Sweet Matzah Kugel image

9 pieces Matzah
9 Eggs, separated
1.5 cups Sugar
6 tablespoons Butter, melted
1 Zest from one lemon
1 teaspoon Cinnamon
1.5 teaspoons Vanilla
1/2 Pineapple, grated
10 Strawberries, halved

Steps:

  • Preheat oven to 350
  • Crumble matzah and soak in cold water until soft. Drain thoroughly.
  • Beat egg yolks with half of sugar. Add matzah, butter, lemon rind, cinnamon, and vanilla. Stir in pineapple.
  • Beat egg whites, add remaining sugar slowly. Beat until stiff, then fold in.
  • Pour into well greased springform pan (9" or 10").
  • Place halved strawberries against wall of springform pan, and carefully pour in the batter.
  • Bake at 325 covered for 2 hours, uncover to brown top.
