I got the best white chili recipe from my sister-in-law, who made a big batch and served a crowd one night. It was a hit. It's easy and quick, which is helpful since I'm a college student. 1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1 medium onion, chopped
1-1/2 teaspoons garlic powder
1 tablespoon canola oil
2 cans (15-1/2 ounces each) great northern beans, rinsed and drained
1 can (14-1/2 ounces) chicken broth
2 cans (4 ounces each) chopped green chiles
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper
1 cup sour cream
1/2 cup heavy whipping cream
Tortilla chips, optional
Shredded cheddar cheese, optional
Sliced seeded jalapeno pepper, optional

Steps:

  • In a large saucepan, saute the chicken, onion and garlic powder in oil until chicken is no longer pink. Add the beans, broth, chiles and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, for 30 minutes. , Remove from the heat; stir in sour cream and cream. If desired, top with tortilla chips, cheese and jalapenos.

1 tablespoon olive oil
1 pound skinless, boneless chicken breast halves, cut into 1/2-inch cubes
1 onion, chopped
2 cloves garlic, chopped
2 (15.5 ounce) cans great Northern beans, rinsed and drained
1 (14.5 ounce) can chicken broth
2 (4 ounce) cans chopped green chiles
1 teaspoon salt
1 teaspoon ground cumin
1 teaspoon dried oregano
½ teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 cup sour cream
½ cup heavy whipping cream

Steps:

  • Heat olive oil in a large saucepan over medium heat; cook and stir chicken, onion, and garlic into the hot oil until chicken is no longer pink in the center and the juices run clear, 10 to 15 minutes.
  • Mix Great Northern beans, chicken broth, green chiles, salt, cumin, oregano, black pepper, and cayenne pepper into chicken mixture; bring to a boil. Reduce heat and simmer until flavors have blended, about 30 minutes.
  • Remove chili from heat; stir in sour cream and whipping cream until incorporated.

I have searched all over for a GREAT white chili recipe, I finally found one. This is SUPER easy and pretty quick. As with all chili, increase or decrease the spices to suit you. I add extra cumin and cilantro because I love them both so much.

4 teaspoons ground cumin
1 teaspoon dried oregano
2 -3 tablespoons fresh cilantro
1 -4 dash cayenne pepper
1 tablespoon olive oil
4 boneless skinless chicken breast halves
1 onion, chopped
4 minced garlic cloves
3 cups chicken broth
1/4 cup green chili
1 (15 ounce) can white beans, drained
2 cups jalapeno jack cheese, grated

Steps:

  • Cube the chicken breast halves. Heat the olive oil and saute chicken until golden.
  • Add the onions and garlic, saute until tender.
  • Add the spices and cook for 30 seconds.
  • Add beans, broth and chilies.
  • Simmer for 15 minutes.
  • Reduce heat and stir in cheese. Stir until melted and well blended.
  • Season to taste. Serve with sour cream, crackers and/or bread.

Chili - my absolute favorite cold-weather comfort food. I first had White Chili at a Tumbleweed restaurant in Louisville, KY. I was surprised, since it looked like a chicken soup but tasted like chili. I was won over. I searched out several white chili recipes and this is the one I finally developed based on my research.

CHILI
2 pound(s) chicken meat*
2 medium onions, diced
4 clove(s) garlic, minced
2 can(s) diced green chilis
1 - 1 1/2 tablespoon(s) ground cumin
2 teaspoon(s) oregano, dried
1/4 teaspoon(s) ground cloves
1/4 teaspoon(s) ground red (cayenne) pepper
4 can(s) great northern beans (drained, rinsed)
6 cup(s) chicken broth
2 cup(s) mexican blend shredded cheese
GARNISHES
- sour cream, cilantro, green onions (diced), salsa, cheese

Steps:

  • Cook chicken and shred (or cube). Heat oil in a soup kettle (pot), sauté onion until translucent; add garlic and spices. Add beans and broth.
  • Bring to a bubble, reduce heat and simmer 35 - 50 minutes. Add chicken, simmer an additional 10 minutes. Stir in cheese until melted then ladle into bowls and serve with garnishes as desired.
  • *or use a deli rotisserie chicken, shredded or cubed
  • Slow Cooker: Cook chicken and shred (or cube). Put chicken, onion, garlic, spices, beans and broth into slow cooker liner. Cook on high for 3-4 hours or low for 5-6 hours. Just before serving, add cheese to chili and stir until melted. Ladle into bowls and serve with garnishes as desired.

4 cups cubed cooked chicken or turkey
2 cans (15 ounces each) cannellini beans, rinsed and drained
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 cups chicken broth
1 can (4 ounces) chopped green chilies
2 teaspoons ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
1/4 cup minced fresh cilantro
Optional toppings: corn chips, shredded Monterey Jack cheese and sour cream

Steps:

  • In a large skillet, heat oil over medium-high heat. Add onions; cook and stir until tender. Add garlic; cook 1 minute longer., Transfer to a 3-qt. slow cooker. Stir in chicken, beans, broth, chilies and dry seasonings., Cook, covered, on low 6-8 hours or until heated through. Stir in cilantro. If desired, serve with corn chips, cheese and sour cream.
