Raspberry, White Chocolate, and Almond Trifle image

3 1/2 cups chilled heavy whipping cream, divided
12 ounces high-quality white chocolate (such as Lindt or Perugina), chopped
1 1/4 teaspoons almond extract, divided
1/2 cup sugar
1/2 cup water
7 ounces Boudoirs or Champagne biscuits (crisp ladyfinger cookies),* divided
1 cup raspberry jam, melted, divided
1 1/2 12-ounce packages frozen unsweetened raspberries, partially thawed, divided
2 6-ounce containers fresh raspberries
3/4 cup sliced almonds, toasted

Steps:

  • Bring 1 cup cream to simmer in medium saucepan. Remove from heat. Add white chocolate; whisk until smooth. Cool to barely lukewarm, about 10 minutes. Beat 2 1/2 cups cream and 1/2 teaspoon extract in large bowl to soft peaks. Fold in white chocolate mixture.
  • Stir sugar and 1/2 cup water in small saucepan over medium heat until sugar melts. Mix in 3/4 teaspoon extract; remove syrup from heat. Quickly submerge 1 biscuit in syrup; shake excess back into pan. Place dipped biscuit in bottom of 14-cup trifle dish. Repeat with enough biscuits to cover bottom of dish.
  • Spread 1/3 of melted jam over biscuits in dish. Top with 1/3 of partially thawed berries with juices. Spread 1/3 of whipped chocolate cream over. Repeat layering with dipped biscuits, melted jam, partially thawed berries, and whipped chocolate cream 2 more times. Mound fresh berries in center of trifle. Sprinkle almonds around edge. Cover and chill at least 5 hours and up to 24 hours.

Spiced Pears:
1 750-ml bottle dry white wine
2 cups pear juice or pear nectar
1 1/4 cups sugar
12 whole green cardamom pods, crushed in resealable plastic bag with mallet
4 1-inch-diameter rounds peeled fresh ginger (each about 1/8 inch thick)
2 cinnamon sticks, broken in half
5 large firm but ripe Anjou pears (3 to 31/4 pounds), peeled
White Chocolate Mascarpone Mousse:
7 ounces high-quality white chocolate (such as Lindt or Perugina), finely chopped
1/3 cup poire Williams (clear pear brandy)
1/4 cup water
1/2 vanilla bean, split lengthwise
1 8- to 8.8-ounce container mascarpone cheese*
1 cup chilled heavy whipping cream
Trifle Assembly:
3 3-ounce packages soft ladyfingers,** separated
2 cups chilled heavy whipping cream
1/4 cup minced crystallized ginger
White chocolate curls
1 tablespoon powdered sugar

Steps:

