5 ounces white baking chocolate, chopped, divided
2 tablespoons whole milk
3 ounces cream cheese, softened
1/3 cup confectioners' sugar
1 teaspoon grated orange zest
1 cup heavy whipping cream, whipped
1 graham cracker crust (9 inches)
2 cups sliced fresh strawberries

Steps:

  • In a microwave, melt 4 ounces white chocolate with milk; stir until smooth. Cool to room temperature. , Meanwhile, in a large bowl, beat cream cheese and sugar until smooth. Beat in orange zest and melted chocolate. Fold in whipped cream. , Spread into crust. Arrange strawberries on top. Melt remaining white chocolate; drizzle over berries. Refrigerate for at least 1 hour. Store in the refrigerator.

1-1/2 cups sugar
1/4 cup plus 1-1/2 teaspoons cornstarch
1-1/2 cups water
4 tablespoons plus 1-1/2 teaspoons raspberry gelatin
1 pint fresh or frozen unsweetened blueberries
1 teaspoon lemon juice
1 Dough for single-crust pie
1 pint fresh or frozen unsweetened raspberries
4 ounces cream cheese, softened
1/3 cup confectioners' sugar
1-3/4 cups whipped topping

Steps:

  • On a lightly floured surface, roll crust to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim to 1/2 in. beyond rim of plate; flute edge. Refrigerate 30 minutes. Preheat oven to 425°., Line crust with a double thickness of foil. Fill with pie weights, dried beans or uncooked rice. Bake on a lower oven rack until edge is golden brown, 20-25 minutes. Remove foil and weights; bake until bottom is golden brown, 3-6 minutes longer. Cool completely on a wire rack., In a large saucepan, combine the sugar, cornstarch and water until smooth. Bring to a boil; cook and stir until thickened, 2 minutes. Stir in gelatin until dissolved. Divide mixture in half. Stir blueberries and lemon juice into one portion; spread over crust. Chill until set. Gently fold raspberries into remaining gelatin mixture; cool to room temperature and set aside., Meanwhile, in a small bowl, beat cream cheese and confectioners' sugar until smooth. This mixed berry pie is topped with a delicious, creamy white chocolate topping.

4 cups frozen DOLE® Mixed Berries (from two 12-oz packages)
1/2 cup sugar
1/4 cup cornstarch
1 crust from 1 package (12 oz) frozen Pillsbury™ Deep Dish Pie Crusts (2 Count)
1 tablespoon cold water
1 teaspoon unflavored gelatin
1 cup heavy whipping cream
1/2 cup white vanilla baking chips (from 12-oz bag)

Steps:

  • Heat oven to 400°F. Place cookie sheet on oven rack.
  • In medium bowl, toss Filling ingredients until well mixed. Spoon evenly into frozen pie crust.
  • Bake on cookie sheet 40 to 45 minutes or until filling is bubbly and crust edges are golden brown. Cover crust edges with strips of foil last 20 minutes to prevent overbrowning. Cool completely, about 1 1/2 hours.
  • In small bowl, add cold water; sprinkle with gelatin. Let stand 10 minutes or until gelatin softens.
  • In 1-quart saucepan, heat 1/4 cup of the whipping cream over medium heat until hot. Reduce heat to medium-low; add gelatin and baking chips. Cook 5 to 7 minutes, stirring constantly, until smooth and chips are melted. Remove from heat. Cool 25 minutes.
  • In medium bowl, beat remaining 3/4 cup whipping cream with electric mixer on high speed until stiff peaks form. Carefully fold cooled gelatin mixture into whipped cream until well blended. Spoon and spread evenly onto cooled pie. Refrigerate about 1 hour or until topping is set.

This recipe was given to me by a baker friend. Strawberries in a white chocolate and cream cheese mixture drizzled with more white chocolate. I make this a lot and everyone loves it.

5 ounces white chocolate, chopped
1 (3 ounce) package cream cheese, softened
½ cup confectioners' sugar
1 cup whipped cream
1 quart fresh strawberries, hulled
1 (9 inch) graham cracker crust

Steps:

  • Place 4 ounces of the white chocolate in a microwave-safe dish. Cook for 1 minute in the microwave, stir, and continue to heat and stir at 15 second intervals until the chocolate is smooth. Set aside to cool slightly.
  • In a medium bowl, cream together the cream cheese and confectioners' sugar until light and fluffy. Stir in the melted chocolate, then fold in the whipped cream. Spread the mixture evenly in the bottom of the pie crust. Place the berries, point side up in the chocolate mixture.
  • Melt the remaining chocolate, starting at 15 second intervals, in the microwave. Drizzle over the berries. Chill for at least 2 hours before serving.

1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)
1-1/2 pkg. (4 oz. each) BAKER'S White Chocolate (6 oz.), divided
2 Tbsp. milk
4 oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
1/3 cup powdered sugar
1 tsp. orange zest
2 cups thawed COOL WHIP Whipped Topping
2 cups fresh raspberries

Steps:

  • Prepare and bake crust in 9-inch pie plate as directed on package for 1-crust baked shell. Cool.
  • Microwave 5 oz. chocolate and milk in medium microwaveable bowl on HIGH 2 min. or until chocolate is almost melted, stirring after 1 min. Stir until completely melted. Cool to room temperature.
  • Beat cream cheese, sugar and zest with mixer until well blended. Add to chocolate mixture; beat with whisk until well blended. Stir in COOL WHIP; spoon into crust. Top with berries.

1 piece Pie Crust, homemade or frozen baked
5 ounces White Chocolate
2 tablespoons Whole milk
4 ounces cream cheese, softened
1 teaspoon grated orange peel
1 cup whipping cream
2 cups raspberries or sliced strawberries

Steps:

  • Melt 4 oz white chocolate with milk in microwave until almost melted. Remove and stir until melted. Cool to room temp.
  • Beat cream cheese, powdered sugar and orange peel at low speed until smooth. Blend in chocolate mixture.
  • Beat whipped cream until soft peaks and fold into white chocolate mixture. Spread on bottom of pie shell. Arrange berries on filling and drizzle with remaining white chocolate. Refrigerate at least 1 hour.
