2 cups all-purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup light brown sugar
1 egg
2 teaspoons vanilla extract
8 ounces (1 1/2 cups) white chocolate baking squares), cut into small chunks, or white baking chips
3/4 cup roughly chopped, unsalted, toasted macadamia nuts

Steps:

  • Preheat the oven to 375 degrees F. Line a cookie sheet with parchment paper.
  • Combine the flour, baking soda, baking powder, and salt in a mixing bowl.
  • Using a mixer, beat the butter in a large mixing bowl until fluffy, about 2 minutes. Add the brown sugar and mix together until smooth.
  • Add the egg and vanilla. Stop to scrape down the sides of the bowl with a rubber spatula. Blend in the flour mixture in 3 stages and stir in the white chocolate and the nuts.
  • Scoop out walnut-sized mounds of the cookie dough and place on the cookie sheet, leaving 2-inches between the mounds. Bake for 8 to 10 minutes, until the cookies are golden. Remove the cookie sheet from the oven and transfer the cookies from the parchment to cooling racks. Store in an airtight container at room temperature for up to a week. Freeze for longer storage.

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 cup light brown sugar, firmly packed
1/2 cup white sugar
1 cup salted butter, softened
2 large eggs
2 teaspoons pure vanilla extract
1 cup coarsely chopped macadamia nuts
1 1/2 cups white chocolate chips

Steps:

  • Preheat oven to 350°F.
  • In medium bowl combine flour, soda and salt. Mix well, set aside.
  • In a large bowl with a mixer blend sugars at medium speed. Add butter and mix to until it forms a grainy paste, scraping down the sides of the bowl. Add eggs and vanilla, and beat at medium speed until fully combined.
  • Add the flour mixture, macadamia nuts and white chocolate chips, and blend on low speed until just combined. Do not overmix.
  • Drop by rounded spoonfuls onto ungreased cookie sheet. Bake for 10-12 minutes or until edges begin to brown. Move immediately to cooling rack.

1 cup granulated sugar

Steps:

  • •Make sure the oven keeps the right temperature. The cookies may need a minute or two more or less than stated.
  • •Preheat oven to 350 degrees F.
  • •Line baking sheets with parchment paper (no need to grease).
  • •Measure flour, baking soda and salt in a large bowl and blend together. Set aside.

2/3 cup sugar
2/3 cup butter or margarine, softened
1 teaspoon vanilla
2 eggs
2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon cream of tartar
1 cup coarsely chopped macadamia nuts
Paste icing color
16 ounces vanilla-flavored candy coating (almond bark), melted

Steps:

  • Heat oven to 325°F. Place 1 cup of the baking chips in 2-cup microwavable measuring cup. Microwave uncovered on Medium (50%) 3 to 4 minutes or until chips are softened. Stir chips until smooth; cool.
  • In large bowl, beat sugar, butter, vanilla and eggs with electric mixer on medium speed until creamy. Beat in melted chips on low speed. Stir in flour, baking soda and cream of tartar. Stir in remaining 2/3 cup baking chips and the nuts.

1 cup packed dark brown sugar
3/4 cup granulated sugar
2 large eggs
1 tablespoon vanilla extract

1/2 teaspoon freshly ground nutmeg (optional)
1 1/2 cups white chocolate chunks (about 8 ounces, chopped)

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Line cookie sheet with parchment paper or Silpat.
  • In the bowl of a stand mixer affixed with paddle attachment, beat the butter on medium speed until pale and fluffy, about 2 minutes (or use a large bowl and a hand mixer).
  • Add the brown sugar and granulated (white) sugar and continue beating on medium speed for about 2 minutes.
  • Add the eggs one at a time, continuing to beat each time until well-incorporated. Mix in the vanilla.

1 eggs

handful peanut butter chips & handful semisweet chocolate chips (to taste)
OR 1/2 cup each macadamia nuts & white chocolate chunks

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a large bowl, cream together the butter, brown sugar, and white sugar until smooth. Beat in the eggs, one at a time, then stir in the vanilla and almond extracts. Combine the flour, baking soda, and salt; gradually stir into the creamed mixture. Mix in the macadamia nuts and white chocolate. Drop dough by teaspoonfuls onto ungreased cookie sheets. Bake for 10 minutes in the preheated oven, or until golden brown.

1 egg
1 tablespoon milk

8 ounces solid white chocolate, cut into chunks
1 cup macadamia nuts, chopped

Steps:

  • Preheat oven to 300 degrees F.
  • In a large bowl, cream together the butter and sugar on high speed. Add coconut, egg, milk and vanilla. Mix well.
  • In another bowl, combine flour, baking soda, baking powder, and salt. Add the dry mixture to the wet mixture and combine until dough forms.
  • Mix in the white chocolate and nuts.
  • Measure out about 2 1/2 tablespoons dough and form a ball. Drop each ball of dough onto an ungreased cookie sheet about 3 inches apart. Bake for 12-14 minutes.
  • DO NOT OVER BAKE. Cookies should come out of the oven appearing slightly browned, yet under cooked. When cooled, the cookies will be soft and chewy like the original.

1 cup unsalted macadamia nuts, roughly chopped
1/2 cup unsweetened flaked coconut
2 cups flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup unsalted butter, room temperature
1 cup dark brown sugar (packed)
1/2 cup granulated sugar
1 teaspoon salt
1 large egg (separated)
2 teaspoons vanilla extract
1 1/2 cups white chocolate chips

Steps:

  • Heat oven to 350 degrees. Spread macadamia nuts and coconut over a cookie sheet; roast, stirring every 2 minutes, until golden brown, about 6 minutes. Set aside to cool.
  • Increase heat to 375 degrees. Whisk flour, baking soda and baking powder together in a medium bowl; set aside.
  • Cream the butter in a mixing bowl with a mixer on low speed, 30 seconds. Add the sugars and salt; increase the speed to medium. Beat the mixture until light and fluffy, 2-3 minutes. Reduce the speed; add the egg and egg yolk. Beat until combined. Beat in vanilla. Add dry ingredients; mix on low until combined. Stir in chips, nuts and coconut.
  • Scoop out about 3 tablespoons of dough per cookie, arranging 2 inches apart on greased cookie sheets. Bake cookies 1 tray at a time, rotating baking sheet halfway through baking, until cookies are golden brown and edges have begun to set but centers are still soft, 10-14 minutes per batch. Transfer sheet to wire rack to cool.

My favorite store-bought cookie is the Great American Cookie Company's White Chocolate Macadamia Nut cookie. It's better than any macadamia cookie out there ... anywhere. I FINALLY found a copycat recipe online (recipelink.com) that's as close to GACC's version as you can get. Enjoy!

Enjoy a sweet and sultry variation on the standard (yet always fantastic) white chocolate chip/macadamia nut cookie. People will go nuts for these! White chocolate chips aren't really available here in the United Kingdom so I chopped up some good quality Cadbury's white chocolate instead. Back at home in the States it was always so easy to find a bag of white chocolate chips in pretty much any grocery store, but not here! And if you can't find a key lime, use a regular lime. No big deal. Enjoy!

  • Add the egg, lime juice and lime zest and beat for 1 additional minute.
  • Gradually add in the flour mixture.
  • Stir in the nuts, coconut and white chocolate chips by hand.
  • Drop the dough by rounded tablespoonful onto ungreased cookie sheets.
  • Bake for 8-11 minutes or until edges are slightly brown.