  • For spiced pears:
  • Combine first 6 ingredients in large saucepan. Stir over medium-high heat until sugar dissolves. Add pears and bring to boil. Reduce heat to medium, cover, and simmer until pears are just tender when pierced with knife, about 35 minutes. Transfer liquid with pears to large bowl and refrigerate until cold, about 3 hours.
  • Using slotted spoon, transfer pears to plate. Boil poaching liquid in heavy large saucepan over medium-high heat until slightly thickened and reduced to generous 1 1/2 cups, about 15 minutes. Strain into 2-cup measuring cup; discard spices in strainer. Cool. Cover and chill pears and pear syrup until cold.
  • For mousse:
  • Combine white chocolate, pear brandy, and 1/4 cup water in top of double boiler set over simmering water. Stir until smooth (mixture will be very liquidy). Scrape in seeds from vanilla bean; discard bean. Transfer white chocolate mixture to large bowl; gradually add mascarpone, whisking until mixture is smooth. Cool mascarpone mixture until barely lukewarm.
  • Using electric mixer, beat 1 cup cream in medium bowl until peaks form. Fold whipped cream into mascarpone mixture in 4 additions. Cover and chill white chocolate mousse until set, about 3 hours. DO AHEAD: Pears and mousse can be made 1 day ahead. Keep chilled.
  • For trifle assembly:
  • Cut pears lengthwise in half and remove cores and stems; cut halves lengthwise into 1/4-inch-thick slices.
  • Arrange ladyfingers, rounded sides down, in single layer in bottom of 12-cup trifle dish (about 8 inches in diameter and 5 inches deep), covering bottom completely (using about 15 ladyfingers). Drizzle 5 tablespoons pear syrup evenly over ladyfingers. Using small offset spatula, spread 1/3 of white chocolate mousse over ladyfingers, making layer slightly thicker around outer edges of dish to allow mousse to be more visible (center of mousse layer will be thin). Starting at outer edges of dish, place pear slices in single layer with curved edges against sides of dish atop mousse, covering completely. Repeat layering of ladyfingers, syrup, mousse, and pears 2 more times. Cover with fourth layer of ladyfingers (some ladyfingers and pear slices may be left over). Drizzle ladyfingers evenly with 5 tablespoons syrup. DO AHEAD: Can be made 1 day ahead. Cover and refrigerate trifle and remaining pear syrup separately.
  • Using electric mixer, beat 2 cups whipping cream in large bowl until soft peaks form. Add 1/4 cup pear syrup and beat until stiff peaks form. Working in batches, transfer cream to large pastry bag fitted with large star tip. Pipe rosettes all over top of trifle, mounding slightly in center. Sprinkle with crystallized ginger. Garnish with chocolate curls. DO AHEAD: Can be made 6 hours ahead. Keep refrigerated.
  • Sift powdered sugar over trifle just before serving.
  • * Mascarpone is an Italian cream cheese; sold at many supermarkets and at Italian markets.

  • For custard, in a large heavy saucepan, mix sugar, cornstarch and salt; stir in milk until smooth. Cook and stir over medium-high heat until thickened and bubbly. 1 lemon drizzle cake (about 350g)
120ml white rum
8 passion fruit , pulp removed
50g coconut shavings, toasted
375ml whole milk
125ml double cream
50g golden caster sugar
350g white chocolate , plus extra to serve
7 large egg yolks
600ml double cream
3 vanilla pods , seeds only
50g caster sugar
2 limes , zested

Steps:

  • To make the custard, put the milk, cream and caster sugar in a saucepan and bring to the boil. Meanwhile, set a glass bowl over a pan of gently simmering water. Snap the white chocolate into the bowl and leave to melt. Put the egg yolks in a separate bowl.
  • Once the cream mixture is up to the boil, pour into the bowl with the yolks, whisking continually. Return the mixture to the pan and cook over a gentle heat, whisking until the mixture reaches 85C on a digital thermometer, or the custard has thickened enough to coat the back of a spoon and you can draw a line through it with your fingertip. Pour the custard through a sieve into the melted chocolate and quickly whisk to combine. Pour the white custard into a bowl, cover with cling film and chill in the fridge overnight.
  • The next day, crumble the cake into the bottom of a trifle bowl or individual glasses and pour over the rum and half the passion fruit pulp. Leave to soak for 10 mins, then spoon over the white chocolate custard. Put in the fridge while you whisk the cream.
  • Whisk the cream, vanilla, sugar and lime zest to soft peaks, then spoon into a piping bag with a star nozzle. Pipe on top of the custard, then top with the remaining passion fruit, coconut and a grating of white chocolate. Chill until needed. Can be made a day ahead and decorated just before serving.

5 white chocolate baking squares, grated

1/4 cup cornstarch
1/4 teaspoon salt
4 cups whole milk
4 egg yolks
6 ounces good quality white chocolate, chopped
2 teaspoons vanilla extract
1 (12 ounce) frozen baked poundcake
1/4 cup raspberry liqueur
1 1/2 cups heavy whipping cream
1/3 cup confectioners' sugar
1 teaspoon vanilla extract
sliced almonds (to garnish)
chopped pistachios, for garnish

Steps:

  • Prepare white chocolate custard recipe: In a large heavy saucepan, stir sugar, cornstarch and salt with a wire whisk until mixed together. Gradually stir in milk until smooth.
  • Cook over medium heat, stirring constantly, until mixture thickens and boils; reduce heat and cook for 1 minute. Remove saucepan from heat.
  • Gradually stir about half of the hot milk mixture into egg yolks. Slowly pour egg mixture back into milk mixture, stirring rapidly to prevent lumping. Cook, stirring constantly, until custard just begins to bubble. Remove from heat.

