SKILLET CORN SCRAMBLE



Skillet Corn Scramble image

A hearty scrambled egg dish that is good for supper, brunch or breakfast. Made this once to twice a week when I was pregnant. I like to add some cheese (parmesan, pepper jack, cheddar all work well)

5 slices bacon
5 eggs, slightly beaten
1/3 cup milk
1/4 cup green pepper, chopped
1 small onion, chopped
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/8 teaspoon pepper
2 teaspoons Worcestershire sauce
1 1/2 cups corn, drained
cheese (optional)

Steps:

  • In fry pan, cook bacon until crisp.
  • Drain on paper towel, reserving 3 tablespoons drippings in fry pan.
  • Combine remaining ingredients and crumbled bacon.
  • Pour into fry pan.
  • Cook over low heat until eggs are set, stirring occasionally.
  • Sprinkle with cheese if using.

You can serve it with sour cream and/or salsa if you wish.

6 ounces mexican chorizo sausage, casings removed (about 2 links)
1/2 cup red bell pepper, chopped (1/2 of a pepper)
1/2 cup green bell pepper, chopped (1/2 of a pepper)
2 cups Simply Potatoes Diced Potatoes with Onion
3 ounces Baby Spinach
8 eggs
2 tablespoons milk
1 cup black beans, rinsed
2 scallions, chopped, divided
2 tablespoons cilantro, chopped, divided
1 cup monterey jack cheese, shredded, divided
3 tablespoons extra virgin olive oil, divided
1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Beat eggs with milk until incorporated. Set aside.
  • In a large nonstick skillet, heat one tablespoon of extra virgin olive oil over medium high heat. Add the chorizo to the skillet, breaking it up as it cooks. Cook for about 5 minutes, or until done, and then remove to a plate lined with paper towels. Wipe out the skillet with a couple of paper towels.
  • In the same skillet, heat remaining 2 tablespoons of olive oil over medium high heat. Add the red and green pepper and cook 3-4 minutes, until peppers begin to soften.
  • Add Simply Potatoes diced potatoes with onion and cook 5-7 minutes, until potatoes begin to brown.
  • Stir in spinach and cook about one minute to wilt it.
  • Stir in the egg mixture, the black beans, half of the scallions, half of the cilantro, and half of the cheese. Season with salt and pepper and stir everything to mix. Cook 3-4 minutes, stirring occasionally, until eggs are solid.
  • Top with remaining cheese, scallions, and cilantro.

3/4 cup sliced fresh mushrooms
2 tablespoons chopped onions
4 eggs
1/4 cup milk
6 slices ready to serve Canadian bacon, cut into 1/4-inch pieces
black pepper (optional)
1/2 cup shredded swiss cheese
2 cups fresh baby spinach leaves
2 tablespoons chopped tomatoes

Steps:

  • Spray large skillet with cooking spray.
  • Add mushrooms and onions to skillet; cook and stir on medium heat 5 minutes or until vegetables are crisp-tender.
  • Beat eggs and milk with wire whisk until well blended. Add to vegetable mixture; stir until well blended. Cook 2 minutes or until egg mixture begins to set but top is still moist, stirring occasionally.
  • Stir in Canadian bacon; continue cooking 2 minutes or until egg mixture is set and no visible liquid remains, stirring occasionally.
  • Season with pepper to taste; sprinkle with cheese.
  • Place 1/2 cup of the spinach on each of 4 salad plates; top evenly with the egg mixture. Sprinkle with tomatoes.
