1 cup butter
1 cup light brown sugar
1 cup white sugar
2 eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 ½ cups rolled oats
2 cups white chocolate chips
1 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.
  • In a medium bowl, cream together the butter, brown sugar and white sugar until smooth. Stir in the eggs, one at a time, and then the vanilla. Sift together the flour, baking powder, baking soda and salt, stir into the creamed mixture. Finally, stir in the rolled oats, white chocolate chips and pecans. Drop by tablespoons onto the prepared cookie sheets.
  • Bake for 10 to 12 minutes in the preheated oven. Remove from baking sheets to cool on wire racks.

1 cup butter, softened
1 ⅓ cups white sugar
⅔ cup dark brown sugar
2 large eggs
4 tablespoons instant coffee granules
1 teaspoon vanilla extract
2 ½ cups all-purpose flour
½ cup cocoa powder
1 teaspoon baking soda
½ teaspoon salt
1 ½ cups white chocolate chunks

Steps:

  • Combine butter, sugars, eggs, instant coffee, and vanilla extract in a large bowl. Beat with an electric mixer until fluffy.
  • Mix flour, cocoa powder, baking soda, and salt together in a separate bowl. Pour over butter mixture and beat until combined. Fold in white chocolate chunks using a spatula. Cover dough and chill for 1 hour.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease 2 cookie sheets.

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup plus 2 tablespoons unsalted butter, softened
1/2 cup granulated sugar
1/2 cup packed light brown sugar
1 egg
1 teaspoon orange extract
1 cup old-fashioned oats
8 oz white chocolate baking bars or squares, chopped
1/2 cup raisins or golden raisins

Steps:

  • In medium bowl, mix flour, baking soda, cinnamon and salt; set aside. In large bowl, beat butter with electric mixer on medium speed until creamy. Add granulated sugar and brown sugar; beat well. Beat in egg and orange extract. Add flour mixture and oats; stir until blended. Stir in white chocolate and raisins. Cover; refrigerate 1 hour.
  • Heat oven to 350°F. Line cookie sheets with cooking parchment paper. Onto cookie sheets, drop dough by heaping tablespoonfuls 3 inches apart.
  • Bake 13 to 15 minutes or until lightly browned. Cool 5 minutes; remove from cookie sheets to cooling racks.