  • In small bowl, with fork, stir together cranberry-raspberry sauce and liquor until smooth.

  • Remove 2 tbsp cranberry-raspberry sauce; cover and set aside. Spoon about half of the remaining sauce mixture over cake, and top with about half of the white chocolate custard.
  • Repeat layers with remaining cake, sauce mixture, and custard. Cover and refrigerate at least 4 hours.
  • To serve, in small bowl, whip heavy cream, confectioner's sugar and vanilla just until stiff peaks form. Reserve about 1 cup whipped cream; spread remaining cream over trifle.
  • Spoon reserved cranberry sauce mixture into small decorating tube (or a small plastic bag with a small slit in corner) and pipe in a desired design on top of whipped cream. Draw a sharp knife tip across lines to feather the design.

12 ounces white chocolate, good quality, chopped
1 1/2 cups heavy cream or 1 1/2 cups whipping cream, divided
3 ounces cream cheese, softened
1 loaf lb cake, cubed (such as Sara Lee in freezer section)
1 1/4 cups cooled espresso or 1 1/4 cups cooled strong coffee
2 tablespoons spiced rum (optional)
2 pints strawberries, sliced (divided)
1 -2 tablespoon strawberry jam (depending on how sweet your berries are)

Steps:

  • Melt the white morsels and 1/4 C heavy cream in the microwave in 30 second intervals, stirring until smooth; cool completely.
  • In a large mixer bowl, beat cream cheese until fluffy then stir in melted and cooled white morsels mixture.
  • In a small mixer bowl, beat remaining 1 1/4 cup heavy cream/or whipping cream until stiff peaks form; fold into cream cheese mixture being sure not to deflate the cream.
  • Place 1/2 of the pound cake cubes in the bottom of a trifle dish or other large clear bowl. (It really does look lovely in a footed trifle dish.).
  • In small bowl, combine coffee and rum; sprinle half of the coffee mixture over the pound cake in the dish.

  • Mix 1 pint sliced strawberries with jam in a bowl and spoon 1/2 of the strawberries over the cream cheese.

  • Top with the remaining strawberries; arranged attractively on top. You can also dollop on some sweetened whipped cream in the center :).

1 (10 1/4 ounce) frozen pound cake, thawed and tops trimmed and reserved
1 (13 ounce) box strawberry shortcake rolls (recommended Little Debbie)
1 (8 ounce) container whipped topping, thawed if frozen

Steps:

  • Prepare the pudding with the milk and set aside.
  • In a large bowl, combine the fruit and stir in 1/4 cup strawberry jam; set aside.
  • Cut the pound cake into 12 slices. Cut the slices diagonally (they'll look like triangles) and place some jam on 1 edge and glue the two pieces together (this looks like the sails on a sailboat).
  • Place the "sails" around the edges of a trifle bowl. (You should have 6 "sails).
  • Slice the shortcake rolls into 4 pieces. Arrange 2 slices on each side of the pound-cake triangles against the bowl. Place the trimmings from the pound cake in the bottom of the bowl.
  • Spoon 1/2 of the pudding into the trifle bowl. Top with 1/2 the fruit, the remaining pudding, then remaining fruit.
  • Top with the whipped topping and more fruit, if desired.

This is another of my friend Mim's recipes, it originally came from Aust. Womans Day magazine. Sponge fingers could be used instead of sponge cake if they are already in the pantry.

2 sponge cakes, layers
300 ml cream, thickened
1/3 cup icing sugar
500 g mascarpone cheese
1 cup irish cream
80 g white chocolate, grated
80 g milk chocolate, grated
2 cups frozen mixed berries
chocolate curls (optional)

Steps:

  • Cut each sponge cake into small squares.
  • Whip cream and icing sugar together until soft peaks form.
  • Place mascarpone in a large bowl and fold cream lightly through mascarpone until well combined.
  • Line the base of 4-6 serving dishes (or a shallow 1 ltr serving dish) with half the sponge; drizzle with half the Irish cream and spread the mascarpone mixture over sponge.
  • Sprinkle with half the combined white and milk chocolate and half the mixed berries.
  • Repeat layers, cover and chill for 3 hours or overnight.
  • To serve sprinkle trifle with any remaining berries and chocolate curls; accompany with cream if desired.

