Whole Wheat Banana Bread with Flaxseed and Oats image

Banana bread without the guilt... This bread is hard to beat because it is very flavorful and full of the good stuff. No white flour, only wheat, flaxseed meal, and oats mixed with buttermilk and eggs, making for a healthy start or snack during the day.

1 ½ cups whole wheat flour
⅔ cup brown sugar
½ cup flaxseed meal
⅓ cup rolled oats
2 tablespoons white sugar
½ teaspoon baking powder
½ teaspoon baking soda
⅛ teaspoon salt
2 eggs
6 tablespoons butter, melted
⅓ cup buttermilk
1 tablespoon buttermilk
1 teaspoon vanilla extract
3 bananas, mashed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
  • Mix whole wheat flour, brown sugar, flaxseed meal, oats, white sugar, baking powder, baking soda, and salt together in a large bowl.
  • Combine eggs, butter, 1/3 cup plus 1 tablespoon butter milk, and vanilla extract in another bowl. Stir in flour mixture. Add bananas; mix until batter is well-combined. Pour into the prepared loaf pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, 50 minutes to 1 hour. Cool in the pan for 5 minutes. Invert onto a wire rack and let cool, about 25 minutes.

¾ cup whole wheat flour
¾ cup all-purpose flour
¼ cup white sugar
2 teaspoons baking powder
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon ground cinnamon, or more to taste
¼ teaspoon ground nutmeg, or more to taste
2 eggs
¾ cup milk
⅓ cup vegetable oil
¼ cup brown sugar, packed
½ teaspoon vanilla extract
3 extra-ripe bananas, mashed
1 cup walnuts, crushed using a rolling pin

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a muffin tin with paper liners.
  • Combine oats, whole wheat flour, all-purpose flour, white sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a medium-sized bowl.
  • Lightly beat eggs in a large bowl. Stir in milk, oil, brown sugar, and vanilla extract. Add bananas and mix together well. Add 1/2 the flour mixture and stir to combine. Add remaining flour mixture and stir. Stir nuts into the batter.
  • Spoon batter into the prepared muffin cups, filling each 3/4 full.

Very gooey and yummy, this is my favorite Banana bread recipe. TIPS: Buy whole wheat flour that has NOT been bleached. Use only PURE honey. Use Almond, Rice or Soy milk (try not to use cow milk). Extra virgin cold pressed olive oil has the best taste and has no extra junk in it. Use real vanilla extract, imitation has too many chemicals and not as good a flavor. Has plenty of fiber to help cleanse the colon which is always the best place to start cleaning for a successful diet and a healthy lifestyle.

1 teaspoon baking soda
1 teaspoon baking powder
1/4 cup chopped walnuts
1/2 cup honey

  • Preheat oven to 350.

½ cup honey
1 teaspoon vanilla extract
2 eggs
1 cup mashed bananas

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x5-inch loaf pan.

My Danish great grandmother made a bread very similar to this when my dad was a child. Going off memories my dad helped me recreate her recipe. This bread a deep golden brown on the outside and moist on the inside. Everyone agrees it's delicious toasted.

2 cups 2% reduced fat milk
1 (.25 ounce) package active dry yeast
1 ½ tablespoons white sugar
2 ½ cups whole wheat flour
2 cups all-purpose flour, or as needed
½ cup oatmeal
1 ½ teaspoons salt

Steps:

  • Warm the milk in a small saucepan to no more than 100 degrees F (40 degrees C). Sprinkle the yeast overtop and let stand until the yeast softens and begins to form a creamy foam, about 5 minutes; stir in the sugar.
  • Whisk the whole wheat flour, all-purpose flour, oatmeal, and salt together in a mixing bowl. Make a well in the center and pour the milk mixture into the well. Stir until the dough has pulled together. Turn the dough out onto a lightly-floured surface and knead until smooth and elastic, about 8 minutes.
  • Lightly oil a large bowl. Place the dough in the bowl and turn to coat with oil. Cover with a light cloth and let rise in a warm place (80 to 95 degrees F (27 to 35 degrees C)) until doubled in volume, about 45 minutes.
