One of the best banana-chocolate chip muffins I've ever had, made with coconut flour. No butter or oil needed.

3 ripe bananas, mashed
3 large eggs
¼ cup coconut flour
2 tablespoons coconut flour
1 tablespoon stevia powder
1 ½ teaspoons baking powder
½ teaspoon salt
⅓ cup miniature semisweet chocolate chips

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line 10 muffin cups with paper liners.
  • Blend bananas, eggs, coconut flour, stevia, baking powder, and salt together in a bowl with a whisk or a fork. Stir in chocolate chips.
  • Pour mixture evenly between the prepared muffin cups, filling each about 1/2 inch from the top as these muffins won't rise as much as others.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 25 minutes. Cool for 5 minutes and transfer to a paper towel-lined plate; the moisture from the bananas will leak through the liners a little and this is normal.

3 very ripe bananas
1 egg
125 ml vegetable oil
250 g flour
100 g caster sugar
1 1/2 teaspoons baking powder
150 white chocolate chunks
2 tablespoons desiccated coconut

Steps:

  • 1. Preheat the oven to 180C.
  • 2. Line a muffin tray with 12 paper muffin cases.
  • 3. Mash the bananas well.
  • 4. Beat together the eggs and oil.
  • 5. Put the flour, baking powder and sugar together in a large bowl, and stir through. Mix in the mashed bananas and beaten egg and oil mixture.
  • 6. Fold in the white chocolate chunks and coconut. Spoon evenly into baking cases in muffin tin.
  • 7. Bake in the oven for 20 minutes or until the muffins come away from the side of the pan when touched.
  • 8. Rest the muffin tray on a wire rack for five minutes then remove the muffins and leave on the rack for another five minutes before serving.

1/2 cup vegetable oil
1 cup white granulated sugar
2 eggs (vegan option use 1/2 cup apple sauce)
1 teaspoon vanilla extract
1 teaspoon almond extract
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
3 extra ripe bananas, mashed.
2 1/2 cups all-purpose flour
1 cup canned unsweetened coconut milk, full fat
1 cup sweetened shredded coconut flakes
2 cups milk chocolate chips

Steps:

  • Preheat oven to 350*F Prepare muffin tin with liners. In a bowl combine oil and sugar. Add eggs (or apple sauce) and mix well. Add vanilla extract and almond extract, mix again. Add baking powder, baking soda and salt. Mix again. Add mashed bananas and mix well, scraping sides of bowl as needed. Alternately add flour & coconut milk, starting and ending with flour, mixing well after each addition until combined. Add coconut and mix again. Add chocolate chips Scoop batter into muffin cups, filling 3/4 full. Bake for 25 minutes or until toothpick inserted into middle of muffin comes out clean.