1 750-ml bottle dry white wine
1 cup pear juice or pear nectar
11/4 cups sugar
12 whole green cardamom pods, crushed in resealable plastic bag with a mallet
4 1-inch-diameter rounds peeled fresh ginger (each about 1/8 inch thick)
2 cinnamon sticks, broken in half
5 large firm but ripe Anjou pears, peeled
White Chocolate Mascarpone
Mousse
7 ounces high quality white chocolate, finely chopped
1/2 cup poire William(clear pear brandy)
1/4 cup water
1/2 vanilla bean, split lengthwise
1 8 to 8.8-ounce container mascarpone cheese
1 cup chilled heavy whipping cream
Trifle Assembly
3 3-ounce packages soft lady fingers, separated
2 cups chilled heavy whipping crea1/4 cup minced crystallized ginger
White chocolate curls
1 tablespoon powdered sugar

Steps:

  • Spiced Pears Combine first 6 ingredients in a large saucepan. Stir over medium-high heat until sugar dissolves. Add pears and bring to boil. Reduce heat to medium, cover and simmer until pears are just tender when pierced with a knife about 35 minutes. Transfer liquid with pears to large bowl and refrigerate , about 3 hours Using slotted spoon transfer pears to plate. Boil poaching liquid in heavy large saucepan over medium-high heat reduced to a generous 11/2 cups, about 15 minutes. Strain into a 2-cup measuring cup; . Cool, cover and chill pears and syrup until cold Mousse Combine white chocolate, pear brandy and 1/4 cup water in top of a double boiler set over simmering water. Stir until smooth Scrape seeds from vanilla bean; Transfer white chocolate mixture to large bowl; gradually add mascarpone, whisking until mixture is smooth. Cool mixture until barely lukewarm Using electric mixer, beat 1 cup cream in a medium bowl until peaks form. Fold whipped cream into mascarpone mixture in 4 additions. Cover and chill about 3 hours

6 large granny smith apples
4 tablespoon(s) butter
1/3 cup(s) sugar
2 tablespoon(s) vanilla sugar (included in the gingerbread mix kit)
1 package(s) dove chocolate spiced chai tea
WHITE CHOCOLATE MOUSSE
3/4 cup(s) heavy cream
1/3 cup(s) milk
1 package(s) dove chocolate frosty white chocolate smoothie mix
DARK CHOCOLATE MOUSSE
3/4 cup(s) heavy cream
1 package(s) dove chocolate chocolate mousse mix
4 ounce(s) dove chocolate chef-series dark chocolate (2 bars)

Steps:

  • Preparing the cake 1. Preheat oven to 350°F. Grease a 9x11" pan or line with parchment paper for easy release. In a large bowl, use an electric mixer to beat together molasses, butter, egg and water. 2. Pour in the Gingerbread Mix, and continue mixing until batter is smooth. 3. Pour batter into prepared pan and bake for 28-30 minutes or until a skewer inserted in the center comes out almost clean. Cool and cut into small cubes. Set aside.
  • Preparing the apples 4. Peel, quarter and core apples. Cut into ¼" slices. In a saucepan over medium heat, simmer apples, butter, sugars, and Chai Tea until cooked and juicy, about 20 minutes. Set aside.
  • Preparing the mousses 5. White Chocolate Mousse: pour cream and milk into a mixing bowl. Begin to whip with an electric mixer while pouring in the Smoothie Mix. Whip until soft peaks form. Refrigerate until ready to use. 6. Dark Chocolate Mousse: prepare 1 batch according to instructions on the packet (using the heavy cream and Dark Chocolate).
  • Preparing the trifle 7. In the bottom of a trifle bowl, spoon a layer of Dark Chocolate Mousse, followed by a layer of the gingerbread cubes. Top with a layer of White Chocolate Mousse. Arrange half of the chai-spiced apples on the White Chocolate Mousse. Then repeat all layers again. For a professional finish, use your DCD Pastry Bag to pipe a decorative twist of White Chocolate Mousse on top.

