GLUEHWEIN (GERMAN HOT WINE PUNCH)
This hot spiced wine punch is a staple at the Christmas festivites in Germany. Everywhere you go during the month of December, you will most likely find someone selling mugs of hot, steaming Gluehwein. Here is a version I adapted from "Authentic German Home-Style Recipes" by Gini Youngkrantz. Posted by request. I am guessing on the cook time - it should be just until hot, but NOT boiling.

GERMAN ERDBEER BOWLE (STRAWBERRY WINE PUNCH)
Germans often serve a delicious Bowle at summer parties. There are many, many variations on a bowle, here is but one variation I found in a special summer issue of Kreativ Kuche magazine. I have translated this directly from the German. I recommend trying a German Riesling with this, but any white wine you prefer will do just as nicely. When serving Bowle, your German host usually will provide small picks along with your punch glass - the picks are for stabbing the wine soaked berries floating in your glass so you can eat them. The berries are, in my opinion, the best part! Plan to start this just a few hours before your guests arrive as this does not keep.

Steps:
- 2-3 hours before your guests arrive, wash the strawberries, drain well and pat dry.
- Halve the berries, then place them in the bottom of large punch bowl or glass pitcher.
- Sprinkle the powdered sugar over them.
- Rinse the lemon balm leaves and shake them dry.
- Pluck the leaves from their stems and add them to the berries.
- Pour one bottle of wine over the berry mixture, cover, and cool in the fridge.
- When the guests have arrived, add the remaining wine and the champagne.
- Lemon balm is an herb in the mint family common in Europe; if unavailable then use a vegetable peeler to cut about 5-6 long narrow curls of lemon rind in place of the balm (remove before serving).
PFIRSICHBOWLE (GERMAN SPARKLING PEACH WINE PUNCH)
May marks the beginning of Bowle season in Germany, and is heralded in with a holiday (May Day). During May, and throughout the summer, you will start to see Bowle served in the restaurants and at fairs. Bowle is a strong wine & fruit punch that comes in many varieties. Use the best quality wines you can afford (as long as you think they taste good is all that matters - not the price tag). In Germany, you can buy Bowle sets - decorative glass pitchers or punch bowls with small cups and picks (the picks are for spearing the fruit). Watch out - this punch packs a wallop - and the fruit is always the best part. Plan ahead - the sugared fruit needs to macerate overnight in the fridge. The serving size is really a guess.

Steps:
- Sliced peaches and drop into a pot of boiling water for a few seconds- just to blanch them so the skins will come off easily, not to cook them.
- Pull off the skins and set them in the bottom of your bowle pitcher in a layers, sprinkling with sugar for each layer (one peach per layer)-amount is to taste, but probably 1 rounded Tbsp per peach is a good guess.
- Cover and chill bowle pitcher 24 hours.
- Have a decorative bowl filled with ice that your bowle pitcher will sit in to keep cool.
- Nestle the bowle pitcher in the ice bed and pour in the chilled wine and the champagne.
- Stir gently with a ladle and serve.

Steps:
- Cut oranges in half and juice.
- Pour red wine in a large pot. Add the orange juice through a sieve to get rid of pulp.
- Add cider, cloves and half the cinnamon sticks and bring to a simmer, but do not boil.
- Cut apple in ⅓ - ½ inch (1 cm) slices, leaving the peel on and the star in the middle intact. Put the center slices with a star aside and add the rest of the ends to the punch.
- To serve, pour punch in a heat resistant glass.
- Take the center slices with the inner star shape and clean the holes of the seeds and tough lining, making sure to keep the star shape intact.
- Carefully place the apple slice on the punch, so it floats on top.
- Pour a little bit of the rum in a glass, heat-safe dish. Have another glass nearby to hold the spoon you will use to move the sugar to the apple.
- Soak sugar cube in rum and place it over the star in the glass.
- Carefully, with a lighter, set sugar cube on fire until you see the sugar bubbling and a blue flame.
- If necessary, carefully add small amounts of rum on the sugar cube with a spoon to keep it burning until the sugar is melted.
- Stir with a cinnamon stick and enjoy immediately while it is still hot. If not sweet enough, repeat sugar cube flaming step or add more sugar to the hot drink.
- Enjoy!

MAY WINE PUNCH MY VERSION
May wine, of German origin, is Maibowle (May-bowl) made with Rhine wine or other light, dry, white wines, Sweet woodruff is thought of as a tonic, with significant diuretic and anti-inflammatory effects. Its coumarin and flavonoid constituents make sweet woodruff helpful for varicose veins. Sweet woodruff has been used as an antispasmodic, and it is given to children and adults for insomnia. Known as an aromatic ingredient in May wine, making sweet woodruff an ingredient in this punch. Modern herbalists recommend sweet woodruff as a laxative and as an antiarthritic. Sweet woodruff is mainly grown today as a ground cover liking shady areas. This has an extra touch from Lavender. May Wine Topic http://www.recipezaar.com/bb/viewtopic.zsp?p=4543721

MULLED ZIN (HOLIDAY ZINFANDEL WINE PUNCH)
One of the things I love about the holidays is mulled wine. :) Here's a nice version featuring roasted oranges, which gives the punch a really nice flavor.

Steps:
- Preheat your oven to 350 degrees F.
- Push the whole cloves into one of the small oranges until it's completely"studded," then place the orange in a baking dish and roast it in the oven until it's soft, which will take between 35 to 40 minutes.
- In a non-reactive saucepan over medium heat, combine the roasted orange, zinfandel, orange juice, honey, brown sugar, 4 of the cinnamon sticks, nutmeg, allspice, and the brandy or Cognac.
- Raise the heat to medium-high, stirring constantly until the honey is melted and the sugar is dissolved, which will take about 4 minutes, but DO NOT LET BOIL (the flavor of the wine and spices combination will deteriorate if the mixture reaches the boiling point).
- Strain the mulled wine and pour into six coffee glasses or cups, slice the remaining small orange into 6 slices, and garnish each cup with a cinnamon stick and orange slice.
