ALTON BROWN'S WHITE TRASH

Alton Brown's White Trash image

Alton once posted this on his website and said that he always cranks out a bushel or two of it during the holidays. He also said "Dole this stuff out carefully. It is highly habit forming." I totally agree and for this reason have no earthly idea how many servings it makes! Depends on how much you can eat! LOL Especially good to anyone who likes the salty-sweet combination. Cooking time is cooling time.

WHITE TRASH HAMBURGER GRAVY AND BREAKFAST BISCUITS

White Trash Hamburger Gravy and Breakfast Biscuits image

This was my sister's favorite thing to eat when she was growing up. She wouldn't let anyone but me make it for her.

Provided by Pot Scrubber

Categories     Breakfast

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 8

8 ounces ground beef (browned, crumbled, and drained) or 8 ounces pork sausage (browned, crumbled, and drained)
4 tablespoons butter
4 tablespoons flour
1 1/2 cups whole milk
1/2 cup half-and-half cream
salt, to taste
pepper, to taste
purchased refrigerated buttermilk biscuit

Steps:

  • Cook and drain beef. (I rinse the beef under hot water to remove all of the grease -- it is rich enough!).
  • Melt butter in a pan and when melted and lightly sizzling add the flour.
  • Whisk until combined and gently simmer the butter/flour mixture for about two minutes to remove the flour/starch taste but don't let it brown any.
  • Add the 1.5 cups of milk and quickly whisk until smooth. SImmer until thick over medium heat stirring constantly. It will be quite thick.
  • Add the half and half cream and quickly whisk until smooth.
  • Cook over low heat until thickened.
  • Add the beef and adjust the seasonings.
  • Serve over good biscuits well buttered.
  • This is a very creamy and rich gravy. You may use 2 cups whole milk if you need to omit the cream.
  • If it is too thick for your taste -- then dilute with more milk -- but it usually is perfect the way it is written.
  • Leftovers are excellent.

WHITE TRASH PARTY MIX

White Trash Party Mix image

This is a very yummy, sweet party mix that gets a lot of requests. I usually make two batches during the Christmas season and one during Easter and sometimes throughout the year "just for the fun of it." If it has been a while since I have taken some to work, they start reminding me it is time to make another batch. It is very addicting. This makes a huge batch. You can cut it in half, but why? I have a large (28 quart) storage container that I make it in and store it in. You can use different colored M&M's for the different seasons, or use team colors for a football party or tailgate snack.

Provided by psychotammymom

Categories     Lunch/Snacks

Time 45m

Yield 1 large batch

Number Of Ingredients 6

1 (12 ounce) box Kix cereal
2 (12 ounce) boxes Crispix cereal
1 (16 ounce) can cocktail peanuts
1 (14 ounce) bag thin pretzel sticks
3 (14 ounce) bags plain M&M's
4 (24 ounce) blocks white almond bark

Steps:

  • Mix the cereals, peanuts, pretzels and M&M's together in a very large container.
  • Melt the almond bark. I do this by placing it all in a large bowl and microwaving on high for 2-3 minutes, stirring and repeating until it is melted.
  • Pour over the cereal mixture and mix well.
  • Lay out on a table or a long counter and break apart. Allow to dry, breaking apart as needed.
  • Store tightly covered.

WHITE TRASH / TRAILER TRASH

White Trash / Trailer Trash image

A Kitchen Daddio variation on a holiday favorite. Easy to make; easy to clean! And kids love it! Parents, try letting your kids make it themselves (with your supervision of course!). Update 12/26/06: Hat tip to "Kat's Mom" for catching a major typo! No, it should NOT have been 60 oz. of chocolate chips. It should be 16 oz!!! Try this one again, and I promise you'll enjoy it, or I'll refund you the ingredients.