20-15 Sugar Cookies, roughly broken
2-3 tubs Fresh Strawberries
White Chocolate Mousse
2 Cups Heavy Cream
4 TBS Sugar
1 8oz Cream Cheese
6 oz White Chocolate, Melted and Cooled

  • *I doubled the Mousse and added sugar cookies to get double layer in the large plastic bowl. Served about 20. Mousse: Beat cream until it thickens. Gradually add sugar until it forms still peaks. Set Aside. Beat cream cheese until smooth. Add chocolate. Fold in whipped cream. Layer: Cookies, 1 can Filling (with 1/3 of strawberries mixed in), Mousse. Repeat. (Or make Sugared Strawberries)
25 Sugar cookies, broken
1 Batch white chocolate mousse
1 8-ounce tub whipped topping

  • To make mousse, beat cream in a bowl until it thickens. Gradually add sugar, beating until stiff peaks form. Set aside. In another bowl, beat cream cheese until fluffy. Add chocolate and beat until smooth. Fold in whipped cream mixture. Assemble trifle by layering pie filling, broken sugar cookies, white chocolate mousse, and whipped topping in a trifle bowl. Top with dollops of whipped cream. Refrigerate until ready to serve.

TROUBLE FREE WHITE CHOCOLATE MINI-TRIFLE



Trouble Free White Chocolate Mini-Trifle image

This is a dessert to knock their socks off when you really have no time to fuss. All you need are some pretty basic pantry items and about 20 minutes.

1 poundcake (store-bought, frozen, whatever)
1/2 lb white chocolate (I like Lindt)
1/2 cup Grand Marnier (or other orange liqueur)
2 oranges
1/4 cup orange juice
1/4 cup sugar
1/2 cup brown sugar
1 cup whipping cream
1/2 tablespoon cinnamon

Steps:

  • Peel the two oranges, removing all white pith.
  • Slice them into rounds.
  • Place the orange juice and the white sugar in a saucepan, bring to a boil and cook till syrupy.
  • Stir in the orange slices and get them well coated.
  • Break the chocolate into small pieces and melt it either in the micro wave or over simmering water on the stove--but reserve a bit of chocolate for garnishing the desserts.
  • Slice the pound cake into 1/2" thick rectangles. You should have 16.
  • Brush eight of the rectangles generously with the grand marnier.
  • Pour the melted chocolate evenly over the eight slices of cake.
  • Distribute half the orange slices over the cake.
  • Top with another slice of cake and cover that with whipped cream.
  • Meanwhile, whizz the brown sugar and the cinnamon in a coffee grinder or mini processor (or a mortar and pestle).
  • Place each mini trifle on a serving plate.
  • Garnish the plate with the remaining orange slices and some chocolate curls and sprinkle the brown sugar/cinnamon mixture decoratively over the plates.
  • If you have time and want to be fancier, put the whipped cream in a pastry bag and pipe it on--but just slathered whipped cream looks lovely.

1 large sugar-free angel food cake
2 box sugar-free white chocolate instant pudding mix (you will need low fat milk for the pudding)
1 large container sugar-free cool whip
6 bananas
sugar-free chocolate syrup (to drizzle on top)

Steps:

  • 1. Mix pudding as directed on box, and set aside to thicken. Cut the cake in half. Tear one half into bite-sized pieces and put in bottom of trifle bowl. Spread half of pudding on top. Slice 3 bananas on top of pudding. Drizzle chocolate syrup on top of the bananas.
  • 2. Now, repeat each step with second half of cake.
  • 3. Spread the Cool Whip on top. Drizzle on the chocolate syrup in a pretty design. Refrigerate.
  • 4. NOTES: You can use any kind of fruit or a mixture of fruits (strawberry/banana is good) You could use any flavor pudding mix. And, it does not have to be sugar-free if you're not on a special diet. You can use a regular Angel Food cake and regular pudding mix.
