipe recently appeared in my electric co-op's magazine as one of the "classic recipes every South Carolina cook should know". I put it here for safe-keeping!

1/2 cup all-purpose flour
1/2 cup melted butter
2 cups chicken stock
2 cups milk
1 teaspoon granulated garlic
1 teaspoon dry mustard
1 1/2 teaspoons sea salt
1 dash black pepper
2 cups shredded colby cheese
1 cup grated parmesan cheese
4 1/2 cups shredded cheddar cheese, separated
8 cups water
1 tablespoon salt
4 cups elbow macaroni

Steps:

  • In saucepan over low heat, mix flour and butter together until blended, making a roux. Cook about 3 minutes. Blend in chicken stock and milk. Continue to cook on low about 6 minutes. When sauce begins to thicken, add garlic, mustard, sea salt, pepper, colby and Parmesan cheeses, and add 3 cups of cheddar cheese (reserve 1 1/2 cups cheddar for topping). Cook about 5 more minutes on low. Set sauce aside while macaroni cooks.
  • In a pot over high heat, bring water to a boil, and add salt. After salt dissolves, add macaroni. Cook about 8 minutes, stirring occasionally. Drain macaroni noodles, and add them to the sauce.
  • Place mixture in buttered casserole dish, and top with 1 1/2 cups shredded cheddar cheese. Bake at 375 F about 30 minutes or until it reaches an internal temperature of 165°F.