Provided by Kitchen Daddio

Categories     Candy

Time 5m

Yield 20 serving(s)

Number Of Ingredients 6

1 cup butter
1 cup peanut butter
1 (16 ounce) box Rice Chex
2 (16 ounce) boxes confectioners' sugar
1 (16 ounce) bag chocolate chips (optional)
1 (16 ounce) jar dry roasted peanuts (optional)

Steps:

  • For "WHITE TRASH," use the first four ingredients only. Or for a fun variation - add the optional chocolate chips and dry roasted peanuts to make "TRAILER TRASH!".
  • Melt butter, peanut butter (and chocolate chips) together in medium sauce pan OVER LOW HEAT. Place Rice Chex (and dry roasted peanuts) in a large container (plastic salad mixing bowls with lids work great!). Pour melted mixture over Rice Chex (and peanuts) and toss, until evenly coated throughout.
  • ---Kids love this part!---.
  • Then pour conf. sugar over mixture (1 box at a time), place lid on container, and shake shake shake! Shake well, until all the mixture is coated with sugar. Repeat with second box.
  • Serve, and enjoy!

WHITE TRASH SNACK MIX/CANDY

Provided by Tina A

Categories     Candy

Time 30m

Yield 12 serving(s)

Number Of Ingredients 6

1 lb almond bark
1 cup Rice Chex
1 cup Golden Grahams cereal
1 cup pretzel stick, break into smaller pieces as you add it
2 -4 ounces pecan halves
1 tablespoon powdered sugar

Steps:

  • melt almond bark over LOW heat in a double boiler stirring frequently.
  • I suggest mixing a handful of all ingredients EXCEPT powdered sugar to see if you like more pretzels or more chex or whatever.
  • I just fold in the cereals, pretzels, & pecans into melted bark until well coated. I didn't measure any of it, I just kept adding more until all pieces were covered well with bark, but there wasn't a ton of extra bark at the bottom of the pan.
  • Spoon mixture onto waxed paper or foil in large bite-size clumps. (I use wax paper on a cookie sheet for easier transfer to the fridge.) Move into the fridge for fast cooling if you like. When bark has set, put all the pieces in a large tupperware type container or large ziploc bag. Sprinkle the powdered sugar all over, then shake the container to spread it around well.
  • Enjoy!

WHITE TRASH BROCCOLI CASSEROLE

This is a great side dish for meatloaf, Salisbury steak or any hamburger-based dish.

  • 7. Let drain on Wonderbread® White Bread toast [you'll thank me later!!] for about 7 minutes. Then . . . you know--- enjoy!

WHITE TRASH CHOCOLATE PIE

White Trash Chocolate Pie image

My mother has been making this recipe for over 20 years. The original recipe comes from the cookbook White Trash Cooking by Matthew Meckler. This has a dense texture and intense almost dark chocolate flavor instead of a creamy pudding type filling.

Provided by Pot Scrubber

Categories     Pie

Time 50m

Yield 1 pie, 8 serving(s)

Number Of Ingredients 9

4 eggs (you just need the yolks)
1 cup milk
6 tablespoons cocoa powder
1/4 cup hot water (I microwave it for 30 seconds in my measuring cup)
1 tablespoon vanilla extract (yes... that is a TB not tsp)
1/2 cup butter
1 1/2 cups white sugar
3 tablespoons flour
1 unbaked pie shell (I like to use the Pillsbury unroll and bake pie crusts...)

Steps:

  • Beat egg yolks with half of the sugar and the melted butter.(melt butter in the micro for about 20 seconds -- you don't want it to be too hot or it will cook the egg yolks when you add it).
  • Mix the other half of sugar with the cocoa and flour and add the 1/4 cup of scorching hot water. Mix with a whisk until smooth.
  • Combine the two mixtures and mix thoroughly.
  • Add vanilla and milk and mix thoroughly.
  • Don't get upset if mixture seems thin. It will set after baking.
  • Pour into an unbaked pie shell and cover the edges with foil or a pie ring to prevent the crust edges from browning excessively. Bake for 55-60 minutes at 325. It will still be a little "jiggly" bit it will set up nicely as it cools.
  • Let cool at room temperature for a couple of hours and then put it in the fridge for a couple of hours to cool good and proper.
  • Then -- serve well chilled with homemade whipped cream or just be white trash like me and use Cool Whip.
