Ajo Blanco: White Garlic Soup with Grapes image

6 ounces day old bread (a 3-inch cube), crusts discarded
1 cup blanched almonds
3 cloves of garlic
1/2 cup extra-virgin olive oil
5 tablespoons wine vinegar or sherry vinegar
2 teaspoons salt
2 1/2 cup water
12 muscatel grapes, halved and seeded

Steps:

  • Put the bread in a bowl and add water to cover. Let soak for 5 minutes until softened.
  • Meanwhile, place the almonds and garlic in a blender container (or, if using a hand-held blender, into a mixing bowl) and pulse until almonds are finely ground.
  • Squeeze out the water from the bread. Add to the food processor. Blend to a smooth paste.
  • With the motor running, add the olive oil in a slow stream, then the vinegar and salt.
  • Thin the ingredients with 1/2 cup of water to the desired consistency.
  • Place the blended contents in a tureen, wooden bowl or pitcher and add about 2 cups of water. Taste for seasoning, add more salt and/or vinegar if necessary. The soup should be fairly tangy.
  • Chill until serving time. Stir before serving into bowls. Garnish with grapes.

1 3/4 cups (about 8 ounces) blanched, ground almonds
3 slices white bread, crusts removed, diced
10 cloves garlic, peeled
6 cups milk
2 teaspoons sherry vinegar
2 cups extra-virgin olive oil
Kosher salt and freshly ground black pepper to taste
36 white seedless grapes, halved, for garnish

Steps:

  • In a large bowl, combine the almonds, bread, garlic, milk and vinegar. Working in three batches, transfer about a third of the mixture to a blender and process until smooth. With the motor running, slowly pour in 1/4 cup of olive oil. Strain the soup through a fine mesh sieve into a bowl. Repeat process with the remaining mixture.
  • Season the soup to taste with salt and pepper and chill for several hours. Before serving, taste the soup; if it tastes too strongly of either garlic or vinegar, add a bit of water. Serve the soup garnished with grape halves.

White Gazpacho with Grapes and Garlic image

1 1/2 cups blanched almonds, coarsely chopped
2 cloves garlic, chopped
4 slices stale countrystyle bread, crusts removed
1/2 cup fruity olive oil
4 tablespoons sherry wine vinegar
2 cups white grape juice
2 cups iced water
3 teaspoons sea salt, or to taste
24 seedless white or Muscat grapes, halved

Steps:

  • Combine the almonds and garlic in a blender or food processor and blend until the almonds are very finely ground, almost pastelike. Meanwhile, soak the bread in cold water, then squeeze out the water. Add the bread to the blender and blend until smooth. With the motor running, pour in the oil in a thin stream, then add the vinegar, scraping down the sides often. Pour in the grape juice and iced water 1 cup at a time. Season with salt. Chill in the refrigerator, at least 6 hours. The soup should be very cold. Serve in chilled soup bowls and garnish with the grapes.
