Number Of Ingredients 5

-2 packages Jell-O brand pudding mix - Butterscotch. Low fat is great.
-4 cups Milk
-2 16oz cans Libby's Pumpkin Pie Filling
-1 Large or 2 Small Tub(s) Cool Whip - Thawed (low fat)
-Pumpkin pie spice OR cinnamon, or nutmeg to taste.

Steps:

  • In large bowl, mix milk and pudding mix together until well blended and thick. Using a wire wisk, slowly add the pumpkin pie filling to the pudding mixture. Once all pumpkin has been added begin adding the cool whip. Being sure to mix well. When all cool whip is mixed in, pick your spice of choice and add about 1/4 teaspoon. Taste and add more if needed. Chill for one hour if time permits. Guest can be hungry and 1 hour may not be an option. Spoon into pudding cups or small dessert dishes and top with a dolup of cool whip and a pinch of spice if desired.
