Simple chili seasoning mix. Cornstarch can be omitted, but chili will have thicker base with it. You can add fresh or dry chilis to taste.

1 tablespoon chili powder
1 teaspoon chili powder
2 teaspoons cumin
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon kosher salt
1 teaspoon cornstarch

Steps:

  • Mix all spices in a small bowl and add to ingredients.
  • This will season up to 2 pounds of meat.
  • You can can also add cayenne pepper if you like spicy.
  • This makes a basic mild chili kids love.

We all want to brag and say, "this is the best chili" I ever ate; but after 50 plus years of trying and searching different chili recipes this is the best I found for me. Try this first before adding "all" of the packets supplied and then add the "hot" for your own taste.. Don't use the RED PEPPER the first time, I like to use an extra onion, bell pepper, and a can of diced tomatos drained. This is at the bottom of the directions. After you go down this road the first time, heat it up to your likes the next time, but at least this way you have a base line to work from, I'm still on the base line. Try it, see what you think.

2 lbs ground beef (I like chili grind or cubed chuck roast)
46 ounces tomato juice, Campbell -
15 ounces diced tomatoes, -drained-
1 medium onion, chopped
1 medium bell pepper, chopped
3 garlic cloves, chopped

Steps:

  • Brown ground beef or cubed beef and add the onions,bell pepper and garlic-Drain the fat.
  • ADD the following and stir:.
  • 1 - 46 oz can of Campbell tomato juice.
  • 1 - 15 oz can diced tomatos - drained -.
  • ADD the seasoning packets, except RED PEPPER AND MASA. (Try the Masa the first time, you might like it, it changes the taste of the chile, I don't use it because of that reason).
  • COVER and simmer 30 minutes or until meat is tender. Stir occasionally.
  • For a thicker chili, stir the packet of Masa flour into 1/4 cup of warm water.
  • Stir into chili and simmer 30 minutes.

Texas Chili With All the Fixin's image

A great chili with a lot of depth to the flavours thanks to the chipoltle chilies. This is a nice mix of spice, sweet and smokey that works well for the whole family. I found this recipe in the Bride & Groom First and Forever Cookbook. I suggest you make it as stated in the recipe the first time before tweaking including all the fixin's, you won't be dissapointed! The chili itself isn't spicy its the Jalapenos you add on so the heat can be adjusted per bowl. Enjoy!

1 tablespoon vegetable oil
2 medium onions, chopped
3 tablespoons garlic, chopped
3 tablespoons chili powder
2 tablespoons paprika
1 tablespoon cumin
2 teaspoons dried oregano
1 lb lean ground beef
1 lb Italian sausage, links removed from casing and crumbled
2 teaspoons salt, more as needed
2 (28 ounce) cans crushed tomatoes with puree
1 (15 ounce) can kidney beans, rinsed and drained
1 (15 ounce) can barbecued baked beans, drained
1 tablespoon chipoltle chiles in adobo sauce, minced, more as needed

Steps:

  • Heat the oil in a large 8-quart-heavy bottomed stockpot over medium heat. Add the onions and garlic and cook, stirring occasionally, until tender, 7-10 minutes.
  • Add in the chili powder, paprika, cumin, and oregano and stir until the spices are well combined.
  • Add in the ground beef, sausage and 1 teaspoon of the salt. Increase heat to medium-high and cook the meat, stirring frequently, until cooked through, 8-10 minutes.
  • Stir in remaining ingredients. Reduce heat to low, cover and simmer, stirring occasionally, for 1 hour. Adjust the seasonings with more salt or chipoltle chiles if necessary. Serve with any or all of the suggested fixin's.
  • Fixin's: Grated Sharp Cheddar, Chopped Green Onion, Sour Cream, Crumbled Corn Chips, Red Pepper Flakes, Chopped Jalapeno Chiles.
  • Note: You can find canned chipoltle chiles in adobo sauce (smoked jalapenos in a thick red sauce) in supermarkets and Latino specialty markets.

1/2 cup dried parsley flakes
1/2 cup chili powder
1/4 cup dried minced onion
2 tablespoons salt
2 tablespoons cornstarch
2 tablespoons dried minced garlic
2 tablespoons ground cumin
1 tablespoon ground coriander
1 tablespoon each dried cilantro flakes, basil and oregano
1 tablespoon crushed red pepper flakes
1-1/2 teaspoons pepper

This chili spice combination is my son's favorite so I named it after him. When my kids were both little my daughter could not pronounce "Christopher" so she called her brother Ferfer. The name has stuck and now we call him Ferf for short. This recipe is a combination of a few different other recipes and the spice mixture is just right for us. This would probably make a great gift too.

1 tablespoon flour
3 tablespoons chili powder
1 teaspoon sugar
2 tablespoons dried onion
1 teaspoon Lawry's Seasoned Salt
1 teaspoon garlic powder
1 teaspoon ground cumin

1 teaspoon Mexican oregano
1/2 teaspoon black pepper
1 teaspoon kosher salt

Steps:

  • Mix all ingredients together.
  • Store in a ziploc bag or airtight container or use immediately.
  • Add to 1.5 pounds of salted, browned ground beef with 1 - 16 oz can of pinto beans, 1-14.5 oz can of diced tomatoes and 1.5 cans of water. Simmer for at least 1/2 hour over medium heat.
