12 small round slices of a large baguette or Italian bread (homemade or store bought)*
2 cloves garlic (2 teaspoons finely minced)
1/4 cup extra virgin olive oil
1/2 teaspoon dried oregano
1/4 teaspoon kosher salt
Garlic powder, for sprinkling
Finely chopped Italian parsley, for the garnish (optional)

Steps:

  • Preheat the oven to 350 degrees Fahrenheit.
  • Thinly slice the bread.
  • Mince the garlic. In a small bowl, mix together the garlic with the olive oil, dried oregano, and salt. Use a brush to brush the mixture on both sides of each slice of bread and place them onto a baking sheet. Try to pick up some of the minced garlic with the brush, as it tends to sink to the bottom. (If the oil runs out, depending on your size of bread, just add a splash more to the bowl with the garlic.)
  • Add a pinch of garlic powder to the top of each toast.
  • Bake for 5 minutes until the crust is crisp but the inside is still soft. If desired, sprinkle with finely chopped Italian parsley. Enjoy immediately.

Steps:

1 pound garlic (6 to 8 heads, depending upon size)
Kosher salt and freshly ground pepper
1 tablespoon fresh thyme leaves
1/2 cup extra-virgin olive oil

Steps:

  • Preheat oven to 400 degrees. Using a serrated knife, slice off top quarter of garlic heads, exposing as many cloves as possible. Arrange garlic heads, cut side up, in an 8- or 9-inch square baking dish (make sure garlic heads sit flat).
  • Season garlic with salt and pepper and sprinkle with thyme. Slowly pour oil over each head, letting it soak into and around cloves. Cover dish tightly with foil and roast until cloves are golden, completely soft, and begin to protrude slightly from skins, about 1 hour. Let stand until cool enough to handle.

1/4 cup good olive oil

1 garlic clove, halved lengthwise

  • Preheat the oven to 400 degrees F.
  • Slice the baguette diagonally into 1/4-inch-thick slices. Depending on the size of the baguette, you should get 20 to 25 slices.
  • Lay the slices in one layer on a baking sheet, brush each with olive oil, and sprinkle generously with salt and pepper. Bake the toasts for 15 to 20 minutes, until they are browned and crisp. 1 large head of garlic
3 tablespoons olive oil
ten 1/3-inch-thick diagonal slices of Italian or French bread

Steps:

  • Cut off the top quarter of the garlic with a sharp knife to expose the cloves, set the garlic in the middle of a large piece of foil, and drizzle it with 2 teaspoons of the oil. Crimp the foil around the garlic to enclose it completely and bake the garlic in the middle of a preheated 425°F. oven for 40 minutes. While the garlic is baking, brush the bread slices with the remaining oil and bake them on a baking sheet in the lower third of oven (below the garlic), turning them once, for 10 to 12 minutes, or until they are golden and crisp. Unwrap the garlic and put it on a serving plate surrounded by the toasts. To serve the garlic: Remove the softened cloves with a knife or fork, or turn the head of garlic upside down and squeeze out the cloves, and spread the garlic on the toasts.

1 large head of garlic
3 tablespoons olive oil
1 loaf French bread
3 1/2 ounces mild goat cheese, softened

Steps:

  • Pre-heat oven to 425.
  • Cut off the top quarter of the head of garlic to expose the colves. Set the head in the middle of a large piece of tin foil, and drizzle with 2 tsp of olive oil. Crimp the foil around the garlic to enclose it completely.
  • Bake in a 425 oven for 40 minutes.
  • Slice the bread thinly and brush with the remaining oil.
  • Bake in the bottom half of the oven, below the garlic, on a cookie sheet, turning once until they are golden (about 4 minutes each side - watch them!).
  • Unwrap the garlic and squeeze out the cloves. Mix it with the goats cheese. Add salt and pepper to taste if you wish.
  • Spread on the toasts.
