7 cups day old bread
1/4 cup sugar
3 eggs
4 teaspoons baking powder
2 teaspoons vanilla
3 cups milk
4 ounces butter
12 ounces white chocolate chips
3/4-1 cup dried blueberries (I found these at an upscale grocery store)
1/2 teaspoon nutmeg (optional)
1 -2 teaspoon cinnamon (optional)

Steps:

  • Heat oven up to 350°F.
  • Cut bread into cubes.
  • In a saucepan, heat the milk, and butter but do
  • NOT boil.
  • Add chocolate chips, and stir until melted.
  • To this, add the vanilla, beaten eggs and sugar.
  • Add the baking powder and blend until smooth.
  • In an greased ovenproof casserole dish, layer the cubes of bread and pour the cooled liquid on top.
  • Let soak for 15 minutes.
  • Mix in dried blueberries, nutmeg and cinnamon.
  • Bake for approximately 30 minutes or until golden brown.

2 tablespoons unsalted butter, softened, plus 2 tablespoons, melted
4 large eggs
3 cups heavy cream
1 cup milk
1 cup packed light brown sugar
1 teaspoon pure vanilla extract
1/2 teaspoon ground cinnamon
6 cups 1/2-inch cubes day-old bread
6 ounces white chocolate, chopped
1 cup fresh blueberries
1/2 cup dried blueberries
Amaretto Cream Sauce:
1 tablespoon cornstarch
1/4 cup Amaretto liqueur
1 1/2 cups heavy cream
1/4 cup granulated sugar

Steps:

  • For the Bread Pudding: Preheat the oven to 350 degree F. Butter a 10 by 14-inch baking dish with the softened butter. Whisk the eggs in a large bowl. Whisk in the cream, milk, brown sugar, vanilla, and cinnamon. Add the bread, chocolate, blueberries, and dried blueberries and stir well, then mix in the melted butter. Let sit for 30 minutes so the bread will absorb the egg mixture. Pour into the prepared dish. Bake until firm when pressed in the center, about 1 hour. Cool on a wire rack until just warm, about 20 minutes. For the Amaretto Cream Sauce: In a small bowl, dissolve the cornstarch in the Amaretto and whisk until smooth. In a medium saucepan, scald cream over medium heat. Add the Amaretto slurry to the hot cream and whisking constantly, bring to a boil. Reduce the heat and cook, whisking for 30 seconds. Remove from the heat and add the sugar. Whisk until dissolved. Let cool to room temperature before serving with the bread pudding. Serve warm.

-FOR BREAD PUDDING
6 large blueberry bagels cut into 1 inch pieces
2 [12 oz] cans evaporated milk
1 [14 oz] can sweetened condensed milk
3 large eggs
1 tsp pure vanilla
1/8 tsp nutmeg
1/8 tsp salt
1 pint blueberries
3/4 cup white chocolate chips
1/4 cup toasted almond slices
FOR GLAZE
1/2 cup white chocolate chips
1/4 cup powdered sugar
1/3 cup heavy cream
In a microwave safe bowl, melt the chocolate chips with the heavy cream until smooth. Stir well until completely melted, then mix in the powdered sugar. [The glaze will be thin] Drizzle on top of the blueberry bagel bread pudding while hot.

Steps:

  • Preheat the oven to 375°F.
  • Spritz a 9x13 inch baking dish with butter flavored cooking spray and set aside.
  • Cut the bagels into 1 inch pieces.
  • In a large mixing bowl, whisk together the evaporated milk, sweetened condensed milk, eggs, vanilla, nutmeg and salt.
  • Pour this mixture over the bagel pieces and press the pieces gently into the custard.
  • Let the bagel and custard mixture sit on the counter for 15 minutes to allow the bagels to soak up the custard.

5 - blue berry bagels
2 cup(s) milk
1/2 cup(s) heavy whipping cream
3/4 cup(s) sugar
1/4 cup(s) butter
1/2 teaspoon(s) vanilla extract
1/2 teaspoon(s) cinnamon
1/4 teaspoon(s) nut meg
3 - large eggs
2 cup(s) bluberries fresh or frozen (do not thaw)
1/2 cup(s) vanilla or white chocolate chips
1/4 cup(s) powdered sugar
1/3 cup(s) heavy cream

Steps:

  • Preheat oven to 375 degrees F. Generously, butter 9 x9 inch glass baking dish or 8 individual baking dishes. Place torn bagels in large mixing bowl; pour milk and cream over the bread and Let absorb for about 10 minutes. Meanwhile, melt butter and let it cool. When cooled, mix with beaten eggs and remaining ingredients. Combine with bagel mixture, distributing blueberries evenly in mixture. Pour into prepared baking dish; place in center of oven. Bake uncovered for about 30 minutes.
  • While that is baking in a In a microwave safe bowl, melt the chocolate chips with the heavy cream until smooth. Stir well until completely melted, then mix in the powdered sugar. [The glaze will be thin] Drizzle on top of the blueberry bagel bread pudding after it's baked for about 30 min.
  • After you drizzle white chocolate on top return to oven cook for another 10 to 15 min.
