Steps:
- Preheat oven to 350
- Crumble matzah and soak in cold water until soft. Drain thoroughly.
- Beat egg yolks with half of sugar. Add matzah, butter, lemon rind, cinnamon, and vanilla. Stir in pineapple.
- Beat egg whites, add remaining sugar slowly. Beat until stiff, then fold in.
- Pour into well greased springform pan (9" or 10").
- Place halved strawberries against wall of springform pan, and carefully pour in the batter.
- Bake at 325 covered for 2 hours, uncover to brown top.
